    Apple Halwa is tasty and easy to make recipe. It is ideal to prepare for any festive days. The ingredients are easily available at home. and no milk or khoya is used. 

    I had many apples and decided to make this sweet. The best way to enjoy apple is to eat the fruit in its original form, you not only derive the health benefits but feeding something valuable to your mind and body. The next best way is to use in this kind of sweet dishes, easy to prepare and good to feed fussy children. Apple milkshake is ideal for breakfast.

    As I always tell, children will soon get acquainted to the food that we serve regularly at home. Be mindful of the food that you cook, let us make it a habit of dal, chawal and sabzi or anything that you feel good. At home, snacks such as chats are prepared only for dinner.

    Benefits of apple:

    1. Apples help to prevent various kinds of cancer.
    2. It helps to reduce cholesterol.
    3. Apples tend to reduce the risk of diabetes. It is rich in pectin- a soluble fibre and is the key to lower the level of sugar.
    4. Eating an apple a day helps one to have a healthier heart. The phenolic compound found in apple prevents the cholesterol from building up on the walls of the arteries.
    5. It helps in proper bowel movement. It prevents constipation.
    6. Regular intake of apple juice is found to reduce alzeihmers disease.
    7. It helps in maintaining good health of teeth.

    Apple Halwa Recipe

    Ingredients:

    • 1 tablespoon ghee
    • 8 cashew
    • 3 apple
    • 1 tablespoon sugar
    • 1/4 teaspoon cardamom powder
    • 1/4 teaspoon cinnamon powder

    Method:

    1. Wash, cut the apples and make a puree.
    2. Take ghee in a pan.
    3. Fry cashew nut and put them aside.
    4. Add the apple puree to it and saute it for five minutes. The water will evaporate soon.
    5. Add sugar and saute it again. The sugar melts and the pulp soon thickens.
    6. Add cinnamon powder and cardamom powder to it.
    7. Finally, add the roasted cashew nuts.

    Take a tip:

    • I have not peeled the skin of apple. You may scrape it if you want.
    • The quantity of sugar used was sufficient. Use more if needed.
    • Cinnamon powder is optional but it tastes good with apples.
    • Any other nuts may be used.

    Ingredients
      

    • 1 tablespoon ghee

    Method

  • Rawa kesari with jaggery / bellada sheera

    Rawa Kesari with jaggery is a healthy twist to the usual sweet that is prepared. It is healthier and tasty too.

    Festive days are here and time to prepare a galore of sweets. Kesari is usually prepared using sugar but one can make it using jaggery also. There is a variation in taste, but it is good, it has a different tinge I can say.

    I wanted to make this since a long time and the time has come now. Jaggery is considered to be more healthier than sugar. Before I get to the recipe, here are a few common facts about jaggery.

    How is jaggery made?

    Jaggery is made from unrefined sugar by boiling the raw, concentrated sugarcane juice until it solidifies. The other sources of jaggery are date palm and sap of coconut.

    What does jaggery contain?

    Jaggery consists of anti-oxidants along with minerals like zinc and selenium.

    Why is jaggery considered more healthy than sugar?

    Molasses is a nutritious by-product of the sugar making process, it is retained in jaggery. It is known by the name gur in India.

    How to make Rawa Kesari with jaggery / Bellada Sheera

    Ingredients:

    • 1 cup semolina
    • 1 cup jaggery powdered
    • 2 tablespoon ghee
    • 3 cup water
    • 1/2 teaspoon cardamom powder
    • cashew pieces

    Method:

    1. Add a spoonful of ghee in a thick bottom pan, put the cashew pieces and semolina to it, gradually roast it to a golden colour. Put it aside.
    2. Put water in the pan, add jaggery to it. As jaggery melts and the water boils, slowly stir in the semolina. Put ghee to it.
    3. Let cook on a low flame.
    4. Finally, add cardamom powder to it.
    5. Rawa Kesari with jaggery is ready to serve.

    Take a tip:

    • I have used organic jaggery, thus the solution is not filtered.
    • Roast the semolina on a low flame until golden in colour.

    Ingredients
      

    • 1 cup semolina
    • 2 tablespoon ghee
    • 1 cup jaggery grated
    • 3 cup water
    • 8 cashewnuts broken into pieces
    • 1/2 teaspoon cardamom powder

    Method
     

    1. Take a pan, add a teaspoon of ghee and roast the semolina and cashew pieces, it should be golden in colour. Put it aside.
    2. Take water in a pan, add jaggery to it. Once the jaggery melts and water comes to a boil, slowly stir in the roasted semolina. Put the remaining ghee. Let cook for sometime, the water evaporates and it thickens.
    3. Add cardamom powder.
    4. Rawa kesari with jaggery is ready to serve.

Colours, sweets, snacks and whole lot of good friends to enjoy, what else do you need on this day? Here is Carrot halwa made with condensed milk for the festival.

    Carrot Halwa with Condensed Milk

    Ingredients:

    • 1/2 kg carrots
    • 1 tin condensed milk
    • 2 tablespoon ghee
    • 1/4 teaspoon cardamom powder
    • cashew and almonds
    • 1 teaspoon ghee

    Method:

    • Wash the carrots. Pat dry. Grate them and keep them aside.
    • Take a thick bottom pan, add the grated carrot and roast it for five to seven minutes.
    • Put the condensed milk to it and let cook on a low flame. Keep stirring in between.
    • Once it thickens, remove from flame and add cardamom powder.
    • Roast the nuts in ghee and garnish it.
    • Serve hot.

    Carrot Halwa with Condensed Milk

    Carrot halwa is a popular sweet that is delicious and makes a good festive treat. The sweet prepared with condensed milk is a quicker version and is equally tasty.
    Prep Time 15 minutes
    Cook Time 20 minutes
    Total Time 35 minutes
    Servings: 8 servings
    Course: indian sweets, sweets, traditional sweets
    Cuisine: Indian

    Ingredients
      

    • 1/2 kilogram carrots
    • 1 tin condensed milk
    • 2 tbsp ghee
    • 6-8 cashew and almonds
    • 1 tsp ghee

    Method
     

    1. Wash the carrot, scrub well, pat dry and grate them.
    2. Put oil in a pan, add ghee and roast the carrots for five to seven minutes.
    3. Add condensed milk to it and let cook on a low flame, keep stirring in between, otherwise it will get burnt.
    4. It should become dry and crumbly in texture, remove from flame and add cardamom powder.
    5. Roast the dry fruits in ghee and garnish the sweet.
    6. Serve hot.

    Dates Burfi is a delectable fudge ideal for all occasions. Be it a get-together or a family function, this sweet is ideal and loved by all. Moreover, a guilt-free treat for all the sweet lovers.

    I am extremely happy and its one of those cherished moments , my blog www.evergreendishes.com has turned two today. A journey I embarked after much thought, the hit of the button  and the message read “Congrats  for choosing us !” from the hosting service, was a shock for a moment, if I could ever do such a thing and soon things paved way. Well , since then the journey has been a wonderful experience. I am thankful  to one and all for the support. And as a token of appreciation  and celebration I bring to you the decadent Dates Burfi.

    Dates are a good source of dietary fibre, antioxidants and essential minerals as potassium and manganese. The American Diabetic Society suggests that eating food rich in anti oxidants may help prevent cancer, diabetes ,heart disease and even Alzeihmer’s. Further,  another study states that fibre rich diet is found to help reduce obesity, stroke, heart disease and hypertension.

    The addition of nuts gives taste  along with the benefits of proteins and minerals. Dates Burfi  are one of the major attractions that we  see in the sweets stall. They are called by different names as Dates Roll or dry fruit burfi. Sugar is not needed here in the preparation, thus it can be easily consumed by all. Thus it can be given to all but moderation is the key.

    A sweet for all  for any occassion. Dates Burfi or Dry fruit burfi is tasty and ideal for any celebrations.

    Ingredients for Dates Burfi:

    250 grams Dates dry
    50 grams Cashew
    25 grams almonds
    25 grams Pistachios
    1 tablespoon ghee
    2 tablespoon khus khus

     

    Method to  make Dates Burfi:

    Cut the dates in small pieces. I have used seedless dates.
    Chop the dry fruits into small pieces.
    Dry roast them separately till crisp on low flame.
    Dry roast the poppy seeds on low flame until it is crunchy.
    Grind the dates in a grinder.
    Heat a pan and add ghee to it. Put the ground paste to it. Saute it for a few minutes. Then add the roasted dry fruits and mix well. Remove from fire and keep aside for a while.
    Grease your hands and roll it into cylindrical shape.
    Roll it in the roasted poppy seeds and keep in the refrigerator for two hours.
    Cut into small circular burfis.

    Take a tip:

    You can use walnuts too. Adjust the amount of nuts to your liking.[br]Chilling time is not included here.

    Dates Burfi is a delicious and healthy treat to make for Diwali. It is made using dates and other dry fruits.
    Servings: 20 pieces

    Ingredients
      

    • 250 grams dates
    • 50 grams cashewnuts
    • 25 grams almonds
    • 25 grams pistachios
    • 1 tablespoon ghee (clarified butter)
    • 2 tablespoon khus khus (poppy seeds)

    Method
     

    1. Cut the dates into small pieces. I have used seedless ones.
    2. Cut the dry fruits into small pieces and keep each of them seperately.
    3. Blend the dates to a puree.
    4. Roast each dry fruit separately until crisp.
    5. Dry roast the poppy seeds until they are crunchy.
    6. Take oil in a pan and put the dates pulp. Saute it for sometime.
    7. Then, add the roasted dry fruits, heat for a few seconds and remove it.
    8. Make cylindrical shaped fudges and roll them the roasted poppy seed.
    9. Keep it in the refrigerator for half an hour.
    10. Cut into round discs.
