    Fresh Lemon Juice | Indian Sherbet Recipe

    Fresh Lemon Juice is an all-time favourite Indian drink. It is ideal as a summer quencher, party appetiser or just anytime.  It comes under the category of popular Indian Sherbet Recipes.

    As the saying goes, when you have limes, make a lemonade, then why the delay?

    Fresh Lemon Juice is called as Nimbehannina Panka in Kannada. It is often made during Ram Navmi as an offering to the Lord along with butter milk. It is also a part of the Haldi kum kum tradition in South India. Ladies are usually served fresh lemon juice along with a lentil salad.

    The making of fresh lime or lemon juice needs no introduction. You must be wondering why a post should even be written about it? Yeah, it is that simple one which anyone can make. But here are a few ingredients which enhances the taste of it. Addition of a few strands of saffron lends a divine taste to it. A dash of cardamom powder gives a good aroma and taste to the drink. Do not forget to add a pinch of salt.

    What is an Indian Sherbet?

    Sherbet originated from the Arabic word sharbah which means  a drink and Shariba refers to drink. Indian Sherbet is a traditional drink made with fruits, herbs or even flower petals. It is usually chilled. It is served at festive occasions and family gatherings. It is a popular summer drink in South India.

    Can we add jaggery instead of sugar ?

    Yes, you may add powdered jaggery but the taste differs. It is another version of sherbet. Make sure the jaggery is pure.

    Do we need saffron to make sherbet ?

    Saffron lends a good aroma to the drink. You can skip it and instead add a few fresh mint leaves.

    What are the variations we can make to this popular drink ?

    You can add sabja seeds. You can also add soaked chia seeds.

    Can I make it ahead and keep it in the refrigerator?

    Yes, you can make it ahead and keep it in the refrigerator to chill. Make sure you consume within two days.

    Fresh Lemon Juice

    Fresh Lemon Juice is a traditional Indian beverage made with lemon, sugar and water.

    Ingredients
      

    • 4 glass cold water
    • 3 tbsp sugar
    • a few saffron strands
    • dash salt
    • 2 lemon

    Method
     

    1. Take water in a pan.
      Add sugar and saffron strands to it. Mix it well.
    2. Add lemon juice, salt and cardamom powder. MIx and serve in glasses.
    3. This is the basic fresh lemon juice recipe, you may add a few mint leaves. Soaked chia seeds can also be added.

    Sabudana Papad is a popular summer treat from South India. It is made in large quantities and stored in air tight containers for further use. It is ideal to serve as an accompaniment with any meal. 

    Summer is the time we indulge in many activities as making papad and pickles. Papad and fryums should be sundried as they are stored throughout the year. The scorching heat makes them crisp and ready to eat in two or three days. The different kind of sundried recipes are rice fryums, poha papad, pumpkin sandige {aralu sandige} and majjige mensinakai (chillies in buttermilk).

    Today, I am sharing the recipe of Sabudana Sandige or Sago Papad as it is commonly called.

    Sabudana Papad, sabakki sandige, sabudani sandige are the different names associated with it. It is made from tapioca pearls. The sago or sabudana is commonly used during fasting in many parts of India. To make sabudna papad, we use the large ones. It is soaked and cooked with some spices and later dried in the sun. It is quite easy to make as the making does not involve much labour. One needs to keep an eye while boiling it, lest it gets burnt. 

    The sabudana sandige can be made as simple as you wish. You may add only salt and asafoetida. Otherwise with a little cumin tastes good, I love the taste of cumin along with some chillies put in it. The other options are addition of pepper powder, chilli powder, or garlic. I do not add any of these. 

    The method I follow requires one day. I soak sago pearls in the afternoon. By evening, it is bloomed. I cook it at night and keep it it closed in a warm place. Next day, early in the morning, I adjust the consistency and put them on the terrace. Later, by evening, they are semi-dried. I remove them and keep them in wide plates which help me to keep easily in the sun on the following days. I need to sun dry them for a couple more days as they are stored all year long.

     

    Let us get to the recipe of Sabudana Papad.

    Ingredients: 

    • ½ kilogram white sabudana ( large )
    • 4 + 8 + 8 cups water
    • 1 teaspoon cumin
    • 6 green chilly
    • 1 tablespoon curd
    • ½ teaspoon asafoetida

    Method : 

    Making of sabudana papad includes 6 steps :

    1. Soaking of sago 
    2. Boiling of the mixture
    3. Making of papad
    4. Drying of papad
    5. Storing of papad
    6. Frying 

    Let us discuss each step now.

    1. First, clean the sago pearls and wash them once. Soak it in four cups of water for five hours.
    2. Now, in a thick bottom pan, add the soaked sabudana along with eight cups of water. Put it to boil. Add cumin and asafoetida to it. Keep stirring. 
    3. It becomes a gelatinous like substance, transparent in colour. The sago pearls are soft and well cooked. Turn off the stove. You can put it after an hour. But I prefer to put it on the next day.
    4. Grind green chilly to a paste.
    5. Put it into the boiled mixture along with a spoon of curd.
    6. Use clean plastic sheets to make papad.
    7. Smear some oil on the sheet. With a wide spoon, take a spoonful and pout it on the sheet, spread a little with the back of the spoon. 
    8. Repeat by putting them in a row. Continue to the next row and so on. 
    9. Allow it to dry in the sun. 
    10. By evening, only one side is dried. We need to put them carefully on a plate and dry the other side the following day.
    11. Once they are dry on both sides, you need to keep them in the sunlight for a few days.
    12. Later, store them in a clean, dry container.
    13. To fry, heat oil in a pan. Take a few sun dried sago papad and slowly fry them. 

    Take a tip : 

    • Collect all materials before you start doing the work. You need sheets which are dry and clean. Also, not to forget the bricks or tiles to hold them as you lay them in the sun. Food cooked at home takes care of all these things, isn’t it ? 
    • Adjust the consistency if it is too thick by adding some water to it.
    • Green chilly may be avoided. You can do plain ones only with cumin.

    • 1 thick bottom pan with lid
    • 6 large plates
    • 1 ladle
    • 1 tablespoon

    • clean plastic sheets
    • bricks or something similar as weights

    Method
     

    1. First, clean the sago pearls and wash them once. Soak it in four cups of water for five hours.

    Grapes Shot is a refreshing summer drink with Indian twist. Here is the recipe to make it easily at home. 

    Summer brings the juiciest of  fruits, grapes is one of them. The grapes we found this year were extremely sweet and refreshing. 

    One such summer drink we often enjoy is the grapes shot. It is refreshing and ideal to serve as a mid-day drink. 

    What is a shot ?

    Shot  or shooter is a small size of mixed drink usually consumed in one go. It is made of different kinds with alcoholic and non-alcoholic drinks. 

    Nutrients in  grapes :

     Grapes are  rich in nutrients and anti-oxidants. They are  a good source of Vitamin B6, Vitamin C, Copper, Vitamin K and fiber. It is ideal in weight management. It also helps in preventing constipation. It may protect diabetes and help in controlling blood sugar. 

    Chemical infected : 

    I have read many times the grapes should be washed well before consuming. They have the highest pesticide sprayed on them. Wash them in warm water with salt. Keep it aside for sometime, rub them well, clear the water a couple of times and then use them. 

    Storing of grapes :

    Grapes can be stored for a week in the refrigerator. Make sure you pat them dry on a soft cloth before putting them in. 

     

    Fruits v/s Fruit juices: 

    It is always good to eat whole fruits rather juice. They are filling and provide more nutrients to the body. Ultimately, it is seasonal fruits which should be consumed often and in larger quantities than juices.

    Grapes Shot Recipe 

    Ingredients :

    • 2 cup green grapes
    • 1/4 teaspoon black salt
    • 1/4 teaspoon pepper powder
    • a few ice cubes

    Method:

    • Wash and pat dry the grapes.
    • In a blender, put the grapes and a few ice cubes, give a blitz.
    • Now, add black salt and pepper powder to it. Blend it once more and pour in the glass.
    • Grapes shot is ready to serve.

    How to serve : 

    Shots is usually served in small glasses. Rub the rim with lemon juice and dip in a little salt. It gives a good look and a nice taste to it. 

    Take a tip :

    • Black grapes can also be used.
    • Sugar may be added, it depends on the sweetness of the fruit. I have not added here. 
    • Do not add water, shots is generally thick in consistency.

    Mango Mousse is a delectable, easy to make dessert. It is my go to dessert during summer when we need a quick and easy dessert.

    Well, that’s a kind of feeling I have when the mango season starts. What else can I make with mangoes? 

    For the past two years, mangoes are not much. A few years back, I remember we had a good number of fruits.
    I have shared many mango recipes earlier. They are Mango kesariamba bhat,  Desserts with a international touch are  mango pannacotta, chocolate streaked mango ice cream 
    The ambua, mumbazha pulissery are some of the regional dishes you can prepare.

    • a healthy version
    • needs only three ingredients 
    • easy to make
    • eggless mango mousse for those who prefer it
    • can be made ahead and kept in the refrigerator. 

       

       

      Mango Mousse Recipe 

    Ingredients:

    • 2 cups mango puree
    • 1 cup cream 
    • 2 tablespoon honey

      Method:

    • Take the puree and blend it.
    • Add honey to it.
    • Fold the cream into the mango puree.
    • Put it into glass bowls and allow it to set in the refrigerator.
    • Mango mousse is ready to serve.

      Take a tip:
    • Choose good quality mangoes. 
    • Castor sugar may be used instead of honey.
    • Use any whipping cream

    Aloo Mangodi ki Sabzi is a popular Rajasthani dish. It is ideal to pair with steamed rice or chapati. It is a semi-dry side dish made using dried nuggets and potato. 

    What is Mangodi ?


    Mangodi is a dried lentil nugget used in dry lands of Rajasthan. It is usually made of moong or urad dal. The people of Rajasthan make these and store them at home. They use them regularly in cooking sabzis and other dishes. They make a good replacement when vegetables are not easily available during summer.

    The lentil is soaked for a couple of hours, it is then made into a paste, seasoned with some spices and it is spread on a sheet in the sun for a couple of days. They are stored and used as and when required.

    The first time I had mangodi ki sabzi was  at a Rajasthani city like entertainment place made here. Later, it was during my Jaipur trip I found it commonly in the thali meals.  A few months back, while shopping online, I found these ready made mangodis  and bought a packet of them to try at home.

    How to use Mangodi ?

    Mangodi can be used in stir fry, curries and pulaos. It is ideal to use in curries along with other vegetables. Here, mangodi is fried in oil to a golden colour. Later, it is cooked along with the potato pieces. They may be crushed and added. As the one I have are small in size, I just added them.

    What goes in the Aloo Mangodi Sabzi ?

    • Potato : It is one of the the essentials in making the sabzi.
    • Mangodi : Mangodi is available in the super market. It is ideal to store a packet ot it as it is useful when we do not have any vegetables
    • Onion
    • Oil : Any neutral oil is ideal.
    • Ginger garlic paste : It can be made in a small quantity using the small jar.
    • Cumin 
    • Chilli powder: If the chilli powder is too spicy, be mindful while using it.
    • Coriander powder: You can use a good quality one from the market. Store it in a tight container.
    • Salt 

    Can I make mangodi at home?

    Yes, you can make it during the summer time. It is a regular affair in Rajasthan to make it during summer.  Moong dal is soaked overnight. It is then made into a paste with very little water. To the batter, salt is added and well beaten for sometime. It is then put as small droplets on a tray and dried in the sun for two or three days. It is then stored and used as required.

    Aloo Mangodi ki Sabji

    Aloo Mangodi ki sabzi is a popular side dish from Rajasthani cuisine.

    Ingredients
      

    • 4 potatoes
    • 2 onions
    • 1/2 cup mangodi
    • 2 tablespoon oil
    • 1/2 teaspoon cumin
    • 1/2 teaspoon ginger garlic paste
    • 1 teaspoon chilli powder
    • 1.5 teaspoon coriander powder
    • salt to taste

    Method
     

    1. Wash, peel the skin and cut the potato into cubes.
    2. Cut onions and keep them aside.
    3. Make a paste of ginger and garlic.
    4. Take oil in a pan, add mangodi and shallow fry them Once they are golden in colour, remove and put them aside.
    5. Now, add cumin, as it splutters put onion to it. Saute for a few seconds. Put the ginger garlic paste to it and continue to saute for sometime.
    6. Add potato pieces and fried mangodi pieces to it. Let cook for sometime. You may add salt at this stage.
    7. Once the potato pieces are cooked, add chillo powder and coriander powder to it.
    8. Finally, garnish with coriander leaves .
    9. Aloo Mangodi Sabji is ready to serve.

    Custard Pudding is a layered, easy to make dessert. It is a good treat during hot summer months. One can customise to their preference by adding different kind of fruits and nuts in it. 

    Custard pudding is one of the desserts I often make.  This dessert  is easy to prepare and  tailor-made to one’s taste and needs. Since it is the season of mangoes, I have used mango pieces today. One can add pomegranate arils and banana pieces too. Adding of chocolate ganache gives a good and rich taste to it.

    A few pointers to make custard : 

    1. Use good quality  custard powder. I prefer using Brown and Polson.
    2. Make sure no lumps are formed. 
    3. Custard can be made either of thin or thick consistency. Here, we need one of moderately thick consistency.
    4. Do not use hot custard in layering.

    Ingredients for Custard Pudding: 

          For the first layer: 

    • 15 digestive biscuits
    • 2 tablespoon cocoa powder
    • 2 teaspoon ghee

      For the second Layer: 

    • 1/2 litre milk
    • 1/4 cup sugar
    • 1 tablespoon custard powder
    • a little water or milk for mixing

    For the third layer: 

    • mango pieces
    • nuts
    • berries

    Method : 

    1. At first, let us prepare the custard. Take milk in a thick bottom pan. Take custard powder in a small bowl and mix it with a small quantity of  water or milk. Keep it aside. Once it boils, add sugar and give a stir. Now, add the slurry to it. Keep stirring as you add it. As it boils, it thickens. Put it aside to cool.
    2. Chop the mango and dry fruits.
    3. Take the digestive biscuits and powder it. I have used Marie biscuit, find it ideal for many desserts. You can either put the biscuits in a zip-lock bag and press it with a rolling pin. One can also pulse them in the jar.
    4. Mix the crushed powder with ghee and cocoa powder. 

    To Assemble:

    1. Take small glasses or a small jar. Put the biscuit crumble below and press it with the back of a spoon. 
    2. Put three tablespoon of the cooled custard to it.  Set it for sometime in the freezer. 
    3. Top it with mango pieces, dry fruits and berries.
    4. Chill and serve. 

    Take a tip: 

    1. Different kind of fruits can be added.
    2. A spoon of soaked chia seed tastes good to it.
    3. You may top it with cornflakes.
    4. Instead of fruits, you can top it with chocolate ganache.

    Mixed Fruit Popsicle is a delightful summer snack. It is easy to make with natural ingredients and has no added sugar in it. 

    Summer and frozen treats such as ice cream, popsicles and sorbet go hand in hand. It is one of the essentials of scorching heat as the body needs something cool.

    Popsicles are the easiest and best treats one can make at home. They are water or milk based frozen snack on a stick. It is called by different names in different parts of the world as ice pops, freezer pop, paleta, icy pole, ice candy, ice block or ice drop. Different flavours are available in super markets. One can easily make at home It is the best treat you will be giving yourself by sparing a few minutes. You are in control of the ingredients that goes into it. Seasonal fruits are the ideal choice. Sugar may be avoided and more over you can play around different flavours according to the likes of your children. 

    Different kind of popsicles :

    The different kind of popsicles are fruit based, juice, yoghurt or milk based. One kind makes use of coconut milk also. 

    Today, I am presenting a mixed fruit popsicle. It is a fun  recipe ready in few minutes, the only wait is the freezing time.

    Why should you prepare this one? 

    • seasonal fruits are used
    • no artificial colours or flavours
    • no added sugar
    • easy to prepare
    • kids will like it

    What goes into this popsicle ? 

    • Watermelon: It is truly a summer fruit, one can eat loads of it.
    • Mango: It is the king of fruits and the season is here right now. This is the only time we can enjoy these luscious fruit.
    • Apple: One cannot deny the many benefits of apple. It gives a good texture to the candy.
    • Chia seed: Much has been said about, I used it in small quantity.
    • Water: I have used a small quantity of water. 

    You may add :

    • Honey : If you need more sweetness. Sugar can also be used. 
    • Lime juice : I have not used it.

    Let’s get to the recipe of Mixed Fruit Popsicle:

    Ingredients: 

    • 1 Mango
    • 1/2 apple
    • 1 cup of watermelon chunks
    • 1 teaspoon chia seed
    • 1/2 cup water

    Method: 

    1. Soak the chia seed in water for sometime.
    2. Cut the mango and apple into small pieces.
    3. Remove the seeds from the watermelon. 
    4. Blend them into a puree with little water. Add watermelon chunks and give a pulse.
    5. Remove the puree in a glass.
    6. Pour it into the molds. Add some chia seeds to it and put the stick over them.
    7. Freeze them for six hours or overnight. 
    8. To unmold, hold them under running water for ten seconds, it comes out easily. 

    Take a tip:

    • I did not use any sweetener as the fruits were naturally sweet.
    • You can add honey or sugar while grinding. 
    • Use ripe fruits to make popsicles. 

     

    About the  event: 

    Frozen Treats is the theme for the month of April in Shhhh Secretly Cooking Challenge. Theme was suggested by Pavani of Pavanis Kitchen. I liked her Oreo Ice cream prepared for the current theme,  a surely loved one by children. Here, we are paired  and the partners exchange secret ingredients. The recipe is prepared accordingly and later the ingredients are guessed in the group by other members.My partner for this month is Sasmita. She has prepared a lovely sorbet with the cumin and amchur   that I gave. I was given apple and chia seed. prepared this fruit popsicle.

    Mixed Fruit Popsicle is a tasty summer treat. It is made with real fruits, makes a good choice to serve.
    Prep Time 10 minutes
    Freezing time 6 hours
    Total Time 6 hours 10 minutes
    Course: Dessert
    Cuisine: Indian

    Ingredients
      

    • 1 Mango

    Watermelon rind salad is tasty, crunchy, packed with nutrients and easy to prepare.

    Summer calls for fruits, juices and salads. Watermelon is a summer fruit and ideal to eat as a snack. The red fruit is sweet and quenches the thirst with every bite. But, do you know that every part of the water melon is edible, seeds, rind and of course the fruit.

    The seeds can be eaten directly ( there’s no tree growing within the belly) though the best way is sprouted, shelled and dried. They are power house of nutrients.

    Water melon rind is the white part that is usually discarded. But, do you know that these peels have lot more nutrients and it’s time we find ways of using them. Moreover, the waste that is thrown is also reduced.

    It is rich in Vitamin B and  Vitamin C. Recent studies have also shown that it consists of citrulline, a compound linked to many benefits is stated by Journal of Chromatography in June 2005 issue. Although, some notes suggest that the green part too is edible, I have not tried it. I am using only the white part of the rind. You can easily scrape it with a sharp knife.

    The rind can be used in amazing ways. It is crunchy and resembles the cucumber in taste. I am making  good use of the rind these days, do keep a watch on this space for more ideas.

    Today, I have a salad recipe for you. The salad is easy to make and delicious, serve it as a snack or as an accompaniment with any meal.

     

    Watermelon Rind Salad                            watermelon rind salad

    Ingredients:

    • 1 cup watermelon rind
    • 1 cup cucumber
    • 1 onion
    • 1/2 cup pomegranate arils
    • 1 tomato
    • salt
    • 1/2 teaspoon pepper powder
    • 1 teaspoon lemon juice.

    Method :

    • Cut the rind into small pieces.
    • Cut the cucumber into small pieces.  I have used the long variety of cucumber.
    • Chop the onion finely.
    • Use firm tomato for salads.
    • In a wide bowl, add the rind pieces, cucumber, onion, tomato, and pomegranate arils.
    • Add salt and pepper powder to it. Put lemon juice and mix it.
    • Watermelon Rind Salad is ready to serve.

    Here are a few other ways to use the rind. Shailendra Sharma innovatively used the rind  to make tuty fruity. Lata uses it to make a left over rind halwa.

    Watermelon juice is an excellent thirst quencher. It is tasty and keeps us rejuvenated during hot summer days.

    Watermelon is 90% water, it also contains Vitamin A, D and calcium. It helps to keep the body hydrated. It is low in calories and rich in fibre, thus aids in weight loss. It is shown to fight against cancer. It is good for the heart. It is ideal summer fruit as it quenches the thirst and keeps the hunger pangs at bay.

    It is always good to pack the refrigerator with summer fruits. You can use them to make candies, juices, ice creams, sorbets or just serve as a fruit salad. It is healthier than the sugar loaded drinks.

    I often make mango candy during these monts, it is loved by kids and adults alike. Extract the pulp, blend it to a puree, put it in the moulds and freeze it, voila ! A guilt free dessert is ready in just a few minutes, isn’t it?

    Watermelon juice is a refreshing drink, serve it during the mid-day or in the evenings, it is always a winner. It is tasty and makes an ideal drink to keep oneself hydrated. It is nutrient rich and a low calorie summer drink which we can regularly indulge.

    Watermelon Juice Recipe

    Ingredients: measurement used : 1 cup =250 ml

    • 2 cup watermelon chunks
    • 1/4 teaspoon pepper powder
    • 1 teaspoon lemon juice
    • salt to taste
    • sugar if needed

    Method:

    Cut the watermelon into chunks, remove the seeds and blend them in a blender. Add pepper powder, lemon juice and salt, give a swirl. Pour in glasses and serve.

    Take a tip:

    • Cut the watermelon into pieces and keep them in refrigerator ahead of time. It saves the time and you will have a chilled drink. Otherwise, you need to chill it.
    • Add sugar if only needed.
    • You may top  with small chunks of the fruit.
    • A few torn mint leaves too taste good.

    Mango is the cherished fruit, it is the one fruit that the world loves the most. We dread summer but wait eagerly for the mango season, isn’t it?

    Some facts about mango:

    • It is the highest consumed fruit in a single day across the world.
