    Spinach with potato/ Aloo Palak Sukhi Sabzi  is a semi-dry, vegan, gluten-free side dish from North Indian cuisine. It is tasty and ready in 30 minutes. It makes a good side dish with any kind of Indian flat bread as roti, chapati or phulka.

    Spinach and potato makes a good combination. One can make the delicious aloo palak  or gravy with koftas too in it. These days, I often cook spinach along with fenugreek as in Kafuli or Methi Chaman, love the tartness of fenugreek, it gives a good flavour to the dish.

Spinach is one of the green vegetable I frequently cook at home. It is not only an ideal food for a vegetarians  but we as a family like it, thus one can find many spinach recipes here.

    What goes in Aloo Palak Sukhi Sabzi ?

    • Potao : It is one of the star ingredients.
    • Spinach : We need fresh spinach to make the tasty accompaniment.
    • Oil : Any neutral oil will do.
    • Cumin
    • Red chilli
    • Green chilli
    • Coriander powder
    • Amchur powder
    • Garlic
    • Ginger
    • Salt

    Spinach with potato / Aloo Palak sukhi sabzi is a semi-dry, tasty side dish. It is ideal to serve for any meals or pack in the lunch box.
    Prep Time 10 minutes
    Cook Time 15 minutes
    Total Time 25 minutes
    Servings: 4 people
    Course: accompaniment, dry sabzi, Side Dish
    Cuisine: north indian

    Ingredients
      

    • 1 tablespoon oil
    • 1/2 teaspoon cumin
    • 2 red chilli
    • 2 green chilli
    • 4 garlic cloves cut into pieces
    • 1 inch ginger
    • 1 onion
    • 4 potato
    • 2 cluster spinach
    • 1 teaspoon coriander powder
    • 1/2 teaspoon dry mango powder
    • salt to taste

    Method
     

    1. Cut the onion finely.
    2. Remove the stalk of spinach, cut it and wash in salt water.
    3. Cut the potato into cubes, put them in water. Rinse it.
    4. Take oil in a pan, add cumin. As it splutters, break the red chilli into pieces and put it. Put green chilli, ginger and garlic. Saute for a minute, add the onions to it.
    5. As the onions turn light pink, throw the potato cubes to it. Add salt, sprinkle a little water, let it cook for sometime.
    6. Once the potatoes are soft, add the spinach leaves. Toss the vegetables.
    7. The spinach shrinks quickly, add coriander powder and chilli powder to it. Mix well, if needed, add a little more salt. Remember, we had already added salt in the beginning
    8. Spinach with potato is ready to serve.

    Kafuli is a popular and delectable side dish from Uttarakhand cuisine. A rustic make, it is absolutely tasty and pairs well with steamed rice, chapati or parathas.

    The cuisine of Uttarakhand is packed with nutrition, simple and makes use of local vegetables. It is mostly vegetarian. The two regions have different cuisine, thus they have Garhwali uisine and Kumaoni cuisine. They have a wide range of tasty dishes such as aloo tamatar ki jhol, kafuli, phaanu, baadi, chainsoo to name a few. I would love to try these delicacies sometime but for now, it is Kafuli and I am so happy that I made it.

    Well, I am back again with  Shhhh Secretly Cooking Group after two month break and this month, the state we are deriving inspiration  is the one and only Uttarakhand. My partner is Shobha Keshwani of Shoba’s Food Maaza. Her blog has many dishes from different cuisines. Do check it out. The two ingredients that she gave me were fenugreek leaves and salt. I had given urad dal and onion and Shobha madeUrad Dal Ke Pakode.

    Kafuli

    Kafuli recipe | Uttarakhand cuisine

    Ingredients:

    • 2 bunch spinach
    • 1 bunch fenugreek leaves
    • 3 green chilly
    • 2 tablespoon oil (preferably mustard oil)
    • 1 teaspoon cumin
    • a pinch of asafoetida
    • 2 inch ginger
    • 5 cloves garlic
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon coriander powder
    • 1/2 teaspoon chilly powder
    • 1 tablespoon curd
    • 1 teaspoon rice flour
    • salt to taste

    Method:

    1. Wash the green leaves and chop them.
    2. Boil spinach, fenugreek leaves and green chillies with  half a cup of water.
    3. Make a paste of ginger and garlic.
    4. Make a puree of boiled green leaves.
    5. Take oil in a pan, add cumin. As it splutters, put ginger-garlic paste to it and saute for sometime.
    6. Add the puree, turmeric powder, coriander powder, salt and water according to the consistency required.
    7. Let cook for sometime.
    8. Make a paste of rice flour in a little water and put it.
    9. Blend the curds and add it.
    10. Let simmer for sometime.
    11. Kafuli is ready, serve it phulka or chapati.

    Ingredients

    Palak tambli / South Canara recipes

    Palak Tambli is a popular dish from South Canara cuisine. It is regularly prepared in daily menu. It tastes good with hot steamed rice.

    Winter is my most loved season, pleasant climate, waking up to a nail biting cold day and have plenty of fresh vegetables and green vegetables. Spinach, fenugreek, cilantro, mint are all farm fresh and smell so good.

    Tambli is a dish from South Canara cuisine. It is yoghurt based  dip like with a green leaf, coconut and few other ingredients. Tambli can be made using different green leaf and vegetables as Spinach, Fenugreek, Ginger, Cucumber to name a few.

    Palak Tambli  is tasty and makes a good accompaniment with hot steamed rice. With fresh spinach available, do try this.

    Let’s get to the recipe of Palak Tambli.

    Ingredients:

    • 1 cup chopped spinach leaves
    • 2 tablespoon fresh coconut
    • 3 green chilli
    • 1 teaspoon cumin
    • 1/2 cup whisked curd
    • 1 teaspoon oil

    For the seasoning

    • 2 teaspoon oil
    • 1/2 teaspoon mustard seed
    • 1/8 teaspoon asafoetida
    • 1/8 teaspoon turmeric powder

    Palak Tambli

    Palak tambli is a tasty and nutritious side dish from South Canara region. 

    Ingredients
      

    • 1 cup chopped spinach leaves
    • 2 tablespoon fresh coconut
    • 3 green chilli
    • 1 teaspoon cumin
    • 1/2 cup whisked curd
    • 1 teaspoon oil
    For the seasoning
    • 1/2 teaspoon mustard seed
    • 1/8 teaspoon asafoetida
    • 1/8 teaspoon turmeric powder

    Method
     

    1. Clean the spinach leaves, discard the stalk. Cut the leaves. Wash them and put in a colander for sometime.
    2. Take a little oil, saute the green chilli, put them aside in a plate, roast cumin for few seconds. Put it aside along with green chilli. Now,saute the spinach leaves for two minutes.
    3. Once it cools, grind them along with coconut.
    4. Remove in a bowl. Add salt to it. Whisk the curd and put it.
    5. Make seasoning. Take oil in a pan, add mustard seeeds, as it splutters, add turmeric powder and asafoetida and pour it over the tambli.
    6. Spinach tambli is ready to serve.

    Notes

    • Use fresh curds. Do not add water to it.
    • Adjust the green chilly as per your taste.

    3. Grind them along with coconut.
    4. Whisk the curd and put it. Add salt and mix.
    5. Make seasoning. Take oil in a pan, add mustard seeds, as they splutter, put turmeric powder and asafoetida, pour it over the tambli.
    6. Palak tambli is ready to serve.
