    Namak Pare/ Namak Para / Nimki / Nimkin

    Namak Pare is a deep fried savoury snack usually made during festivals as Holi and Deepavali. It is crispy and tasty and make a good snack for children. It is ideal to carry while travelling.

    Usually namak pare is made with self raising flour or a mix of self raising flour and wheat flour in the same ratio. But, I use only wheat flour along with semolina and they turn out equally good. Deep fried snacks are always welcome at home, children love to binge on this.

    It is that time of the month when I work on my themed post, and I have chosen travel food for kids. So stay tuned for tasty snacks in  the next three days.

    Let’s get to the recipe of Namak Pare

    Ingredients:

    • 2 cup wheat flour
    • 2 tablespoon semolina
    • 1 teaspoon ajwain
    • 1/2 teaspoon pepper powder
    • salt to taste
    • 3 tablespoon oil
    • water

    Method:

    1. Take wheat flour in a pan, add semolina to it.
    2. Heat oil in a pan, we need it to mix the dough.
    3. Add ajwain, salt, pepper powder and oil to the flour. Mix it well. It should form a crumbly mixture.
    4. Add little water and mix to a stiff dough.
    5. Divide the dough into two parts, take a ball of the dough, dust with flour and roll into a circle which is nether too thick or thin.
    6. Make diagonal incisions on it. We need to make them in a rhombus shape.
    7. Heat oil, once the oil is put the cut pieces into it. Fry on a low flame. Keep stirring in between. Once they are cooked, remove them and repeat for the other ball of dough.
    8. Once they are cool, store in a air tight container.

    Cook Time 20 minutes
    Total Time 30 minutes
    Course: dry snack
    Cuisine: Indian

    Ingredients
      

    • 2 cups wheat flour
    • 2 tablespoon semolina

    Method

    Palak Sev | Spinach Crispies | Namkeen Snack for Diwali

    Palak Sev is a crunchy and flavoursome dry snack usually prepared during Diwali. It makes a good snack to serve along with other sweets.

    Diwali is round the corner and so much of enthusiasm all around. It’s the festival we look forward to celebrate and enjoy. Many sweets and snacks are prepared and children are happy enjoying the vacation.

    Today, I bring to you Palak Sev or Spinach Crispies. It’s crunchy and flavoursome, makes a good snack with tea.

    Let’s get to the recipe without much ado

    Ingredients:    Measurement: 1 cup =200 ml

    • 1 cluster spinach
    • 1cup  gram flour
    • 2 teaspoon rice flour
    • salt
    • 2 teaspoon hot oil
    • 5 green chilly
    • 1 inch ginger
    • 1 teaspoon cumin
    • water
    • oil for frying

    Method:

    1. Remove the stalk of spinach leaves.
    2. Cut and blanch it.
    3. When cool, grind it to a paste with chilly, ginger and cumin.  Do not add water.
    4. Remove the paste in a bowl.
    5. Add salt to it. Mix. Heat oil in a pan.
    6. Put rice flour and gram flour to it. Add two tea spoon of hot oil to it. Mix and knead to a dough. Use only as much gram flour as required.
    7. Take a sev maker, smear some oil to it. Take some dough and make it to a cylindrical shape. Put it inside, close and once the oil is hot, press it directly in the oil. Ensure the oil is on low flame while pressing the sev.
    8. Fry on medium high, use a long handled perforated ladle to toss and remove it.
    9. Remove on a tissue paper. Repeat with the rest of the dough.
    10. Once cool, put in a container and keep it.

    Take a tip: Green chilly used were not spicy, hence used 5.

    Prep Time 15 minutes
    Cook Time 30 minutes

    Course: evening snacks, festive treats
    Cuisine: karnataka

    Ingredients
      

    • 1 cluster spinach

    Strawberry Jam is tasty and makes a good spread with bread toast. Sharing a strawberry jam recipe which has only three ingredients and no added pectin.

    Home made jams are tasty and have no added preservative. With strawberries around, I wanted to make jam since a long time. The time did come at last, last week  for my Homemade Strawberry Jam.

    My weekly fruits are purchased on Sunday, thus the whole lot of fruits I separate, wash and keep them in the refrigerator. My sonny boy is not here these days and no one really eats this fruit. It is used as topping for desserts, thus I wash, dry and deep freeze them and use accordingly.

    Thus, the strawberries used here are frozen ones. I made the pulp, added sugar and kept aside for a couple hours.

    The benefits of strawberries I did write in my earlier post.

    How to store strawberries :

    Once you bring the strawberries, remove them from the plastic containers, they rot easily. Wash them, remove the stalks, put them in a colander for sometime. Pat dry and keep them in a bowl in the refrigerator. Strawberries are seasonal and available only for two months. To preserve for a longer time, put them in a freezer safe container and store in the deep freezer. Use as required.

    Ingredients:

    • 250 grams strawberry
    • 1 cup sugar (1 cup =125ml)
    • 2 teaspoon lemon juice

    Method:

    1. Keep three plates in the freezer.
    2. Wash the jar and allow it to dry. It is essential the jar is clean. You can also sterlize by putting in the hot water.
    3. Make puree of the frozen strawberry, add sugar and keep it aside for 3-4 hours. If you are using fresh strawberry, cut them, add sugar and keep it aside. Make the pulp later.
    4. Put the pulp in a pan and set it to boil. Keep stirring. In ten minutes it will be done. Add the lime juice and give a stir.
    5. To check if it is done, take a plate from the freezer and put a drop on. If it spreads, you need to cook it for some more time.
    6. Store in the bottle.

    Make the pulp of the strawberries.

    Add sugar, mix and keep it aside for 3-4 hours.

    Put it in a pan and cook for ten minutes.

    Strawberry jam is a delicious spread that can be used with bread, toast, chapati or even with cookies.

    Ingredients
      

    • 250 grams strawberry
    • 1 cup sugar
    • 2 teaspoon lemon juice

    Method
     

    1. Keep three plates in the freezer.
    2. Wash the jar and let it dry.
    3. Make pulp of the strawberry, add sugar and keep it aside for 3-4 hours. If you are using fresh strawberries, cut them, add sugar and keep it aside. Make the pulp later.
    4. Put the pulp in a thick pan and set it to boil. Keep stirring. It should be done in ten minutes. As it is being done, add lime juice to it. To test if it is done, put a drop of the pulp mixture in a plate, if it spreads, cook it for some more time. 
    5. Remove and store in the jar. 

    Strawberries are still available and here is a strawberry pie recipe which I would like to make soon. I am sure children will relish it.

    Its the season of strawberries, the red luscious fruit is loved by all. Mostly consumed as a fruit, it is also used in desserts, cakes and toppings. It gives a wonderful taste to cold beverages. Strawberry milkshake is a favourite drink to enjoy in this season.

    Here is a healthy twist to the usual milkshake. There is no added sugar and the milk used is low fat. I usually blend my milkshakes with a scoop or two of ice cream but avoided it here. Thus, this low fat milkshake is ideal to be consumed by all weight watchers.

    Strawberry is  nutritional packed, it is rich in anti oxidants and polyphenols. It also has nutrients, vitamins and minerals as manganese, Vitamin C,folate, potassium , dietary fibre and magnesium.

    Benefits of Strawberries

    Strawberries boosts immunity, reduces hyper tension and improves heart function. They boosts brain function and improves eye sight. They help prevent arthritis and gout. It reduces inflammation caused by injuries. It helps in weight loss.

    Ingredients for Low Calorie Strawberry Milkshake

    • 250 ml low fat milk
    • 6 strawberries
    • 1/2 teaspoon natura (sweetener)
    • ice cubes for dressing

    Method to make low calorie strawberry milkshake:

    Wash the strawberry, pat dry and cut into small pieces. Freeze them for some time. Grind all ingredients, pour it in a glass, add ice cube and serve immediately.

    Take a tip:

    • Natura is a sugar free sweetener added to enhance the taste of the beverage. It can be prepared without  it also.
    • It is ideal to freeze strawberry pieces ahead of time.

    • 250 ml low fat milk
    • 6 frozen strawberries
    • 1/2 teaspoon natura
    • ice cubes

    Method
     

    1. Wash the strawberries, pat dry, cut into chunks and  freeze them for sometime.
    2. Blend all ingredients together except ice cubes. 
    3. Serve in glasses, top with ice cubes.

    Notes

    • Natura is a sugar free sweetner that enhances the taste. You may avoid it if you wish.
    • Strawberries can be washed, dried and frozen ahead of time.

    Pear smoothie | Pear custard

    Pear is a wonderful fruit to use in various dessert. It is juicy and has a divine taste. Pear smoothie is ideal for children who do not like fruits.

    We are living in an era where an additional hour would always be welcome. Running between errands and deadlines, we just try to do our work in an easy way. I love easy and fuss free recipes. Elaborate method of cooking is usually for weekends or pre planned dinner.

    Serve it along with breakfast  or as an evening after school snack for kids.

    Ingredients :

    • 1 litre milk
    • 150 grams sugar
    • 1 tablespoon custard powder
    • 2 pear

    Method:

    • Boil milk. Keep one-fourth cup of milk aside in a bowl.
    • Add sugar. Give a stir.
    • Mix custard powder in milk. Add it to the milk and stir well. Let boil for two minutes.
    • Remove the skin of pear and cut into cubes.
    • Blend to a purée.
    • When the custard is cool mix the purée into it. Chill and serve.
    • Pear Smoothie is ready to serve.

    Pear Smoothie aka Pear Custard

    A tasty, healthy and easy to make recipe which is ideal along with breakfast or as mid snacks.
    Prep Time 10 minutes
    Cook Time 10 minutes
    Total Time 20 minutes
    Servings: 4 people
    Course: Breakfast
    Cuisine: American
    Calories: 560

    Ingredients
      

    • 1 litre milk
    • 100 grams sugar
    • 1 tbsp custard powder vanilla flavour
    • 2 pear

    Method
     

    1. Boil milk. Remove one- fourth cup milk and keep it aside.
    2. Add sugar and give a stir. Continue to boil for sometime.
    3. Mix custard powder in the milk kept aside.
    4. Put this mixture into the milk and stir. Let boil for sometime.
    5. Turn off the gas and allow to cool.
    6. Peel the skin of pear and cut into chunks.
    7. Make a puree of it.
    8. On cooling, mix with the prepared custard. Serve chilled.

    Notes

    • Peeling of skin is optional. If you are a health freak, use with the skin. It has many anti oxidants.
    • Consistency of custard should neither be too thick or thin.

    Khakhra is a crispy savoury snack from Gujarati cuisine. Methi Khakhra is tasty and aromatic.

    I love Gujarati food. The snacks that they make are varied and yummy. Khakhra, fafda, dhokla and kachori are some of their popular ones. Khakhra are made of various kinds. They can be used as a snack or for breakfast.They can be stored for a long time and ideal to carry during travelling.

    The affair with khakhra started long back at home. Children loved these when they were young and I always had a stack of these in my pantry. Methi ,Jeera, Masala, Garlic, so many varieties were available in the bakery.

    As we planned to make Gujarati dishes, I thought of trying my hand at Khakhra.  Yes, they did turn out good and glad that I ventured into this one. Presenting to you all Gujarati’s popular snack Methi Khakhra today.

    Methi Khakhra

    Recipe Type: Snacks

    Crispy and spicy, these snacks can be binged anytime.

    Ingredients

    • Wheat flour 1cup

    • turmeric powder 1/4tsp
    • asafoetida 1/4tsp
    • salt to taste
    • oil 1 tsp +extra
    • water for kneading

    Instructions

    • Keep it aside for ten minutes.

    To make the khakhras:

    • Take a small ball of the dough and roll it into a thin circle.
    • Heat a skillet.
    • Put the rolled disc on the skillet, leave it for a few seconds, until the air pockets are visible, then flip it over.
    • Apply some oil and press it on the edges with a potato masher. let cook on a low flame.
    • Flip over and drizzle some oil. Dark spots should be visible and it should turn out crisp.
    • Remove and keep aside

     

    Notes
    You can do various varieties here. Palak Khakhra, garlic Khakhra, Coriander Khakhra, Jeera Khakhra and Punjabi Khakhra are the popular ones.

    Put the dry ingredients in a bowl and mix them thoroughly. Wheat flour, gram flour, amchur powder, kasuri methi, chilli powder, turmeric powder and asafoetida

    Add a teaspoon of oil and mix it. Put little water and knead to a dough.

    Dough is ready. The dough should be firm. Keep it aside for ten minutes.

    Take a ball and roll it into a thin circle. Khakras should be made as thin as possible.

    Heat a skillet, put it on it, when air pockets are seen, flip it over, and then drizzle some oil and press with a potato masher

    Press the edges and flip it once or twice. They need to be crisp, not soft.

  • Strawberry mousse for the weekend

    It’s the season of strawberries, the bright red berry fruits are luscious and delightful. One cannot resist these berries, and we find many ways to use them. Here is one such easy to make dessert, strawberry mousse.

    Strawbery is not only gorgeous to see, the serine red with bright green hood is just irreseistible.  The ripe ones are great to eat, these berries are also  packed with many benefits. They  boost immunity and rich in  anti oxidants. They help fight bad cholestrol. They help regulate blood pressure and fights cancer. They help in maintaining the weight of the body.

    A delicious blend of strawberry with cream.
    Ingredients
    • Strawberry 10
    • Fresh cream 200ml
    • Sugar 1tbsp
    • Agar agar 1tsp
    • water 2tbsp
    Instructions
    1. Wash the strawberry and pat dry.
    2. Cut them into halves.
    3. Make powder ofagar agar and put it in hot water, stir and keep aside.
    4. Blend the berry and sugar.
    5. Add cream and whisk again. Do not whip for a long time.
    6. Finally, add the mixture, give a stir, pour it in small bowls and allow to set for two hours. Agar agar sets at room temperature, keep it in the refrigerator later.
    7. Serve chilled
    Notes
    Agar agar is used in the recipe as I have tried to make it vegetarian. You can use gelatin instead and immediately keep it to set in refrigerator.

  • Instant chocolates

    It’s holidays for most of the school children, time to enjoy and have fun. But, it’s so weird to see them bored or glued to that TV or mobile  all the time. A real task for the mothers to keep them engaged. Here is an instant  chocolate recipe, I am sure you all will love them.

    The kids can be taught to do this one  as a fun and learning activity. My daughter keeps doing these atleast once during her holidays. Here is another recipe.

    Ingredients :

    • marie biscuits 1 packet
    • milk 1/2cup
    • castor sugar 4tbsp
    • cocoa powder 2tbsp
    • cashew pieces a few

    Method :

    Crush the biscuits in the mixer. It can be done by hand, but needs time.Take milk and mix the ingredients. Shape them into square shaped chocolates. Keep them in the refrigerator for an hour.

  • banana and fig milkshake

    Bananas are an wonderful fruit, those reading me will know that I cherish this humble fruit. It’s packed with nutrition and the one fruit liked by all at home. It is available all round the year unlike other fruits. But there are times, when this fruit goes unused. I use it along with figs for a nutritious packed drink.

    I love making milkshakes. These are delicious and loved by all ages. You can substitute the ingredients accordingly.
    Banana and fig milkshake is a tasty and healthy drink. It is ideal for kids who do not have breakfast in the mornings. I have used fresh figs here. Figs are rich in natural sugar, minerals and solution fibre. It consists of minerals such as potassium, calcium , magnesium, iron and copper along with Vitamin A and E. Thus , the blending of these two fruits makes it a healthy drink.

    This is an ideal way for fussy kids who do not eat figs.

    Ingredients :

    • bananas 2
    • figs 4
    • milk (skimmed ) 1/2 litre
    • sugar 2tsp
    • vanilla ice cream 1tbsp (optional)
    Method : 
    Cut the fruits and churn all the ingredients together. Serve chilled.
