    Almond cookies are soft, tasty, melt-in the-mouth cookies. They are made with a few ingredients and are egg free.

    We are in the last month of the year, 2020 is at last coming to a close. There seems to be a light at the end of the tunnel now. Christmas is here and time to celebrate isn’t it? Time to bake wonderful cakes and cookies. We do look forward to this month of merry and singing. Wishing all a Merry X-mas !

    I have earlier shared cornflake cookies, polvorones and floral cookies. Today, I have almond cookies. I have also shared posts of  butter cookies and ghee cookies.

    Almond cookies are melt in the mouth cookies, absolutely delicious and soft. They were crisp on the outside and soft inside. This is one of the cookies we loved the most.

    For the almond cookies recipe, grind almonds to a powder in the small jar. All purpose flour and almond powder are mixed together with sugar and butter. A few drops of essence is added and later bind to a dough with a little milk. Refrigeration is important, you can keep it upto four hours. Later, shape them to cookies, make a design and bake them. One can dust them with castor sugar, but I have not done it.

    Let us now get to Almond Cookies Recipe:

     

    Ingredients:         measurement used: 1 cup=200ml

    • 1.25 cup all purpose flour
    • 1.25 cup almond powder
    • 0.75 cup butter
    • 0.75 cup granular sugar
    • 4-5 drops of vanilla essence
    • 2 tablespoon milk

    Method:

    1. Take all purpose flour, almond powder, sugar and butter, mix it well. Make a dough by mixing it in parts with little milk. Cling it and keep it in refrigerator for two hours.
    2. Remove the dough, take a small ball, make it into the shape of a cookie. Make a cross with the back of the fork.
    3. Make a couple more, the number of cookies that you can bake in one batch.
    4. Heat the oven at 160 degree Celsius
    5. Place a baking sheet in the tin, put the shaped cookies and bake them for ten to fifteen minutes.
    6. Once they are done, allow to cool on the rack.
    7. Store in an airtight container.
    8. Repeat for the rest of the dough.

    Take a tip:

    1. Use cold butter.
    2. If you can mix the dough without the milk, you can do it.

    Cook Time 40 minutes
    Freezing time 2 hours
    Total Time 2 hours 50 minutes
    Servings: 20 cookies

    Ingredients
      

    • 1.25 cup all purpose flour

    Baked Wheat Crackers

    Baked Wheat Crackers are crispy and tasty. They make good snacks to binge with a cup of hot tea.

    Today, most of us are in search of healthy recipes. We want to eat guilt- free snacks, those filling moments which we can convince ourselves that we really take care and not just write about it.

    When we decide to eat healthy, we make a conscious attempt to know what we are indulging in. We make an attempt to include raw vegetables and fruits in our daily diet.Our cooking is on the same lines.

Her blog has a lovely collection of dishes of Odia cuisine and  bakes. I want to try her recently published Floral Chocolate Cookie, it looks awesome. Contributions from co-bloggers:

    Ingredients:

    Measurement used: 1 cup= 250 ml

    • 1 cup whole wheat flour
    • 1 tbsp semolina
    • 1 tablespoon yoghurt
    • 1/4 teaspoon  baking soda
    • 2 tablespoon oil
    • 1/2 tablespoon flax seed
    • 1 teaspoon chilli powder
    • 1 teaspoon cumin powder
    • 1/4 teaspoon turmeric powder
    • a pinch of asafoetida
    • water

    Method:

    1. In a wide bowl add  the ingredients except water. Mix them well with fingers to get a crumbly texture.
    2. Add little water and knead to a stiff dough.
    3. Take a ball of the dough, roll into a thin chapati.
    4. Cut into squares. You can cut them in any desired shape.
    5. Pre-heat the oven.
    6. Line the baking tray with a sheet, arrange the crackers and bake for the required time. I need only seven minutes to bake a batch of them.
    7. Repeat for the rest of the dough.
    8. Once cool, store in an air tight container.

    Take a tip:

    • Baking time, temperature settings,  differs with each oven. Know your model and set the time. The temperature setting is usually at 170 degree centigrade.
    • I have Bajaj Majesty 600QT, I put the heater and timer on, pre-heat and then put them to bake.

    Ingredients

    Best Chocolate Cake

    Chocolate cake is soft and moist, it is absolutely delicious. The ganache tastes good with it.

    Cakes are loved by all, we just need an occasion to bake it, isn’t it? Our favourite cake is the chocolate cake. As I had never made a cake using coconut oil,  thought of making one. Now, this was the first time I used it, both mother and daughter, were anguish with the results. Wondering, how it turned out? It was tasty and loved by all.

    Now, I have another chocolate cake here ! Life is a good learning experience, we do not understand, until it really matters.

    Chocolate cake can be made by using either the cocoa powder or the dark chocolate. Here, I have used dark chocolate.

    About the event:

    Sending this to Shhh Secretly Cooking group event, a monthly event, we are paired as partners and cook on a pre-scheduled theme. The partners exchange secret ingredients and cook accordingly. The secret ingredients are guessed later by other members. The theme was suggested by Mayuri Patel, who runs the group.  She has a wide range of dishes on her blog, love her desserts especially.  I loved her chocolate truffles, they look so delish.

    My partner was  Aruna, a talented blogger.  She blogs at Vasus Veg Kitchen. She has many healthy dishes from regional cuisines. I loved her bengali style vegetable  chops.   I told  Aruna I wished to make a cake with coconut oil and she agreed. She gave me  coconut oil and walnuts as the secret ingredients.  The ingredients that I gave were choco chips and vanilla essence and she prepared this delicious looking  Chocolate and Custard Jelly Cake.

    A few other cakes that I have shared earlier are Zebra Cake, delicious Mocha Banana Cake

    Chocolate Cake 

    Ingredients:
    • 1/4 cup coconut oil
    • 2  tsp instant coffee powder
    • 1/2 teaspoon vanilla extract
    • 1 teaspoon lemon juice
    • 1cup castor sugar
    • 1/2 cup dark chocolate
    • 1/2 cup milk
    • 1 cup + 2 tsp maida
    • 1/2 tsp baking powder
    • 1/4 tsp baking soda
    • 5 walnuts
    For the ganache :
    • 1 cup fresh cream
    • 2 cup dark chocolate
    • 2 teaspoon butter
    For garnishing :
    • cashew pieces
    • choco chips
    Method:
    1. Take oil in a bowl.
    2. Mix coffee powder in quarter glass of water.
    3. Grate chocolate.
    4. Put coffee mixture, chocolate gratings, vanilla extract and lemon juice to the oil.
    5. Put some milk and mix it well.
    6. Sieve maida, baking powder and soda together.
    7. Mix them together. Add little milk if needed, the batter should be of medium consistency.
    8. Break walnut into pieces and put them in.
    9. Pre-heat the microwave oven for two minutes.
    10. Grease a tin.
    11. Pour the batter.
    12. Microwave it for five minutes on High, reduce the temperature, and again put it for three minutes. Once it is done, check, the inserted tooth pick should come out clean.
    13. Keep it in the microwave for sometime.
    14. Spread the ganache with a knife. Recipe for ganache is below.
    15. Decorate with cashew pieces and choco chips.
    To make the ganache :

    Take cream in a pan, warm it. Add the chocolate and butter, cook it for three minutes. Chocolate ganache is ready. Keep it in the refrigerator for sometime.

    Ingredients

    Butter Cookies are classic, tasty and melt in the mouth. They are ideal to binge as snacks after school or during mid- day hunger pangs.

    Baking is therapeutic, the aroma  fill my home and rejuvenates my senses, but alas ! I am a novice baker. Somehow, I never make many attempts, I would rather make dosa  or kebab.

    Butter cookies are one of the simplest cookies that we can bake, they are tasty and melt in the mouth. I have been making these since many years and these are evergreen, simple yet never out of fashion.

    A few other cookies that I have tried are Ghee Cookies, Mocha Cookies,

    Ingredients:

    • 225 grams butter
    • 75 grams castor sugar
    • 250 grams all purpose flour
    • pinch of salt

    Method:

    1. Sieve the flour along with salt. Keep it aside.
    2. Beat the butter for one minute. It should be soft and at room temperature.
    3. Add sugar to the butter, beat it again.
    4. Now, add the flour and mix it to a crumbly mixture. Slowly, knead it to a dough.
    5. Take a ball of the dough and flatten it lightly between palms.
    6. Repeat for the rest of the dough.
    7. Preheat the oven, bake at 180 degree celsius for 10 minutes.
    8. Once they are done allow to cool, store in air tight containers.

    Take a tip:

    • Butter should be at room temperature.
    • It is ideal to sieve the castor sugar.
    • You can make a mark on the cookie with the back of fork, I forgot to do.

    Oats cookies make a good snack to binge. If you are like me, thinking of ways to include oats, the recipe is for you 

    Cookies are an all time favourite of children. It is holiday time and children look around for snacks in the kitchen, isn’t it ? 

    Here is an easy to make and tasty cookies made with oats.

    The ingredients that you need are

    • 1 cup wheat flour
    • 1 cup oats
    • 1/2 cup butter unsalted
    • 3/4 cup Demerara sugar
    • 1/2 cup regular sugar
    • 1/2 cup cashew pieces
    • a pinch of salt
    • a pinch of soda bi carbonate

    Method:

    To make in the microwave :

    Preheat the microwave at 180 degrees celsius. Mix the ingredients in a bowl  lightly using your hands, place them in the oven and set timer for five minutes. Again , decrease the temperature and microwave for another three minutes. Tasty oat cookies are ready to serve. Keep them in an airtight jar.

    To make in the oven :

    Pre-heat the oven at 200 degree Celsius. Mix the ingredients  in a bowl and keep it aside for ten minutes. Take  a baking tray, line it with parchment paper. Now, shape them into a cookie, put them on the tray and bake for five minutes. Check and repeat for two more minutes. Allow to cool on the rack. Store in an air-tight container.

    Take a tip:

    • Let cool, for sometime before storing.
