    Fresh Lemon Juice | Indian Sherbet Recipe

    Fresh Lemon Juice is an all-time favourite Indian drink. It is ideal as a summer quencher, party appetiser or just anytime.  It comes under the category of popular Indian Sherbet Recipes.

    As the saying goes, when you have limes, make a lemonade, then why the delay?

    Fresh Lemon Juice is called as Nimbehannina Panka in Kannada. It is often made during Ram Navmi as an offering to the Lord along with butter milk. It is also a part of the Haldi kum kum tradition in South India. Ladies are usually served fresh lemon juice along with a lentil salad.

    The making of fresh lime or lemon juice needs no introduction. You must be wondering why a post should even be written about it? Yeah, it is that simple one which anyone can make. But here are a few ingredients which enhances the taste of it. Addition of a few strands of saffron lends a divine taste to it. A dash of cardamom powder gives a good aroma and taste to the drink. Do not forget to add a pinch of salt.

    What is an Indian Sherbet?

    Sherbet originated from the Arabic word sharbah which means  a drink and Shariba refers to drink. Indian Sherbet is a traditional drink made with fruits, herbs or even flower petals. It is usually chilled. It is served at festive occasions and family gatherings. It is a popular summer drink in South India.

    Can we add jaggery instead of sugar ?

    Yes, you may add powdered jaggery but the taste differs. It is another version of sherbet. Make sure the jaggery is pure.

    Do we need saffron to make sherbet ?

    Saffron lends a good aroma to the drink. You can skip it and instead add a few fresh mint leaves.

    What are the variations we can make to this popular drink ?

    You can add sabja seeds. You can also add soaked chia seeds.

    Can I make it ahead and keep it in the refrigerator?

    Yes, you can make it ahead and keep it in the refrigerator to chill. Make sure you consume within two days.

    Fresh Lemon Juice

    Fresh Lemon Juice is a traditional Indian beverage made with lemon, sugar and water.

    Ingredients
      

    • 4 glass cold water
    • 3 tbsp sugar
    • a few saffron strands
    • dash salt
    • 2 lemon

    Method
     

    1. Take water in a pan.
      Add sugar and saffron strands to it. Mix it well.
    2. Add lemon juice, salt and cardamom powder. MIx and serve in glasses.
    3. This is the basic fresh lemon juice recipe, you may add a few mint leaves. Soaked chia seeds can also be added.

    Banana Rasayana | Balehannina Sihkarni | No Cook Recipe | 15 minute recipe

    Banana Rasayana or Balehannina Shikarani is a traditional recipe. It  is a simple yet tasty recipe which can be recreated in ten minutes. It involves no cooking.

    Rasayana can be had as a dessert after meals or one can use it as an accompaniment with chapathi. During our childhood days, I remember banana rasayana was made so regularly. Fasting days and a bowl of rasayana was kept ready to serve. Excess of banana and it was soon made into a shikarni.

    This post is one of the reminiscences of our childhood days.. It was ideal for any day, just cut a few bananas and put them in milk. Growing up in a joint family during my childhood days, cooking was an elaborate affair. If some unexpected guest came home and an extra dish on the platter would be banana rasayana. Too many banana after a festive day and it would turn into a delicious rasayana. I think all of us can relate to such incidents.

    The making of rasayana

    The simplest step is to use those fruits which are a day old. Cut them into small pieces and put it in a bowl of milk. Add sugar, cardamom powder and grated coconut to it. Serve it with chpathi or as a dessert.

    Why should you make this ?

    • It is easy to prepare. Here, no cooking is involved. Just cut a few bananas, mix a few ingredients in milk and voila, it is ready.
    • It is ideal to offer to the Lord on festive days.
    • It is ideal for fasting days. 
    • Rasayana is a good way to finish off the extra banana lying in the kitchen platform.
    • Bananas are  a good source of nutrition, ideal to make it as part of  our diet.
    • It is a quick fix sweet dish anytime.

     

      

     

    Take a tip:

    • Cut the banana into small pieces.
    • Bananas should  not be over ripe.
    • Honey may be added.
    • You may add cashews and raisins.

    Banana Rasayana is a simple, no cook, tasty dish. It is ideal to serve with chapathi or as a dessert.

    Ingredients
      

    • 2 bananas
    • ½ cup milk
    • 2 teaspoon sugar
    • 2 teaspoon fresh grated coconut
    • A pinch of cardamom powder

    Equipment

    • 1 knife
    • 1 wide bowl
    • 2 spoons
    • 1 serving bowl

    Method
     

    1. Cut the banana into pieces. Add milk. Put sugar, grated coconut and cardamom powder. Mix and serve.

    Spicy Murmura Snack is a tasty, easy to make, no cook, vegan snack. 

    Murmura snacks are loved at home. We can have it anytime depending on the form it is created. I will share other kind of murmura recipes  soon. This version of murmura snack is spicy and ideal for the rainy days, when you long to have a cup of chai with some namkeen. 

     

    Murmura snack is ready in 15 minutes. It is a no cook recipe ideal for those small hunger pangs in the evening. It can also be served as a snack with tea.

    Here, I have made a spice mix and used it. The spice mix can be used in raita or over bread sandwich along with veggies.

    The  murmura story :

    Murmura is also called as puffed rice or popped rice. It is made using par-boiled  rice by tossing in salt or deep frying in oil . It is also made by heating rice kernels under high pressure. The method of manufacture does differ from region to region.  It is commonly used in Asian countries. Puffed rice  is mainly used as a street food where hawkers sell puffed rice cakes and other snacks. In India, it is usually used to make a chaat called bhel.  It is also used in making street style snacks as shown below.

    Ingredients : 

    • 1 cup murmura
    • 1 onion 
    • 1 tomato
    • 1 cucumber
    • ½ raw mango 
    • ¼ teaspoon chaat masala
    • ¼ teaspoon pepper powder
    • 1/ teaspoon chilli powder
    • Salt
    • Fresh coriander

    To be made into a powder

    • ¼ cup mint leaves
    • 4 green chilly
    • 1 clove garlic
    • 1 teaspoon coriander seed
    • 1 teaspoon cumin 
    • Pinch of black salt

     

    Method:

    1. Cut the vegetables into fine pieces. 
    2. Separate the mint leaves, wash and dry it on a cloth. 
    3. Grind the ingredients to be made into a powder.
    4. In a bowl take murmura, add  onion, cucumber and raw mango pieces to it. Put a spoon of the powder. Add chaat masala, pepper powder and salt. Mix them together.
    5. Finally, add tomatoes and garnish with fresh coriander.
    6. Spicy murmura is ready to serve. 

    Take a tip : 

    • You may add fried snacks as aloo bhujia or sev.
    • If you do not have raw mango, add juice of half lemon.
    • Once mixed, consume immediately.

    Fresh Fenugreek salad is a simple, healthy and tasty salad. It pairs well with jowar roti. It is commonly called as Hasi Menthe Kosambri in Kannada.

    Hasi Menthe is the Kannada word which translates as raw fenugreek leaves and kosambri refers to a salad.

    In North Karnataka, a variety of dishes are served with jowar roti. Chutney, palya, kossambri and not mention the various podis. It is one such food the people of the region enjoy. Menthe kosambri is a simple, rustic yet tasty to the core. Now, one need not wonder if the recipe is of any use. If you do not make jowar roti, you can serve it with chaapthi. The best thing is it can be eaten as a snack too, add a few cherry tomatoes, top with nuts and a salad bowl packed with nutrients is ready.

    I was amazed when I read the numerous benefits of fenugreek leaves. It is rich in nutrients as Folic acid, Vitamin A, B, K and C. It also contains riboflavin and niacin. The fibre helps in flushing out the toxins from the body. It also helps in treating gastritis and indigestion. Fenugreek leaves are one of the richest source of  Vitamin K.  It is heart friendly. It is rich in antioxidants. They help in proper functioning of the kidney. It helps in controlling cholesterol which may result in stroke, high blood pressure and heart failure.

    Ways to serve the salad :

    • It tastes great with millet flat bread. It is quite common to pair it with jowar roti along with a sabzi and chutney.
    • It pairs well with khichdi along with pickle
    • It can also be used as a side dish with any meal.

    What goes in the salad ?

    • Fenugreek leaves : Use fresh leaves. Use only the leaves, discard the stem. Use whole leaves in salad. Wash them and put them in a colander for sometime. The long fenugreek leaves are ideal for salads.
    • Onion : Chop it finely.
    • Tomato : chop it finely.
    • Cucumber : wash well and cut into bits.
    • Peanuts : Roast and discard the skin. Grind coarsely.
    • Salt : to taste
    • Pepper powder: for that spicy kick
    • lemon juice : to balance all flavours

    How to assemble :

    Put all the ingredients in a bowl and toss them

    You may add cherry tomatoes, grated cheese and a splash of olive oil. Be creative with your choices.

    Ingredients
      

    • 1 cup fenugreek leaves
    • 1 onion
    • 1 cucumber
    • 1 tomato
    • salt
    • pepper powder
    • lemon juice
    • 1 teaspoon roasted peanut coarsely powdered

    Equipment

    • 4 small bowl
    • 1 big bowl
    • 1 serving spoon
    • 1 colander

    Method
     

    1. Wash the greens and keep it aside. Refer tips below on using it.
    2. Cut onion, cucumber and tomato into small pieces.
    3. In a bowl add the ingredients and toss them.
    4. Serve it fresh.

    Notes

    Use fresh fenugreek leaves. Use only the leaves, discard the stems. Whole leaves do not taste bitter, hence whole leaves are used after washing and drying them on a colander.
    Add salt just before serving.
    Do not skip on lemon juice, it lends a good taste to it.

    Do you know the power of eating a healthy breakfast? It keeps you charged to face the challenges of the day with a lot of vigour and vitality. The body is without food for more than ten hours and it is best you feed with a healthy diet. Smoothies are easy to make and filling. They have the added advantage of fruits or vegetables in it which normally many miss taking in small quantities too. Today’s smoothie recipe has :

    • Banana– Banana is available all round the year, it is easy on the pocket and packed with nutrients. It is rich in potassium, magnesium and riboflavin.It improves blood sugar level. It aids in digestion. It may help you feel fuller for a longer time and thus help to reduce weight.
    • Black Grapes – the wonder fruit which is available only for a couple of months.It contains a lot of reseveratrol and antioxidant that is good for the heart. The anti-oxidants also help to keep the heart healthy. The vitaimin K present in it  helps to build strong bones. Another interesting fact is grapes also helps in dealing with memory issues. The polyphenol compounds are associated with benefits of slowing mild memory due to old age.
    • Chia seed – It is one of the highly consumed seed these days. It contains quercetin, an anti-oxidant helps to lower blood pressure and in turn helps to reduce risk of heart diseases. They are rich in fiber.
    • Flaxseed- It is rich in proteins, fiber and omega 3 fatty acids. It is one of the oldest crop known to man. It can be used in various kind of dishes.
    • Yoghurt : I like to add yoghurt in smoothies as it is a good source of protein. It makes the smoothie filling and tasty.

    I like adding smoothie to my diet plan as it is a no cook recipe . It is easy to prepare and makes a quick, healthy breakfast. Moreover, I prefer smoothie to juice or milkshake. The other smoothie you can whip are Apple Banana Smoothie, Watermelon Rind Smoothie, Cantaloupe Carrot Smoothie

    Let us get to the recipe of Banana Grape Smoothie

    Ingredients:

    • 1 banana
    • 12 black grapes
    • 1/2 teaspoon chia seed
    • 1 teaspoon flax seed
    • 1/2 cup yoghurt
    • 1/2 cup water

    Method:

    1. Crush the chia seed and flax seed in the small jar.
    2. Put the banana, grape and yoghurt in the blender and swirl them together. Put water as per the need.
    3. Top with crushed seed powder.
    4. Chill and serve.

    Take a tip :

    • Use ripe banana to make smoothie.. It is packed with nutrients, sweet in taste and a good way to use it.
    • You may add a few chopped nuts as topping.
    • Sometimes, I add berries to it, it tastes good.
    • If the grapes are sour, add honey to it.
    • Sugar may be used, I do not use it here.

    One needs to take fruits regularly in their purest form to reap the benefits. When one desists them, smoothie comes to the rescue. Smoothie is tasty and filling. It is made in many ways. It is ideal to serve as a quick drink.  To prepare a smoothie, one  can use  a combination of fruits, vegetables, yoghurt, seeds, nuts, milk, juices  or spices in it. Apple Banana Smoothie is one such drink. It is delicious, naturally sweet  and filling. This smoothie tastes great with a topping of few almond pieces.

    Apple and banana are available round the year. Apples are a rich source of fibre and Vitamin C. It helps in maintaining ideal weight. It is diabetic friendly, good for the gut and lowers the risk of stroke. It helps to have a good immune system. The antioxidants may help in preventing cancer.

    Muskmelon is also known as Cantaloupe. It is commonly known as Kharbuja, is ideal to use as fruit smoothies, milkshakes and in fruit salads.

    Nutrients in Muskmelon:

    It is rich in Vitamin A, C, K , B1 and B6. It also contains magnesium, copper and dietary fibre.

    Muskmelon provides various health benefits.Thus, one needs to include it regularly in their diet.

    1. Muskmelon  aids in weight loss.
    2. It is rich in Vitamin C that strengthens the immune system.
    3. It regulates the blood sugar level, ideal for people with diabetics.
    4. It is high in water content. It is ideal food for summer, keeps the body hydrated and supplies it with essential nutrients.

    Ingredients:

    • 4 to 5 cubes of musk melon
    • 3/4 cup fresh curd
    • 1 teaspoon honey
    • 2 cashew
    • 2 hazelnuts
    • cardamom powder
    • 1/2 cup water

    Method:

    1. Wash and cut the fruit. Discard the seeds.
    2. Blend it to a puree along with cashew.
    3. Put curds and blitz it again. Add water.
    4. Top it with honey.
    5. Put hazelnut  pieces and serve.

    Take a tip:

    • Use fresh curds.
    • Feel free to use sugar.
    • Any other nuts such as almonds may be used instead of hazelnut.

    Watermelon Rind Smoothie is tasty and healthy drink. It makes use of the summer fruit and vegetables. It is vegan and gluten-free with no added sugar.

    Sometimes, a taste acquainted lasts for a long time. These days, I am looking for ways to add the watermelon rind in my diet. Earlier, I had made a salad  and today I tried making this smoothie and believe me, it’s really good.

    Smoothies are the ideal choice for those who are calorie conscious. It is believed that they are filling and naturally keeps one going for a longer time with little food.

    Watermelon Rind Smoothie has only three ingredients and no added sugar. It is naturally sweet. It is vegan and gluten-free. Do give a try to this and let me know how it was.

    Watermelon rind is the white part of the fruit that is usually discarded. Scrape it slowly with a knife and later cut into pieces.

    The best way to use it is to separate the rind and keep it refrigerated.

    Watermelon Rind Smoothie is a simple recipe that makes use of all the summer fruits and vegetables.

     

    Ingredients :

    • 1 cup watermelon rind
    • 1 cup cucumber pieces
    • 1 cup grapes
    • water as needed

    Method:

    1. Cut the rind into small pieces.
    2. Put them in a blender and pulse it.
    3. Add little water, pulse it again.
    4. Pour it in a glass and serve.

    Watermelon rind salad is tasty, crunchy, packed with nutrients and easy to prepare.

    Summer calls for fruits, juices and salads. Watermelon is a summer fruit and ideal to eat as a snack. The red fruit is sweet and quenches the thirst with every bite. But, do you know that every part of the water melon is edible, seeds, rind and of course the fruit.

    The seeds can be eaten directly ( there’s no tree growing within the belly) though the best way is sprouted, shelled and dried. They are power house of nutrients.

    Water melon rind is the white part that is usually discarded. But, do you know that these peels have lot more nutrients and it’s time we find ways of using them. Moreover, the waste that is thrown is also reduced.

    It is rich in Vitamin B and  Vitamin C. Recent studies have also shown that it consists of citrulline, a compound linked to many benefits is stated by Journal of Chromatography in June 2005 issue. Although, some notes suggest that the green part too is edible, I have not tried it. I am using only the white part of the rind. You can easily scrape it with a sharp knife.

    The rind can be used in amazing ways. It is crunchy and resembles the cucumber in taste. I am making  good use of the rind these days, do keep a watch on this space for more ideas.

    Today, I have a salad recipe for you. The salad is easy to make and delicious, serve it as a snack or as an accompaniment with any meal.

    Ingredients:

    • 1 cup watermelon rind
    • 1 cup cucumber
    • 1 onion
    • 1/2 cup pomegranate arils
    • 1 tomato
    • salt
    • 1/2 teaspoon pepper powder
    • 1 teaspoon lemon juice.

    Method :

    • Cut the rind into small pieces.
    • Cut the cucumber into small pieces.  I have used the long variety of cucumber.
    • Chop the onion finely.
    • Use firm tomato for salads.
    • In a wide bowl, add the rind pieces, cucumber, onion, tomato, and pomegranate arils.
    • Add salt and pepper powder to it. Put lemon juice and mix it.
    • Watermelon Rind Salad is ready to serve.

    Here are a few other ways to use the rind. Shailendra Sharma innovatively used the rind  to make tuty fruity. Lata uses it to make a left over rind halwa.

    Avalakki Upkari / Hachida Avalakki is a popular snack from North Karnataka. Thin flakes of flattened rice is mixed with coconut, cucumber, onion, tomato, chilly powder to form a tasty snack. It is commonly made for breakfast or as a evening snack.

    This is a humble snack which has never withered with time. It’s been passed on through generations, the only change is the variety of dressing that we put over it. Onion was hardly used in the earlier days. Now, onion and sev mixture, are added to it along with other ingredients. It is ideal as a quick snack or on those days when you do not want to cook. It is also good for fasting menu sans onion.

    Children like avalakki upkari and most often, it is our Sunday breakfast. One can customise this snack as per their need. Grated carrot, finely cut capsicum may be added, onion can be avoided and the amount of coconut that goes into it is as per the liking of the indivdual.

    A variety of mixture or sev may be added to it. This is one of the snacks I relish anytime.

    Let’s get to the recipe of Avalakki Upkari /Hachida Avalakki

    • 4 cup thin poha
    • 2 teaspoon oil
    • 2 teaspoon ghee
    • 1.5 teaspoon chilly powder
    • salt to taste

    For garnishing: 

    • 1 onion
    • 2 tomato
    • 4 cucumber
    • 2 cup fresh coconut
    • green chilly
    • mixture or sev (optional)
    • 1 lemon

    Method:

    1. Take a wide bowl, add chilly powder and salt to it. Mix it. Add thin poha to it and mix it well. Now, this can be stored for a couple of days. Use as much quantity you need with vegetables.
    2. Take the required quantity of mixed poha, add grated coconut, onion and cucumber to it. Mix it well. Add any mixture that you have to it, this is optional. Put lime juice and tomato pieces, mix it and serve.

    Ingredients
      

    • 4 cup thin flattened rice
    • 2 teaspoon oil
    • 2 teaspoon ghee
    • 1.5 teaspoon chilly powder
    • salt
    To make avalakki upkari
    • 4 cucumber
    • 1 onion
    • 2 tomato
    • 2 cup fresh coconut
    • 1 lemon
    • coriander
    Other ingredients
    • sev or mixture for topping (optional)

    Method
     

    1. Take a wide bowl, add ghee and oil to it. Put salt and chilly powder, mix it well. Add rice flakes and mix them together. This mixed rice flakes can be kept for a week.
    2. Chop onion, tomato and cucumber finely.
    3. Take the required quantity of mixed rice flakes, add grated coconut, onion and cucumber. Put lime juice, mix it well. Finally, add tomato and sev (if using), mix and serve immediately.

    Notes

    • No water is added here. The water released from onion and cucumber helps to soften.
    • Roasted papad, sev or mixture may be added.
