    Tasty Dosa in minutes/ iD Organic Dosa Batter

    Today’s post is slightly different from the usual one. What do you do on a busy and hectic day? You have a long list of pending errands, meeting with client, go to market to buy vegetables and then visit the dentist, later go to school for the meeting. I prefer to bring a ready to cook food at home and make something that is not only tasty but also healthy for the family.

    iD Fresh Food is a leader in breakfast foods in South India. It was started in 2005 by five brothers in a small kitchen in Bangalore. They have a wide range of natural and organic products which one can easily make at home without any compromise in taste and quality. The variety of products that they have to their belt are Dosa and Idly batter, Vada batter, rawa idly mix, wheat and oats dosa, a range of parathas and a coffee decoction.

    I loved the Organic iD Dosa and Idly batter which is made of pure, organic ingredients. The batter serves a dual purpose, one can either make idly or dosa with it. Plan ahead what you want to make, if it is dosa, you need to add a little quantity of water. Soft, fluffy idly with coconut chutney and piping hot sambar, sound so delicious isn’t it ? It can be made easily with this packet of batter, no hassle of prior soaking and grinding the lentils, it is ready within an hour, just make the side dishes and the breakfast is sorted

    The iD dosa batter is perfect blend of ingredients, I did add a little salt though. I spread a scoopful of batter, put a little oil, smeared a little red chutney after a while and voila, it was beautiful golden brown hued, crispy, the way I often make it at home. I served it with potato sbbji and coconut chutney.

    It is such a blessing to get these kind of semi-made food that are chemical free, farm fresh and most of all similar to homemade. I could make 13 dosas from one packet, quite sufficient for a family of four for breakfast. The packet comes in a pouch of 1Kilogram and costs Rs80. It is available online at Bigbasket

    Regarding the storage since it is a wet ingredient, it needs to be kept refrigerated. Do not freeze it.

    How to make Dosa with iD Dosa batter:

    Equipments: bowl, ladle, non stick skillet, flipper spatula, small bowl, spoon, plate

    Ingredients:

    • 1 kg iD idly/ dosa batter
    • a little salt
    • water
    • oil /ghee

    Method:

    1. Keep the batter pouch outside, it should be at the room temperature while cooking.
    2. Cut the pouch and remove the batter in a bowl. Add a little salt and water. Make it to the consistency of the usual dosa batter.
    3. Heat the skillet, take a ladleful of batter and put it on the skillet. Spread it inside out to a thin crepe.
    4. Drizzle oil around it and cook it on medium to high for a minute.
    5. Once it golden brown in colour, remove and serve with chutney.

    Serving suggestions:

    • Put a dollop of butter, it tastes heavenly.
    • Spread red onion chutney over thin crepes.
    • You can serve with potato bhaji and coconut chutney.
    • Even uttappa can be made, mix it with finely cut onion and tomato pieces and make small circular dosas.
    • On a lazy day, serve with podi.

    I have received the sample of honey and it is really good. I substituted the sugar in my tea with honey. Honey can be used in many things. It can be used in salads. It can be used as a energy drink in the mornings. A glass of lime juice with honey helps to reduce weight. It can be used in sweets. It can be used as topping to enhance the taste.


    Here is an easy to make Healthy Bite  using honey.

    Ingredients:

    • 1 cup oats
    • 1 tablespoon pistachois
    • 1 tablespoon flax seeds
    • 1 table peanut butter
    • 1 tablespoon  UTMT honey

    Method:

    Blend oats, pistachois and flax seeds together. Put it in a bowl. Add peanut butter and honey to it. Mix all of them together. Make balls and keep them in the refrigerator for half an hour. Healthy bites are ready to eat.

    Take a tip: You can substitute flax seeds with cantaloupe seeds, which is easily available.

    Ingredients
      

    • 1 cup oats

    I love this month, the climate is pleasant and as the year comes to an end, it’s time for some celebrations and parties. Winter calls for hot soups and crispy fries. Continuing with my Mexican Cuisine, today I present to you  Spicy Chipotle Chili Corn Soup. It’s delicious and guilt free. Believe me, I tried to do with less cream and it tastes equally good.

    I have used SPRIG chipotle adobado sauce. It is awesome in taste, with an earthy and smoky feel ! One can in use it in a wide range of dishes.  You can find this chipotle adobado sauce here

    Spicy Chipotle Chili Corn Soup

    Spicy Chipotle Chili Corn Soup

    Ingredients :

    • 1 onion
    • 1 tbsp olive oil
    • 1 1/2 cup corn kernels
    • 3 cloves garlic
    • 1 tsp Sprig Chipotle Adobado Sauce
    • 1/2 tsp chilli flakes
    • 1/4 tsp pepper powder
    • 1 red bell pepper
    • 2 tbsp fresh cream
    • 4 cups stock
    • salt to taste

    Method:

    1. Roast the pepper and keep it aside to cool.
    2. When it is cool, blend it with cream and keep aside.
    3. Take olive oil in a pan. Add onions and saute for 3 to 4 minutes
    4. Add garlic, chilli flakes and chipotle adobado sauce to it.Now, add the corn kernels to it. Saute for two minutes.
    5. Add pepper powder, salt  and stock . Let boil. Put the bell pepper to it  and give a stir.
    6. Remove from fire and let cool.
    7. Blend to a puree.
    8. Pass the puree through a sieve.
    9. Put the filtrate in a pan and boil.
    10. Delicious soup is ready to serve.

    A delicious and flavourful soup, apt for the season with a hint of of chilli flakes and adobado sauce.
    Prep Time 10 minutes
    Cook Time 20 minutes
    Total Time 30 minutes
    Servings: 4 people
    Course: Soup
    Cuisine: Mexican
    Calories: 150

    Ingredients
      

    • 1 onion cut into pieces
    • 1 tbsp olive oil
    • 3 cloves garlic chopped
    • 1/2 tsp chilli flakes
    • 1 tsp sprig chipotle adobado sauce
    • 1 1/2 cup sweet corn kernels
    • 1/2 tsp pepper powder
    • salt to taste
    • 4 cup stock
    • 1 red bell pepper
    • 1 tbsp fresh cream

    Method
     

    1. Roast the bell pepper and allow it to cool
    2. Blend it to a sauce along with cream and keep it aside.
    3. Take olive oil in a pan. Add onions and saute it for two to three minutes.
    4. Add the garlic pieces, chilli flaes, chipotle adobado sauce to it. Now, add the corn kernels, saute it and allow to cook for two minutes.
    5. Put pepper powder, salt and stock to it. Let it boil for sometime. Add the bell pepper sauce to it, give a stir and turn off the gas.
    6. Allow to cool.
    7. Blend it to a puree.
    8. Pass it through a sieve.
    9. Put the filtrate in a pan and boil.
    10. Delicious soup is ready to serve.

    Notes

    • More cream ( one more cup)  can be added to it. I have avoided using excess fat.
    • If the red bell pepper is not available, use the green one.
    • I have used frozen corn, hence, they cook quickly.
