    Fresh Lemon Juice is an all-time favourite Indian drink. It is ideal as a summer quencher, party appetiser or just anytime.  It comes under the category of popular Indian Sherbet Recipes.

    As the saying goes, when you have limes, make a lemonade, then why the delay?

    Fresh Lemon Juice is called as Nimbehannina Panka in Kannada. It is often made during Ram Navmi as an offering to the Lord along with butter milk. It is also a part of the Haldi kum kum tradition in South India. Ladies are usually served fresh lemon juice along with a lentil salad.

    The making of fresh lime or lemon juice needs no introduction. You must be wondering why a post should even be written about it? Yeah, it is that simple one which anyone can make. But here are a few ingredients which enhances the taste of it. Addition of a few strands of saffron lends a divine taste to it. A dash of cardamom powder gives a good aroma and taste to the drink. Do not forget to add a pinch of salt.

    What is an Indian Sherbet?

    Sherbet originated from the Arabic word sharbah which means  a drink and Shariba refers to drink. Indian Sherbet is a traditional drink made with fruits, herbs or even flower petals. It is usually chilled. It is served at festive occasions and family gatherings. It is a popular summer drink in South India.

    Can we add jaggery instead of sugar ?

    Yes, you may add powdered jaggery but the taste differs. It is another version of sherbet. Make sure the jaggery is pure.

    Do we need saffron to make sherbet ?

    Saffron lends a good aroma to the drink. You can skip it and instead add a few fresh mint leaves.

    What are the variations we can make to this popular drink ?

    You can add sabja seeds. You can also add soaked chia seeds.

    Can I make it ahead and keep it in the refrigerator?

    Yes, you can make it ahead and keep it in the refrigerator to chill. Make sure you consume within two days.

    Fresh Lemon Juice

    Ingredients
      

    • 4 glass cold water
    • 3 tbsp sugar
    • a few saffron strands
    • dash salt
    • 2 lemon

    Method
     

    1. Take water in a pan.
      Add sugar and saffron strands to it. Mix it well.
    2. Add lemon juice, salt and cardamom powder. MIx and serve in glasses.
    3. This is the basic fresh lemon juice recipe, you may add a few mint leaves. Soaked chia seeds can also be added.

     Masala Tea Powder | Chai Masala Powder  is a spice mix used along with tea leaves in the preparation of tea. It makes the tea flavoursome and a good immunity booster. Masala Chai is a popular tea variety in Indian sub-continent. With the on set of monsoon, this tea is mostly preferred by all. 


    Tea is of various kind, from the simple, regular tea to Irani Tea. Since the Covid period started, it’s been a testing time for all of us. We take many precautions to keep safe and healthy.  I regularly add some spices to the tea past two years.  Earlier, it used to be cardamom tea or ginger tea. For the past two weeks, I am using this masala tea powder and will be a regular affair for the next few months. It’s monsoon and we love to have this kind of Masala Chai regularly.  The season is perfect for some hot pakoras and masala chai. 

    Benefits of Masala Tea:


    Masala Tea consists of spices as cardamom, cloves, cinnamon, ginger and pepper. Spices have anti-inflammatory, anti-bacterial and anti-fungal properties. It helps to prevent cold, cough and nasal congestion. It helps in reducing inflammation and boosts the immunity power. The regular use of spice mix helps in improving the metabolism of the body.
    Medical studies have proven the ingredients used aids in the prevention of diabetes and cancer.

    Difference between Cassia Cinnamon and Ceylon  Cinnamon


    Cinnamon is made from the inner bark of the Cinnamon tree. The unique property  is the presence of  essential oils, Cinnamaldehyde. Cinnamon is basically of two kinds : Cassia Cinnamon and Ceylon Cinnamon. The regular cinnamon which is widely used is the Cassia cinnamon. It is curled inward from both the sides.  It has stronger flavour and reddish brown in colour. It is ideal to use in savoury dishes.   The sticks of Ceylon cinnamon curl in a telescopic form. It is warmer in tone, has a sweet flavour and tan in colour.  The coumarin content is higher in cassia cinnamon. Coumarin is a naturally occurring element found in both Cassia cinnamon and Ceylon cinnamon. High amount of coumarin consumption may have adverse effect on health. Bottom line is, both can be used in cooking. But if you are using regularly, Ceylon cinnamon seems to be the ideal choice. You can read more about it here

    Masala Tea Powder

    Masala Tea Powder Recipe:

    Ingredients:

    • 40 gram cardamom
    • 10 gram cinnamon
    • 10 gram  clove
    • 10 gram pepper
    • 10 gram  dry ginger

    Method: 

    Take all the ingredients and grind them together. Store it in an air tight container. 

    Take a tip:

    I have used the ceylon cinnamon  in this recipe. To get the cup and tablespoon measurement, watch the video below. 

     

     

     

    How to use the prepared masala powder: 

    Add a small quantity (1/4 teaspoon)  of the  prepared masala powder while preparing the tea. I prefer to put in the water and boil. Later, I add the tea leaves, boil,  and strain after sometime. A maximum of half tea spoon of masala powder is sufficient for three cups of water. 

    How to store :

    Store it in a clean, air tight container.

    Summer is at its peak in India, nothing is more good than a glass of cold water. We tend to dislike food during this season, juice, fruits and ice cream taste best. Lassi is an ideal drink during summer.

    Lassi is a traditional Indian yoghurt based drink. It is made using curd, water and a few spices. It may be sweet or salted. Fruits may be added in sweet lassi.

    A few other summer drinks that I have on the blog are :Kiwi Lemonade,Coconut Cucumber Cooler, Strawberry LassiToday, I have cucumber lassi, it is spicy and tasty. Do give a try to this drink.

    Let’s get to the recipe of Cucumber Lassi :

    Ingredients:

    • 1 cup thick curd
    • 3 cucumber
    • 1 green chilly
    • 1/2 inch ginger
    • 1/2 teaspoon cumin powder
    • salt to taste
    • 1/2 cup cold water

    Method:

    1. Cut the cucumber into pieces.
    2. Blend it along with ginger and green chilly.
    3. Add curd, salt, cumin powder and water. Give a swirl.
    4. Pour in glasses and serve.

    Notes

    1. Cucumber of any variety may be used. I have used small variety, thus used three of them.
    2. Adjust the quantity of water as per the need.
    3. Use one more chilly if you want it spicy. 
    4. Coriander may be added while blending, I have not added.

    Hot Chocolate Milk is a comfort drink on a cold winter morning. It is ideal to serve  children who are fussy to drink milk in any form. It is a good to have hot chocolate milk after breakfast.

    Waking up to a nail biting chilly morning, I really hate that alarm sound which alerts me to start my day. Nothing is more comforting than a cup of hot beverage. Winter calls for hot and warm soothing drinks, hot chocolate drink is ideal for children, it is one of the drinks my children relish and is easy to prepare.

    This is the second post of the 2nd Week of Blogging Marathon #96 with the “Kids Favourite” with the theme “Winter Warmers” The first one was Badam Milk.

    When should you give hot chocolate milk?

    • tired of the usual tea and coffee
    • fussy children
    • on cold winter mornings
    • when you are feeling bored
    • when you have close friends at home

     

    Hot Chocolate Milk

    Ingredients:

    • 500 ml milk
    • 1 tablespoon sugar
    • 1 tablespoon cocoa powder
    • 2 teaspoon fresh cream (optional)
    • a pinch of salt
    • 1/4 teaspoon vanilla extract (optional)

    Method:

    1. Mix together cocoa powder, sugar, salt and a quarter glass of milk in a sauce pan over medium heat until they dissolve. Put the remaining milk into it and heat it for sometime, keep stirring it in between.
    2. Pour in glass, top with cream and serve.

    Cook Time 5 minutes
    Total Time 10 minutes
    Servings: 2 glasses

    Ingredients
      

    • 500 ml milk
    • 1 tablespoon sugar
    • 1 tablespoon cocoa powder
    • 2 teaspoon fresh cream
    • a pinch of salt
    • 1/4 teaspoon vanilla extract

    Method
     

    1. Mix together cocoa powder, sugar, salt and a quarter glass of milk in a sauce pan over medium heat until they dissolve. 
    2. Put the  remaining milk into it and heat it for sometime, keep stirring in between. Do not boil.
    3. Pour in glass, top with cream and serve when warm for children. 

    Notes

    • Usually cocoa powder used in chocolate drink is double the quantity of what I have used, we do not like that way. Feel free to use more sugar and cocoa powder.

    Summer and cool, refreshing drinks, go hand in hand. Well, there’s no end to being thirsty these days. Days are getting hotter. Tea is a beverage which we can enjoy as both hot and cold.

    The lemon tea is not only refreshing but also provides Vitamin C to the body. Thus, it is ideal to have it during summer. One can easily reduce the amount of sugar that goes into it.

    A few other summer drinks to relish are Cucumber lassi, refreshing watermelon juice, imli ka amlana

    Let’s get making Lemon Iced Tea

    Ingredients:

    • 2 cups water
    • 2 teaspoon tea powder
    • 2-3 tsp sugar
    • juice of one lemon
    • 2-3 mint leaves
    • ice cubes

    Method :

    • Boil two cups of water.
    • Add two teaspoon of tea powder and turn of the stove.
    • Keep closed with a lid for five minutes.
    • Strain it.
    • Add sugar and lime juice.
    • Garnish with mint leaves and ice cubes.

    Take a tip:

    • Do not boil the tea leaves.
    • Adjust sugar as per your need.
    • Honey may be added instead of sugar.

    Prep Time 10 minutes
    Total Time 10 minutes
    Servings: 2
    Course: Drinks
    Cuisine: international

    Ingredients
      

    • 2 cups water
    • 2-3 teaspoon sugar
    • 2 teaspoon tea powder
    • 1 big lemon (juice)
    • 2 mint leaves
    • ice cubes

    Method
     

    1. Boil water.
    2. Add tea powder and switch off the stove.
    3. Keep it closed for five minutes.
    4. Strain, add sugar and lime juice to it.
    5. Garnish with mint leaves and ice cubes.

    Notes

    • Do not boil the tea leaves. It will taste bitter.
    • Adjust sugar to your taste.
    • Use only one ice cube, otherwise the tea may be diluted.

    Lassi is a popular Indian drink made using yoghurt. It is usually served sweet though salted version may be made. It is ideal drink during summer. Punjabi  lassi is very popular and tasty, second to nothing. Today, I present to you this version of  Punjabi Lassi.

    Benefits of lassi:

    • It is a coolant to the body.
    • It is ideal drink during summer.
    • It can be easily made at home. Less fat may be used in it.
    • It can be consumed by people of all ages.
    • It is a good source of probiotics.
    • It aids in digestion as it contains lactobacillus.

    Difference between buttermilk and lassi:

    Buttermilk and lassi is often confused. Technically, buttermilk is the residue that is left out after churning butter from cream. However, lassi is made using thick yoghurt. It is churned with a blender to make lassi. Lassi is usually thicker and has more fat content in it.  Buttermilk is thinner in consistency.  Lassi is more acidic than buttermilk. Spicy buttermilk is usually served after lunch in many states as Gujarat and Rajasthan.Lassi is from North India and usually served during breakfast.

    Different Kind of Lassi :

    Over the years, I have recreated  different varieties of lassi during summer.  Cucumber lassi is spicy and I love it. Strawberry lassi is ideal to serve when you have a couple of berries at home.

    This is an old post which I have redone now. Sending this to our fortnightly event Foodies_Redoing Old Post 40,  we work on an old post together. Some posts written earlier need to be changed with better pictures, text or sometimes both. Thus, we as a group, work on one post every fortnight.

    Lets get to the recipe of Punjabi Lassi

    Ingredients :

    • Curds or yoghurt 250ml
    • Milk 100ml
    • Water 150ml
    • Sugar 3tsp
    • Cream 1tsp
    • Pistachois a few
    • Cardamom powder a pinch

    Method :

    Blend the curds  and cream with a blender or a churner. Add water, milk and sugar to it. Blend all ingredients together to get a lather. Pour it into a glass. Add cardamom powder, pistachois and cardamom powder to it. Serve immediately.

    Note: Add more sugar if needed.

    Punjabi Lassi is a flavoursome drink made from yoghurt. It is popular in North India. It is ideal drink during summer.
    Course: Breakfast
    Cuisine: north indian

    Ingredients
      

    • 250 ml Curds or yoghurt
    • 100 ml Milk
    • 150 ml Water
    • 3 tsp Sugar
    • 1 tsp Cream
    • Pistachios a few
    • Cardamom powder a pinch

    Equipment

    • bowl
    • blender
    • glass
    • small spoon

    Method
     

    1. Blend the curds  and cream with a blender or a churner. Add water, milk and sugar to it. Blend all ingredients together to get a lather. Pour it into a glass. Add cardamom powder, pistachois and cardamom powder to it. Serve immediately.

    Notes

    Add more sugar if needed. 
    Cream may be avoided.

    Iced Expresso is an easy to make, chilled drink made with milk, chocolate and coffee. It is ideal for the weekends or during summer.

    Beverages are drink made consumable for humans. Even though, water is an essential for the survival of humans, it is not considered as a beverage. All other drinks come into this category. They can be of various kinds from hot beverages as tea and coffee, to cold ones as juice and aerated drinks. Again, these can be further classified as alcoholic and non-alcoholic. Today, I am glad to share with you “Iced Expresso”.

    Ingredients :

    • 200 ml Milk
    • 1 teaspoon instant coffee powder
    • 1 teaspoon cocoa powder
    • 1.5 teaspoon sugar
    • 1/2 teaspoon cinnamon powder
    • 1/2 teaspoon vanilla essence
    • 3 ice cubes

    Method :

    In a bowl add milk, cocoa powder, coffee powder ,and sugar . Blend them together. Later add cinnamon powder and vanilla essence and give a stir. Serve in glass with ice cube.

    Iced Expresso is quite similar to cold coffee but with a tinge of chocolate. It makes an easy and relishable drink. One can enjoy it during hot summers or midafternoons. My other cold beverages are
