  • Bisebelebath

    This is a famous dish of Karnataka. Its made on many occassions, be it the festivals or get togethers. A dish made of rice and tuvar dal, with goodness of vegetables and some condiments ground together makes it an outstanding one pot meal, which is cherished by many.

    The ingredients that you need are:

    I1/2  bowl rice

    1 bowl tuvar dal

    15beans

    2 carrots

    2 potatoes

    1/2 bowl of green peas

    lemon size tamarind

    sambar masala powder 3tbsp

    oil 2 tbsp

    mustard seeds 1/2 tsp

    asafoetida a pinch

    turmeric powder

    bengal gram 1tsp

    urad dal 1 tsp

    cashew pieces a fw

    curry leaves

    groundnuts 1/2 bowl

    To make the sambar powder :

    • coriander seeds 5tsp
    • bengal gram 1tsp
    • urad dal 1tsp
    • cinnamon 1 small stick
    • cumin 1/2 tsp
    • pepper 5
    • dessicated coconut little
    • red chilli 8
    • oil

    Method ;

    • This is the direct method of cooking. In a thick bottom vessel,  boil adequate quantity of water. Add tuvar dal and turmeric powder. Close a lid, and let cook on a low flame.
    • Split the beans and cut the potatoes into small cubes.
    • After fifteen minutes, when it is half cooked, add the beans.
    • a little later add the rice, potatoes and peas.
    • Add adequate quantity of water.
    • Meanwhile,  roast the spices seperately with a little oil. When cool,g rind them to a powder and keep aside.
    • Squeeze the pulp of the tamarind.
    • Add the tamarind pulp and sambar powder to it.
    • Make seasoning in another pan. Put it over the rice and mix well.
    • Allow to cook for sometime.
    • Serve with papad and cucumber raita.

    Take a tip :

    Raita is a salad with yoghurt and dressing.

    Adding of peanuts is optional. While adding , you can soak them in water and use, it gives the taste of fresh ones.

    I have earlier mentioned that I am trying various kind of dishes with brown rice.  This Brown rice pongal is awesome and it’s become a quick meal for me to make at night.  Here, as the lentil and  rice are cooked together, the taste of the brown rice is much less and hence more tastier.   • Brown rice biryani

    Feeling awesome, I am on my way to healthy eating. Brown rice (hulled or unmilled ) is much used in my kitchen these days.The  brown rice is the simplest and healthiest form of rice. Here only the outer layer is removed and thus all the nutrients are present. If the brown rice is milled and polished, the resultant is our white rice, which is less nutritious  in the process and more starchy. Thus, brown rice is low in carbs, rich in fibre, has more nutrition and keeps one going for a longer time.

  • Tomato rice

    It’s been sometime I have written rice recipe, today sharing with you all a popular and easy to make one -pot meal, tomato rice. Rice and vegetables are tossed in tomato puree blended with spices and cooked to make an easy meal some days.

    Before I proceed to the recipe, I would like to share some news with you all. I have been working on two e-books. The recipes are exclusively selected and  shall soon be available to buy. One is the book of Indian breads and the other  is of our favourite dals.

    The ingredients that you need are :

    • Rice 2 cup
    • Tomato 5
    • beans 1cup
    • carrot 1cup
    • peas 1/2 cup
    • onion 2
    • ginger 2 inch
    • garlic 4 cloves
    • chilli powder 1tsp
    • water 4 cups
    • salt to taste
    • oil 2tbsp

    Method :

    Let’s get cooking in easy steps:

    1. Chopping of vegetables
    2. Extracting of tomato puree
    3. Cooking of tomato rice

    1  Chopping of vegetables : Cut vegetables diagonally. You can see in the picture. Soak rice in water for fifteen minutes.

    2 Extracting of tomato puree: Follow the method. Add ginger and cloves of garlic while grinding.

    3  Cooking of tomato rice : I am making it a one pot meal, using a pressure cooker is the easiest option. Take oil in the pan, heat it and add onions. Saute for a while. Add the veggies and continue to saute. After a minute, add the rice and saute slowly. Then add the tomato pulp and  chilli powder. Mix evenly. All this is done slowly. Later, add water and salt and close  the lid. Let it cook to one whistle. Tomato rice is ready to serve. Onion in curds salads  (Raita) tastes good with it.

    Take a note : You can make it in the rice cooker too. Saute the veggies  and rice in a kadai, later put it in the rice cooker and keep.

  • Rice Porridge for summer

    Rice porridge cooked in coconut milk is a comfort food for summer. It is soothing to the body and does not involve much work near the fire.  It is cooked on a slow flame, with an occasional stir. This is a  typical food of South Kanara.

    To make the coconut milk : Grate one coconut and put it in warm water for sometime. Take some coconut and blend it in the mixer with a little water. Strain in a colander. Keep the husk aside and repeat the procedure for rest of the coconut.

    The used husk can be used again by adding water. I hope you liked this recipe , do leave a comment.

    Ingredients :

    Raw Rice 1 bowl (150 grams)

    Coconut milk of 1  medium sized coconut

    salt to taste

    water approximately 6 glasses

    Procedure :

    Take a thick bottomed vessel , and put the rice to cook with sufficient quantity of water. Let cook on low flame. In the meanwhile extract the coocnut milk and add to it. Add dalt. Mix well. Keep stirring in between lest it may not get burnt. Coconut porridge is ready to be served . Tastes  good with mango pickle.

    Make a note: The husk is usually discarded, but alternatively it can be added later to the porridge and cooked for sometime.

    Spinach Rice Recipe | Palak Rice

    Spinach rice is a delicious rice dish ideal for lunch, brunch or dinner. It is a good way to include iron riich spinach in our diet. 

    God could not be everywhere and hence he made mothers. It’s so true, mothers person plays a vital role in  shaping our lives. The efforts they have put in is unmeasurable and the value is realised only when we are in their position. Today, on this wonderful day, I attribute this post to my dear mom. She is one of the strongest woman I have seen. 

     Spinach rice is a tasty dish which I have picked it from my mom. My mother is a good cook, she can create many kind of dishes. I like her enthusiasm to cook for us even now.

    What is Spinach Rice / Palak rice

    Spinach rice is another kind of rice dish  from Indian cuisine which you can prepare for your family. The recipe is simple and does not need any fancy ingredients. It is ideal to pack for lunch box. You can also make it as a weekend menu and serve with a few papad and raita. 

    Let us get to the recipe of spinach rice / palak rice

    Ingredients : 

    • 1 cup Rice
    • 1 cluster Spinach
    • handful of coriander
    • 2 green chilli
    • 1 inch ginger
    • 2 cloves garlic
    • 2 onion
    • 2 tbsp oil
    • 1 teaspoon cumin
    • 1 stick cinnamon
    • 3 cloves
    • 1/2 teaspoon chilli powder
    • 1/2 teaspoon garam masala

    Method:

    1. Wash the rice and cook it with adequate quantity of water in a pressure cooker..The rice cooked should be separate grains.
    2. Let the pressure release by itself. Keep the cooked rice in a wide pan.
    3. Clean the spinach and coriander. Wash them properly in water and chop them roughly. Blanch them for two minutes. Immerse in cold water.
    4. Grind spinach and coriander along with green chilli, ginger, garlic to a smooth paste.
    5. Cut onion finely.
    6. Take oil in a pan, add cumin to it. Thrown in cloves and cinnamon, put onion and saute for sometime.
    7. Now, add the paste to it and continue to saute, the raw smell of the spinach should not be present.
    8. Add salt, chilli powder and garam masala. Mix well, switch off the flame.
    9. Add half the quantity of rice and mix it gently. Put  rice accordingly as per the taste.
    10. Spinach Rice / Palak rice is ready to serve.

    Take a tip :

    Adding of garlic is optional.

    Lemon Rice / lunch box ideas

    Lemon rice is one of the pre-dominant dishes prepared in South Indian home. It is tasty, makes a good meal and is actually a festive delicacy. A traditional festive meal calls it as chitranna. It is one of the essentials made without onions.

    Today, I have a quick-fix lunch box menu. It is ideal to prepare for weekend dinner too. A quick dinner is ready if you have pre-cooked rice on hand. You may use fresh green peas instead of ground nuts.

    This is a vegan and gluten-free food, considering that you are using gluten-free asafoetida.

    Lemon rice is easy to prepare, filling, can be made with or without onion and one can use left over rice too.

    What goes in the Lemon rice

    • Rice : Well cooked rice that is not smudgy is needed.
    • Oil : Any neutral oil. I prefer using groundnut oil.
    • Mustard seeds : It helps in setting the right tone of cooking. The right temperature of oil is used when the seeds crackle.
    • Bengal gram
    • Urad dal
    • Green chillies
    • Peanut
    • Curry leaves
    • onion : It is used here but many people avoid using it when making on a festive day.
    • lemon : It helps in balancing the flavour of the dish.

    Sweet Rice Recipe | South Indian

    Sweet rice is a traditional festive dish from India. Aromatic and delicious, it makes a good treat for many festivals. Celebrations and sweets go hand in hand. As this year comes to an end ,here is a sweet dish for you all. May the year ahead be filled with immense joy and prosperity. Wishing all my readers a joyous 2015!

    Sweet rice, a  colourful, aromatic dish is commonly made in South India during festivals. It is a delicious treat and an easy  to prepare.

    Ingredients:

    • 1 cup rice
    • 1 cup sugar
    • 1 pinch saffron
    • 2 cloves
    • 1/2 teaspoon cardamom powder
    • 1 tablespoon milk
    • 1/2 cup ghee or clarified butter

    Method:

    • Add warm milk to saffron strands and keep aside.
    • Roast the cashew nuts along with cloves in a little ghee and keep aside.
    • Take a thick bottomed vessel ,wash the rice ,add adequate quantity of water and allow to cook on a low flame. Put the saffron into it.
    • When the rice is cooked, add  sugar and ghee to it , stir and allow to cook on low heat.
    • Later, add cardamom powder and garnish with dry fruits.

    Take a tip:

    • You can use cashew, almond and raisins.
    • Aromatic rice is not used in the preparation.
    • Use good quality saffron. To check if saffron is a good quality, soak it in milk and observe. A genuine saffron has a tail and filament. and a small quantity of it gives a good colour to the dish.
    • Alternatively, the dish can be made  with a sugar syrup. Cook the rice, prepare a single thread consistency sugar syrup and mix it.
