    Baking with whole wheat -Nutrition in every slice is a healthy and tasty brown bread. It is ideal way to enjoy with tea or as an after school snack.  Know more about whole wheat bread in our guest post series.

    We all have, sometimes in our life, followed crazy diets with no results. Some other times, we just left it to the universe to take care of our diet (hopefully nobody follows this diet). But there are some foods that don’t usually come under the category of healthy, for example, bread. But whole wheat bread is a healthy and adaptable supplement to any diet. Whole wheat flour contains the entire wheat kernel, including the bran and germ. Wheat contains the most nutrients, including fibre, B vitamins, iron, folate, potassium, and magnesium. The wheat kernel is left intact, resulting in a less processed, more nutritious bread.

    1.  Lowers chances of developing type 2 diabetes – For those who are at risk of developing type 2 diabetes, new research seems promising. According to a study published in the journal Nutrients in 2018, eating more whole-grain foods is linked to a lower risk of type 2 diabetes.
    2. Helps with weight management – Despite the fact that bread has a reputation for causing weight gain, choosing whole wheat bread may have the opposite impact. According to an analysis of evidence from 38 epidemiological research, consuming whole wheat bread does not induce weight gain and may even help with weight management.
    3.  Aids in healthy digestion – Fibre is essential for digestive health. Consuming a high fibre diet, such as whole-grain foods, allows for the growth of beneficial gut flora. This so-called “pre-biotic” impact has been shown to improve colon health and immune system strength.
    4. Helps heart conditions – For good reason, whole grains have long been recommended for heart health. According to a major 2016 study published in the British Medical Journal, consuming more whole grains is linked to a lower risk of cardiovascular disease and coronary heart disease.

    Whole wheat strawberry cake is tasty and naturally healthy. It has no butter, sugar or egg in it. Strawberries give a good taste to this bake.

    When it’s raining strawberries, you need to bake at least once isn’t it ? Life is good living and enjoying each moment. Baking is therapeutic and helps to relax the senses.

    Today, it’s a healthy bake with strawberry. Let us see what ingredients are used to make it healthier and the other options that you have here:

    • Wheat flour: Atta or wheat flour is naturally healthy and better than all purpose flour.
    • Corn flour: As cakes made with corn flour turn out dense, a little corn flour is added. Do not skip on sieving the flour.
    • Honey : As I thought of baking a healthy cake, I have used honey here. Castor sugar or brown sugar may be used.
    • Curd : It is the replacement for egg.
    • Baking powder and baking soda : They are the essentials of baking.
    • Milk : Milk is added to get the right consistency of the batter.
    • Strawberries: Use fresh strawberries.

    Whole Wheat Strawberry Cake Recipe

    Ingredients:

    • 1.75 cup wheat flour/ atta      (measurement used 1 cup=250ml)
    • 2 tbsp cornflour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 cup honey
    • 1/2 cup milk
    • 3/4 cup curd
    • 1/2 cup oil
    • 8 strawberries

    Method:

    Wash and cut the strawberries into medium sized chunks. Take the dry ingredients and sieve them together twice.
    Mix oil, curd, honey and milk. Whisk them together.
    Add the dry ingredients and slowly mix them together.Add the strawberry pieces to it.
    Heat the microwave oven.
    Take the baking tray, line it with a parchment paper. Pour the cake mixture and bake it for ten minutes. A toothpick inserted should come out clean. Once it is done, allow to cool completely. Cut and serve.

    Take a tip:

    • The strawberries that I used were large in size.
    • You may bake it in the oven.
    • Sieve the flour as the cakes with wheat flour are dense.

    Cook Time 20 minutes
    Resting time 15 minutes
    Total Time 50 minutes
    Course: dry snack, evening snacks
    Cuisine: international

    Ingredients
      

    • 1.75 cup wheat flour/ atta
    • 2 tbsp cornflour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 cup honey
    • 1/2 cup milk
    • 3/4 cup curd
    • 1/2 cup oil
    • 8 strawberries

    Method
     

    1. Wash and cut the strawberry into medium size pieces.
    2. Take the dry ingredients and sieve them together.

    Notes

    All purpose flour may be used.
    Powdered sugar may be used. If using sieve it with the dry ingredients.

    Roasted Sweet Potato makes a good side dish with a bowl of soup and Mexican rice. 

    The humble sweet potato could not get any better, it tastes so delicious. Loved the idea of grilling it and savouring with rice. 

    Mexican cuisine has many delicious dishes as Spanish Rice,  I have tried a couple of them and we loved. Earlier, I have enjoyed soup  as Spicy Chipotle Chili Corn Soup. There are so many yet to cook in my kitchen.

    About the event:

    It’s Mexican Cuisine at Shhhh Secretly Cooking Challenge Group. The theme for September was suggested by Narmadha of Nams Corner. Narmadha has wide range of recipes, I loved her recently posted condiment Tomato Ketchup. It is ideal to make it at home. My partner for this month was versatile and talented  blogger Anu Kollon and she gave me sweet potato and cumin powder as the secret ingredients. I have prepared this dish. Capsicum and pepper were the ingredients given by me and Anu has prepared this delicious Vegetable Saute for Fajitas. I  have bookmarked her Spring Onion Chutney to make it soon.

     

    Ingredients:


    2 medium size sweet potato
    1 tablespoon olive oil
    1/2 teaspoon cumin
    1 teaspoon cumin powder
    1/2 teaspoon oregano
    1 tsp chilli powder

    Method: 

    1. Wash the sweet potato, pat dry  and cut into cubes.
    2. Take a bowl, add olive oil and put all the spices into it.
    3. Mix well. Put the cubes into it and keep it aside for ten minutes.
    4. Pre-heat the oven, line a try with parchment paper. Put the sweet potato cubes on it, keep them at a distance from one another. Bake it for five minutes.
    5. Check and again bake for a few more minutes.
    6. Once they are soft and golden in colour, remove and put another batch to bake. 
    7. Serve as a side dish with Mexican rice or any other dish.

    Take a tip:

    • Wash it well and cut into cubes, no need to peel the skin. 
    • Two cloves of garlic and lemon juice may be added to it. It will give a good flavour. 
    • The baking time in my Bajaj  was  eight minutes. 
    • Baking time varies, check if it is done properly.

    Baked Wheat Crackers

    Baked Wheat Crackers are crispy and tasty. They make good snacks to binge with a cup of hot tea.

    Today, most of us are in search of healthy recipes. We want to eat guilt- free snacks, those filling moments which we can convince ourselves that we really take care and not just write about it.

    When we decide to eat healthy, we make a conscious attempt to know what we are indulging in. We make an attempt to include raw vegetables and fruits in our daily diet.Our cooking is on the same lines.

    Well, it is Baking Savour with Wheat Flour at Healthy Wellthy Cuisines. The theme was suggested by Sasmita of First Timer Cook. Her blog has a lovely collection of dishes of Odia cuisine and  bakes. I want to try her recently published Floral Chocolate Cookie, it looks awesome. Contributions from co-bloggers:

    Ingredients:

    Measurement used: 1 cup= 250 ml

    • 1 cup whole wheat flour
    • 1 tbsp semolina
    • 1 tablespoon yoghurt
    • 1/4 teaspoon  baking soda
    • 2 tablespoon oil
    • 1/2 tablespoon flax seed
    • 1 teaspoon chilli powder
    • 1 teaspoon cumin powder
    • 1/4 teaspoon turmeric powder
    • a pinch of asafoetida
    • water

    Method:

    1. In a wide bowl add  the ingredients except water. Mix them well with fingers to get a crumbly texture.
    2. Add little water and knead to a stiff dough.
    3. Take a ball of the dough, roll into a thin chapati.
    4. Cut into squares. You can cut them in any desired shape.
    5. Pre-heat the oven.
    6. Line the baking tray with a sheet, arrange the crackers and bake for the required time. I need only seven minutes to bake a batch of them.
    7. Repeat for the rest of the dough.
    8. Once cool, store in an air tight container.

    Take a tip:

    • Baking time, temperature settings,  differs with each oven. Know your model and set the time. The temperature setting is usually at 170 degree centigrade.
    • I have Bajaj Majesty 600QT, I put the heater and timer on, pre-heat and then put them to bake.

    Best Chocolate Cake

    Chocolate cake is soft and moist, it is absolutely delicious. The ganache tastes good with it.

    Cakes are loved by all, we just need an occasion to bake it, isn’t it? Our favourite cake is the chocolate cake. As I had never made a cake using coconut oil,  thought of making one. Now, this was the first time I used it, both mother and daughter, were anguish with the results. Wondering, how it turned out? It was tasty and loved by all.

    Now, I have another chocolate cake here ! Life is a good learning experience, we do not understand, until it really matters.

    Chocolate cake can be made by using either the cocoa powder or the dark chocolate. Here, I have used dark chocolate.

    About the event:

    Sending this to Shhh Secretly Cooking group event, a monthly event, we are paired as partners and cook on a pre-scheduled theme. The partners exchange secret ingredients and cook accordingly. The secret ingredients are guessed later by other members. The theme was suggested by Mayuri Patel, who runs the group.  She has a wide range of dishes on her blog, love her desserts especially.  I loved her chocolate truffles, they look so delish.

    My partner was  Aruna, a talented blogger.  She blogs at Vasus Veg Kitchen. She has many healthy dishes from regional cuisines. I loved her bengali style vegetable  chops.   I told  Aruna I wished to make a cake with coconut oil and she agreed. She gave me  coconut oil and walnuts as the secret ingredients.  The ingredients that I gave were choco chips and vanilla essence and she prepared this delicious looking  Chocolate and Custard Jelly Cake.

    A few other cakes that I have shared earlier are Zebra Cake, delicious Mocha Banana Cake

    Chocolate Cake 

    Ingredients:
    • 1/4 cup coconut oil
    • 2  tsp instant coffee powder
    • 1/2 teaspoon vanilla extract
    • 1 teaspoon lemon juice
    • 1cup castor sugar
    • 1/2 cup dark chocolate
    • 1/2 cup milk
    • 1 cup + 2 tsp maida
    • 1/2 tsp baking powder
    • 1/4 tsp baking soda
    • 5 walnuts
    For the ganache :
    • 1 cup fresh cream
    • 2 cup dark chocolate
    • 2 teaspoon butter
    For garnishing :
    • cashew pieces
    • choco chips
    Method:
    1. Take oil in a bowl.
    2. Mix coffee powder in quarter glass of water.
    3. Grate chocolate.
    4. Put coffee mixture, chocolate gratings, vanilla extract and lemon juice to the oil.
    5. Put some milk and mix it well.
    6. Sieve maida, baking powder and soda together.
    7. Mix them together. Add little milk if needed, the batter should be of medium consistency.
    8. Break walnut into pieces and put them in.
    9. Pre-heat the microwave oven for two minutes.
    10. Grease a tin.
    11. Pour the batter.
    12. Microwave it for five minutes on High, reduce the temperature, and again put it for three minutes. Once it is done, check, the inserted tooth pick should come out clean.
    13. Keep it in the microwave for sometime.
    14. Spread the ganache with a knife. Recipe for ganache is below.
    15. Decorate with cashew pieces and choco chips.
    To make the ganache :

    Take cream in a pan, warm it. Add the chocolate and butter, cook it for three minutes. Chocolate ganache is ready. Keep it in the refrigerator for sometime.

    Flloral cookies  are tasty and have a dainty look. They are chocolate and vanilla flavoure, a taste  with each bite.

    Cookies are loved by all, here is another kind of cookie that you can make during the holidays. It is ideal to serve for children, they will love the design based cookie.

    Lockdown has made  me do some good things, these cookies were one of them. It was fun making these cookies, the flavours of vanilla and chocolate blends so well, it gives a good taste.

    One can make different kind using these two dough. Checker board cookies, marble cookies. braided and floral cookies are the different kind that you can make.

    Today, I am sharing the floral kind of cookie.

     

    The other kind of cookies that I keep on making are Cornflakes Cookies, Polvorones, Butter Cookies, Ghee Cookies

    Chocolate and Vanilla Floral Cookies Recipe

    Ingredients:

    • 1/2 cup butter
    • 1/2 cup castor sugar
    • 1 cup maida
    • 1 tbsp cornflour
    • little milk
    • 1/2 tsp baking powder
    • vanilla essence
    • 1 tbsp cocoa powder

    Method :

    1. Take the butter and sugar in a bowl. Whisk it well.
    2. Add maida and cornflour to it. Mix them together with a little milk.
    3. Put vanilla essence.
    4. Divide the dough into two parts.
    5. In one part, add cocoa powder and set it aside.
    6. Now, you have two kinds of dough. Take the vanilla dough, knead it lightly, take a small ball of the dough and roll into a long coil like structure. Cut into small pieces with a knife
    7. Similarly, do the step for the chocolate dough.
    8. Now, take three small pieces of vanilla and chocolate, roll them into a ball  and place them like a flower.
    9. Press them between palm.
    10. Repeat the same.
    11. Pre-heat the oven. Keep them in the oven for 10 minutes at 160 degree celsius. bake.
    12. Once they cool down, keep in an air-tight container.

    Take a tip:

    • Wheat flour may be used instead of maida.
    • You can use a mix of both, wheat flour and maida.
    • Baking time varies, do know the ideal time for your oven.

    Cornflakes cookies are crunchy and tasty. They make a good snack to store in the jar.  Cornflakes cookies are made with a few ingredients easily available at home. They are eggless. 

    Cornflakes makes a good breakfast cereal. It is ideal to serve as a quick fix with cold or hot milk. Zerobeli cornflakes is crispy and tasty. It is rich in fibre, packed with vitamin and nutrients. With different flavors and rich taste it makes a good choice of breakfast every morning.

It is a quick fix breakfast for busy week day mornings. I regularly use them and find them to be an ideal choice with taste and cost as well.

    We loved these cornflakes, it is not only tasty but keeps satiated for a long time. The breakfast has to be ready at 7.30a.m and some days, I find it difficult to prepare. Moreover, I can play around between milk and greek yoghurt and with different toppings. Some times, I top it with almonds while at times with cashew and berries.

    It makes a good choice for snack too as I am happy that children are not eating fried snacks to satisfy the hunger pangs. I love using these cornflakes to make different kind of snacks. You can opt to make the cornflakes chaat or chiwda with it. It makes a quick light snack to serve in the evenings.

    It is rich in dietary fibre and thus helps in controlling weight naturally. It makes ideal choice for adults also. Healthy eating is a choice which we need to make and help our family members to adopt.

    Now, for the festive season, I have some goodies here.

    With Christmas round the corner, I thought of making cookies and they were delicious. I am elated with these and shall make them again.

     

                                                                                                          Cornflakes Cookies

     Cornflakes Cookies Recipe

    Ingredients:

    Measurement: 1 cup = 150 ml

    • 1 cup Zerobeli cornflakes crushed
    • 1 cup softened butter
    • 1 cup castor sugar
    • 1 cup all purpose flour
    • 1/2 teaspoon baking powder
    • 1 tablespoon lemon juice
    • 1/2 teaspoon vanilla essence

    Method:

    1. Take butter and castor sugar in a bowl and beat it until it is smooth and creamy.
    2. Add lemon juice, vanilla essence and baking powder to it.
    3. Now mix the flour to it.
    4. Pre-heat the oven at 170 degree centigrade.
    5. Put a baking sheet on the tray.
    6. Take a small ball of the dough and press it in the form of a cookie.
    7. Dust it with cornflakes on either side and arrange on the lined sheet.
    8. Repeat with the rest of dough.
    9. Bake it for 10-12 minutes.
    10. Once they are golden in colour, keep them to cool on the rack.

    Take a tip:

    • You can take wheat flour instead of plain flour.
    • A mixture of wheat flour and plain can also be taken.

    Cornflakes Cookies

    Cornflakes cookies are tasty and make a good snack to store at home. The freshness of lime gives a good taste to it.
    Course: dry snack
    Cuisine: Vegetarian

    Ingredients
      

    • 1 cup zerobeli cornflakes crushed
    • 1 cup softened butter
    • 1 cup castor sugar
    • 1 cup all purpose flour
    • 1/2 tsp baking powder
    • 1 tbsp lemon juice
    • 1/2 tsp vanilla essence

    Method
     

    1. Take butter and sugar in a bowl, beat them until smooth and creamy.
    2. Add baking powder, vanilla essence and lemon juice to it.
    3. Put the flour and slowly knead to a dough.
    4. Pre-heat the oven at 170 degree celsius
    5. Place parchment paper on the baking tray.
    6. Take a small ball of the dough, press it lightly and roll it in the crushed cornflakes.
    7. Repeat with the rest of the dough.
    8. Bake for 10-12 minutes, they should be golden in colour.
    9. Let cool on the rack.
    10. Store in an air-tight container.

    How to make Mexican wedding cookies / Polvorones

    Mexican Wedding Cookies / Polvorones are soft, crumbly, heavy, short bread cookies from Spain. They are often served during Mexican wedding menu and thus the name.

    It’s the season of baking and I am so happy about it. My daughter loves baking and is eagerly waiting to make these mexican cookies which we had made earlier.

    Polvorones are made with different kinds of nuts, it is one of the essentials during Mexican wedding and thus they are called by that name.

    They are classic ones which are simply irresistible. Sugar coated, they look so good. You take a bite, they are crunchy and soon melt in the mouth.

    I love these Mexican Wedding Cookies / Polvorones as they are tasty, easy to make, eggless, have a lovely texture and love the beautiful sugar coated look.

    A few pointers to make good cookies:

    • Always use butter at room temperature. Keep it outside ahead of time.
    • Make sure you are using good ingredients, do not regret later of throwing it.
    • Use proper measurements while baking.
    • Inspite of using proper measurements, you may end up in a disaster. It may be a difference in the oven setting or timing.
    • Do take a proper note of the oven settings as each one is different.

    Mexican Wedding Cookies / Polvorones 

    Ingredients 

    • 1 cup softened butter
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla essence
    • 2.25 cup all purpose flour
    • 1/4 teaspoon salt
    • 3/4 cup walnuts
    • sugar for coating

    Method:

    1. Take butter and sugar in a bowl and whip them together until they are well incorporated and smooth in texture.
    2. Add vanilla essence and salt to it.
    3. Slowly, add the flour in two batches to it.
    4. Mix it well.
    5. Fold the nuts into it.
    6. Take small ball of it and make it into small circle.
    7. Take a baking tray, put a sheet over it.
    8. Line the cookies on a sheet.
    9. Pre-heat the oven at 170 degree centigrade.
    10. Bake for five to ten minutes.
    11. Once they are golden in color, remove and coat them in the powdered sugar and put them on the rack again to cool.
    12. Serve when cool for the crumbly texture.

    Take a note:

    • You may reduce the quantity of walnuts if needed.
    • Pecans and walnuts are usually added to it. You may add any other nut to it.
    • A little bit of cinnamon powder may be added to the castor sugar while dusting them.
    • Butter should be at room temperature.

    Ingredients:   (measurement used: 1 cup = 200grams)

    • 1 cup wheat flour
    • 2 teaspoon mocha powder
    • 1 teaspoon baking soda
    • 1/2 cup milk
    • 1/2 cup honey
    • 2 ripe bananas
    • 1/4 cup oil
    • 1/2 teaspoon ghee
    • 1/2 teaspoon wheat flour
    • 8 almond broken into pieces

    Method:

    1. Sieve the flour, baking soda and mocha powder together.
    2. Mash the bananas, beat it well.
    3. Add milk, honey and oil to it. Mix it.
    4. Now, add the wheat flour and gently mix it.
    5. Add the dry fruits to it.
    6. Pre-heat the microwave.
    7. Grease the tray with a little ghee and flour over it.
    8. Pour the batter over the greased plate.
    9. Microwave it for seven to eight minutes. The inserted toothpick should come out clean.
    10. Allow to cool on the rack.

    Mocha Banana Cake

    Mocha Banana Cake is a tasty and healthy cake. It has no refined flour, sugar and butter. Addition of mocha chocolate powder gives a nice flavour to it.
    Prep Time 15 minutes
    Cook Time 20 minutes
    Total Time 35 minutes
    Servings: 10 pieces
    Course: Snack
    Cuisine: international

    Ingredients
      

    • 1 cup wheat flour
    • 2 teaspoon mocha chocolate powder
    • 1 teaspoon baking soda
    • 2 ripe bananas
    • 1/2 cup milk
    • 1/2 cup honey
    • 1/4 cup oil
    • 1/2 teaspoon clarified butter (ghee) for greasing
    • 1/2 teaspoon wheat flour for dusting
    • 8 almonds chopped

    Method
     

    1. Sieve wheat flour, baking soda and mocha powder together.
    2. Mash the bananas. Add honey, oil and milk to it. Beat it well.
    3. Add the flour to it. Slowly mix the batter. Add chopped almonds to it.
    4. Pre-heat the microwave. Grease the baking tray with clarified butter, dust with flour. Pour the batter over it and bake it for eight minutes in two intervals.
    5. The inserted toothpick should come out clean. Once it is done, cool it on the rack.

    Notes

    • The timings may change for different microwave oven.
    • You can use an OTG.
