    Sauted Green Apple is tasty and a quick one to make. You can eat it just like that or serve it over a dessert.

    Green apples are yet another kind of apples that we love binging on. The Granny Smith variety are the usual ones that we find here.They are crisp and tart , ideal to be used in cooking. These sauted green apples are just too good, beleive me !

    Green apples are highly nutritious. They are rich in anti oxidants and help lower blood sugar. They  steady the heart beat and are an excellent source of potassium.

    Green apples are ideal to be used in salads. They can be cooked and used with oats or a topping. Here is another kind, Sauteed Green Apple, do give a try, you can eat it anytime, either for breakfast or lunch. Put it over a pancake or a bowl of oats with a few nuts.  This dish is healthy eating, vegetarian,  paleo and gluten free.

    Sweet and spice,all things fine, this is a perfect combo for a lunch or dinner.
    Ingredients
    • Green apples 2
    • butter 1tbsp
    • demerera sugar 2tbsp
    • cinnamon powder 1/4tsp
    Instructions
    1. Wash and cut the apples into slices.
    2. Put butter in the pan and melt it. Add the apple slices and toss them.
    3. Allow to cook for a few minutes until they are tender.
    4. Add the demerera sugar and cinnamon powder. Give a stir. After a minute or two, remove from flame.
    Notes
    You can use it for pancake or top it with vanilla ice cream.

    4. Add the demerara sugar and cinnamon powder. Give a stir. After a minute or two, remove from flame.

    Dates Burfi is a delectable fudge ideal for all occasions. Be it a get-together or a family function, this sweet is ideal and loved by all. Moreover, a guilt-free treat for all the sweet lovers.

    I am extremely happy and its one of those cherished moments , my blog www.evergreendishes.com has turned two today. A journey I embarked after much thought, the hit of the button  and the message read “Congrats  for choosing us !” from the hosting service, was a shock for a moment, if I could ever do such a thing and soon things paved way. Well , since then the journey has been a wonderful experience. I am thankful  to one and all for the support. And as a token of appreciation  and celebration I bring to you the decadent Dates Burfi.

    Dates are a good source of dietary fibre, antioxidants and essential minerals as potassium and manganese. The American Diabetic Society suggests that eating food rich in anti oxidants may help prevent cancer, diabetes ,heart disease and even Alzeihmer’s. Further,  another study states that fibre rich diet is found to help reduce obesity, stroke, heart disease and hypertension.

    The addition of nuts gives taste  along with the benefits of proteins and minerals. Dates Burfi  are one of the major attractions that we  see in the sweets stall. They are called by different names as Dates Roll or dry fruit burfi. Sugar is not needed here in the preparation, thus it can be easily consumed by all. Thus it can be given to all but moderation is the key.

    A sweet for all  for any occassion. Dates Burfi or Dry fruit burfi is tasty and ideal for any celebrations.

    Ingredients for Dates Burfi:

    250 grams Dates dry
    50 grams Cashew
    25 grams almonds
    25 grams Pistachios
    1 tablespoon ghee
    2 tablespoon khus khus

     

    Method to  make Dates Burfi:

    Cut the dates in small pieces. I have used seedless dates.
    Chop the dry fruits into small pieces.
    Dry roast them separately till crisp on low flame.
    Dry roast the poppy seeds on low flame until it is crunchy.
    Grind the dates in a grinder.
    Heat a pan and add ghee to it. Put the ground paste to it. Saute it for a few minutes. Then add the roasted dry fruits and mix well. Remove from fire and keep aside for a while.
    Grease your hands and roll it into cylindrical shape.
    Roll it in the roasted poppy seeds and keep in the refrigerator for two hours.
    Cut into small circular burfis.

    Take a tip:

    You can use walnuts too. Adjust the amount of nuts to your liking.[br]Chilling time is not included here.

    Dates Burfi is a delicious and healthy treat to make for Diwali. It is made using dates and other dry fruits.
    Servings: 20 pieces

    Ingredients
      

    • 250 grams dates
    • 50 grams cashewnuts
    • 25 grams almonds
    • 25 grams pistachios
    • 1 tablespoon ghee (clarified butter)
    • 2 tablespoon khus khus (poppy seeds)

    Method
     

    1. Cut the dates into small pieces. I have used seedless ones.
    2. Cut the dry fruits into small pieces and keep each of them seperately.
    3. Blend the dates to a puree.
    4. Roast each dry fruit separately until crisp.
    5. Dry roast the poppy seeds until they are crunchy.
    6. Take oil in a pan and put the dates pulp. Saute it for sometime.
    7. Then, add the roasted dry fruits, heat for a few seconds and remove it.
    8. Make cylindrical shaped fudges and roll them the roasted poppy seed.
    9. Keep it in the refrigerator for half an hour.
    10. Cut into round discs.

    It’s the season of strawberries, the bright red berry fruits are luscious and delightful. One cannot resist these berries, and we find many ways to use them. Here is one such easy to make dessert, strawberry mousse.

    Strawbery is not only gorgeous to see, the serine red with bright green hood is just irreseistible.  The ripe ones are great to eat, these berries are also  packed with many benefits. They  boost immunity and rich in  anti oxidants. They help fight bad cholestrol. They help regulate blood pressure and fights cancer. They help in maintaining the weight of the body.

    A delicious blend of strawberry with cream.
    Ingredients
    • Strawberry 10
    • Fresh cream 200ml
    • Sugar 1tbsp
    • Agar agar 1tsp
    • water 2tbsp
    Instructions
    1. Wash the strawberry and pat dry.
    2. Cut them into halves.
    3. Make powder ofagar agar and put it in hot water, stir and keep aside.
    4. Blend the berry and sugar.
    5. Add cream and whisk again. Do not whip for a long time.
    6. Finally, add the mixture, give a stir, pour it in small bowls and allow to set for two hours. Agar agar sets at room temperature, keep it in the refrigerator later.
    7. Serve chilled
    Notes
    Agar agar is used in the recipe as I have tried to make it vegetarian. You can use gelatin instead and immediately keep it to set in refrigerator.

    Healthy kidney bean salad

    Kidney bean salad is a tasty, healthy and easy to make snack. It is packed with nutrition and ideal protein supplement for vegetarians. 

    Kidney bean aka rajma is a wonderful source of nutrition. It is one of the essentials in North India.They are widely used in gravy based dishes. But today, I have an interesting recipe here, Kidney bean salad, easy to make and healthy too.

    The kidney beans are dark red coloured and shaped like kidney. They are rich in molybdneun, folate,fiber, potassium, manganese, phosphorous, protein and vitamin B.

    They help prevent cholestrol. They provide fat free protein. They help in reducing the level of blood sugar, thus it is highly recommended for these patients. Being heart friendly, these also , give  folate to the body.  Like all legumes, it is rich in both kinds of fiber.It is considered to help in improving memory.

    Salads of legumes are packed with nutrition. They should be used more often in our daily diet. The first time I came across this kidney bean salad was  in the  book by cooking magnet, Tarla Dalal, loved the idea of making a salad of these. But the recipe here, is slightly different from the original and mine.

    A healthy salad to brunch on.
    Ingredients
    • Kidney beans cooked 1cup, 100grams
    • onion 1 chopped finely
    • tomato 2 chopped finely
    • cilantro

     

    For the dressing :

    • olive oil 1tsp
    • salt to taste
    • chilli powder 1/4tsp
    • pepper powder 1/2tsp
    • chat masala 1/4tsp
    • lime juice 1tsp
    Instructions
    1. Take a wide bowl and add the boiled kidney beans. Add the onion and tomatoes.
    2. Mix the ingredients “for The dressing” in a bowl.
    3. Pour it over the veggies and chill in refrigerator.
    4. Serve with a garnishing of cilantro.
    Notes
    To cook the kidney beans, soak them overnight in water. Next day, discard the water, wash and put fresh water to it. Put in the pressure cooker and cook for at least eight whistles. Allow the pressure to release by itself.The kidney beans should be tender when touched with fingers.Otherwise, cook them again.

    Healthy Kidney Bean Salad

    Kidney bean salad makes a good snack to binge on. It should be consumed regularly by vegetarians. 
    Prep Time 10 minutes
    Course: healthy snacks, Salad
    Cuisine: international

    Ingredients
      

    • 1 cup kidney beans cooked
    • 1 onion finely chopped
    • 2 tomato finely chopped
    • cilantro
    For the dressing:
    • 1 teaspoon olive oil
    • 1/4 teaspoon chilli powder
    • 1/2 teaspoon pepper powder
    • 1/4 teaspoon chat masala
    • 1 teaspoon lime juice
    • salt to taste

    Method
     

    1. Take a wide bowl. Add the boiled kidney beans. Put the onion and tomato pieces to it.
    2. Mix the ingredients, “For the dressing” in a bowl.
    3. Pour it over the beans, chill and serve.

    Notes

    Soak the kidney bean in water for eight hours. Drain the water, wash under running water and cook in the pressure cooker for a couple of whistles. They should be soft to eat. Do not remove until the pressure is released by itself.

  • Brown rice with beet and sprouts

    My advent with brown rice landed me to this recipe. The first time I made it I was sceptical and knew it was a disaster, but alas ! it was awesome and since then have made it couple of times. Brown rice with beet and sprouts, tasty one pot meal , serve it with any yoghurt based salad.

    To make sprouts : Soak the green moong for eight hours. Drain them into a colander. After some time, tie them in a thin muslin cloth and keep it in a warm place overnight.

    Sprouts are packed with nutrition. You can use them in various ways. Toss them into a salad to make a tasty snack or make a stir fry.

    • Brown rice 150 grams
    • Beet root 1
    • Moong sprouts 1 cup

    • Ginger garlic paste 1tsp
    • Garam masala powder ½ tsp
    • Chilly powder 1tsp
    • Salt to taste
    • Oil 1tbsp
    • Water 500 ml
    Instructions
    1. Soak the brown rice in water for an hour.
    2. Peel the beet and make a paste of it.
    3. Take oil in a pressure cooker and add the onions. Saute for sometime. Add ginger garlic paste and continue to saute. Add the beet paste and saute. Throw in the sprouts and mix well. Drain the water and add the rice, stir for some time. Add the garam masala powder and chilly powder to it. Gently mix, add three cups of water and salt to it. Give a stir, close the lid and pressure cook to one whistle. Serve hot with cucumber and onion salad.

    Sweet Potato Kheer is a tasty sweet dish from South Canara cuisine.

    Since the beginning of the new year, I have been on a sweet spree here ! My third sweet dish in a row Sweet potato kheer! I recently made this kheer and it was too good, so I decided to share with you all.  Sweet potato is again another healthy food . It is rich source of Vitamin A. It also contains Vitamin B, Vitamin C along with other minerals as calcium, magnesium, iron and phosphorous.

    Some facts of sweet potato :

    Sweet potato is neither a potato nor a yam . It is totally different from both of these.

    Sweet potato is a dicotyledon plant and belongs to the family of Convolvulaceae.

    It is regarded as one of the worlds healthiest food.

    Steaming is the best way to consume this veggie, though it can be boiled or roasted.

    It grows well in the tropical region, thus it is found in abundance in Africa, Asia and America.

    Udupi cuisine is part of the Karnataka cuisine. Udupi is a small district  with a religious background. Thus, this cuisine was formed primarily by the Asthamathas of Udupi.  It is a satvic food which makes use of rice, greens and pulses.Coconut is one of the essential ingredients of their cooking. Vegetables as pumpkin, bitter gourd, cucumber, jackfruit  and plantain are primarily used.

    Now, their cuisine consists of sambar made with fresh spices and coconut, rasam, chutney,gojju, variety of  payasams, pickles, and tasty stir fry. It is worthy to mention here that masala dosa is from this place. A wide variety of dosas and idlis are made for breakfast.

    Sweet potato kheer

    A tmelt in the mouth, sweet dish made with sweet potato in coconut milk and jaggery.
    Ingredients
    • Sweet potato 250grams
    • jaggery 150 grams
    • ghee 2tsp
    • coconut 1/2 200gms
    • cardamom powder 1/4 tsp
    • cashewnuts
    Instructions
    1. Steam the sweet potatoe in pressure cooker.
    2. Peel the skin and mash it.
    3. Put the grated coconut in hot water for fifteen minutes
    4. Grind it to a fine paste. Pass it through a sieve. This is the coconut milk.
    5. Repeat the procedure once again. Keep it aside.
    6. Take ghee in a pan, roast the cashews slightly. Take care not to burn them.Remove the cashews and set aside.
    7. Add the sweet potato and saute it for two minutes in the same pan.
    8. Add the coconut milk and jaggery and stir. Once it boils, remove from flame and keep aside.
    9. Finally,add cardamom powder and garnish with dry fruits.
