    No Bake Swiss Roll

    No bake Swiss Roll is a tasty and easy to make snack. It has the goodness of chocolate and coconut in it.

    The variety of biscuits that we get in market are so many, the simple ones are rarely asked by kids. They love to snack on cream filled ones or the heart shaped sugary one is the favourite. But, I love to give these biscuits a makeover. I have created some in the past and when the theme was decided as Recipes with Biscuits, I was excited.

    After thinking for sometime, I finally settled down to No Bake Swiss Rolls,  I had read this in a magazine a few days back. The making process is quite simple but needs some time to set, biscuits are powdered and mixed with some syrup and butter to a dough. The filling is of desiccated coconut and sugar which gave a nice flavour. It is then rolled and allowed to set in refrigerator.

    You can serve it as a sweet or dessert for get-together or children’s party.

    Let me take you to the recipe without much delay.

    No Bake Swiss Roll Recipe

     

    Ingredients:

    • 140 grams Parle G biscuits
    • 1 teaspoon instant coffee powder
    • 1 tablespoon chocolate syrup
    • 2 teaspoon milk
    • 2 tablespoon butter
    • 1 cup desiccated coconut
    • 1/2 cup castor sugar
    • 1/4 teaspoon cardamom powder

    Method:

    1. Grind the biscuits to a powder.
    2. Add coffee powder, chocolate syrup and half the butter to it. Mix it well. If needed use little milk to make a dough. Keep it aside.
    3. Mix the coconut, castor sugar, butter and cardamom powder together.
    4. Grease a parchment paper with a little butter.
    5. Take a ball of the dough, put it on the parchment paper and roll it.
    6. Put the coconut filling over it, spread it evenly.
    7. Now, slowly holding the parchment paper at one end, roll it into a cylindrical roll, put it in the parchment paper and refrigerate it for four to five hours.
    8. Later, remove the parchment paper and cut into discs.

    If cooking needs to be fun, you need to do something different. These swiss roll are easy to make and loved by children.
    Servings: 8 pieces
    Course: evening snacks
    Cuisine: international

    Ingredients

    Salted Cashew nut in microwave/ Masala Kaju

    Salted cashew nuts / Masala Kaju as we Indians commonly name it, make a great appetiser. It is ideal to binge during mid-day or serve as a snack to guests with tea. These are made in microwave and are ready in fifteen minutes.

    Microwave oven is ideal to toss the nuts, they are evenly made, lesser  time is  needed,  little oil is used.  Most of all I find it a good experience in using it. 

    Recently, I tried making stuffed tomato and it came out good. Other microwave recipes that I have on blog is Stuffed Capsicum 

    Let’s get making Salted Cashew nuts in Microwave / Masala Kaju

    Ingredients:

    •  1 cup cashew nut                      (Measurement : 1 cup = 250 ml)
    • 1 teaspoon ghee
    • 1/2 teaspoon chilli powder
    • 1/4 teaspoon chaat masala
    • salt to taste

    Method:

    • Take a microwave safe bowl, a flat bowl is preferred as it helps in even heating. Put the cashew nuts in it and microwave on medium power for 5 minutes. Check and if it needs to be roasted, reduce the temperature and keep again for 3 minutes. Initially, I kept at 600 power and then at 300 power. 
    • Once, they are golden in colour, remove in a plate, add ghee and put the roasted cashew, microwave for 30 seconds, add salt, chilli powder and chaat masala, mix and again microwave for 30 seconds. Salted Cashew nuts aka Masala Kaju is ready to serve ! 

    Different options :

    • use only salt
    • use salt and pepper
    • use salt, cumin powder, chilly powder and chaat masala 

    To make Salted Cashew nuts / Masala Kaju in Pan:

    Ingredients:

    • 1 cup cashew nuts
    • 3 tablespoon ghee
    • 1 teaspoon chilly powder
    • 1/2 teaspoon chaat masala
    • a few curry leaves
    • a pinch of asafoetida
    • salt to taste

    Method: 

    • Take ghee in a pan, fry the curry leaves until crisp and put them aside.
    • In the same ghee, roast the cashew nuts until golden in colour. Put them in a plate.
    • In a bowl, mix the roasted cashew along with curry leaves and all spice powders.

    Salted cashew nut make a good snack to binge in the evenings. They are roasted in the microwave and can be made quickly.
    Prep Time 5 minutes
    Cook Time 15 minutes
    Total Time 20 minutes
    Servings: 4 people
    Course: Appetizer, dry snack
    Cuisine: Indian

    Ingredients
      

    • 1 cup cashew nut
    • 1 teaspoon ghee (clarified butter)
    • 1/2 teaspoon chilly powder
    • 1/4 teaspoon chaat masala
    • salt to taste

    Method
     

    1. Take a flat microwave safe bowl, put the cashew nuts in it. Spread them evenly and microwave on medium power for five minutes. Check, toss, reduce the temperature and microwave for three more minutes. I put them at 600 power for five minutes, checking every minute and again put at 300 power for 3 minutes. 
    2. Once they are golden in colour, remove in a plate, add ghee, put the cashew nuts and switch on the power for 30 seconds. Sprinkle salt, chilly powder and chaat masala, mix and heat it for 30 seconds again.

    Notes

    • Use microwave safe glass bowls for cooking.
    • Time may vary for each model, check when they are done, you get a good aroma and they are golden in colour.

    Palak Sev | Spinach Crispies | Namkeen Snack for Diwali

    Palak Sev is a crunchy and flavoursome dry snack usually prepared during Diwali. It makes a good snack to serve along with other sweets.

    Diwali is round the corner and so much of enthusiasm all around. It’s the festival we look forward to celebrate and enjoy. Many sweets and snacks are prepared and children are happy enjoying the vacation.

    Today, I bring to you Palak Sev or Spinach Crispies. It’s crunchy and flavoursome, makes a good snack with tea.

    Let’s get to the recipe without much ado

    Ingredients:    Measurement: 1 cup =200 ml

    • 1 cluster spinach
    • 1cup  gram flour
    • 2 teaspoon rice flour
    • salt
    • 2 teaspoon hot oil
    • 5 green chilly
    • 1 inch ginger
    • 1 teaspoon cumin
    • water
    • oil for frying

    Method:

    1. Remove the stalk of spinach leaves.
    2. Cut and blanch it.
    3. When cool, grind it to a paste with chilly, ginger and cumin.  Do not add water.
    4. Remove the paste in a bowl.
    5. Add salt to it. Mix. Heat oil in a pan.
    6. Put rice flour and gram flour to it. Add two tea spoon of hot oil to it. Mix and knead to a dough. Use only as much gram flour as required.
    7. Take a sev maker, smear some oil to it. Take some dough and make it to a cylindrical shape. Put it inside, close and once the oil is hot, press it directly in the oil. Ensure the oil is on low flame while pressing the sev.
    8. Fry on medium high, use a long handled perforated ladle to toss and remove it.
    9. Remove on a tissue paper. Repeat with the rest of the dough.
    10. Once cool, put in a container and keep it.

    Take a tip: Green chilly used were not spicy, hence used 5.

    Ingredients
      

    • 1 cluster spinach

    Peanut Ladoo/Shenga Undi

    Peanut ladoo are ideal snacks to store in the jar, serve it in the box or as a healthy snack in the morning. It is usually prepared during Krishna Janmasthami.

    The month of August brings a series of festivals, Krishna Janmasthami is next week, a day we celebrate by preparing various snacks and savoury. The day marks the birth of Lord Krishna and is celebrated with great enthusiasm.

    Earlier I have posted many snack recipes, one of them is  Krishna Janmasthami Collection

    Coming to the nutritional and health factors related to peanut, they are rich in energy and contain health benefit nutrients, minerals, antioxidants and vitamins that are essential for good health. They compose of mono unsaturated fatty acids, which help lower bad cholestrol and increase the good cholesterol. They are a good source of protein, contain good amount of amino acid that is needed for growth and development. Jaggery is a good source of iron.

    Peanut ladoo is an easy snack to make, it hardly requires fifteen minutes to make these.

    Peanut Ladoo

    Ingredients:
    • 1 cup peanut
    • 1 cup jaggery grated
    • 1/4 teaspoon cardamom powder
    Method:
    1. Dry roast the peanuts on a  medium flame. Keep roasting until the skin crackles and they are golden in colour.
    2. Let cool. On cooling the peanuts turn crunchy.
    3. Remove the skin by rubbing with palm.
    4. Put it in a mixer jar and give a swirl.
    5. Add jaggery and cardamom powder to it and grind it again. It should be well moulded.
    6. Remove it in a bowl.
    7. Make balls of it. Peanut ladoos are ready.
    8. After sometime, store them in an air tight container. They stay well for 8-10 days.
    Take a tip:
    • Use good quality jaggery, as you are not melting it here.
    • A spoon of ghee may be added while making the balls, I have not added.
    • Removing of skins is optional, many prepare with the skin.
    • If you want less sweet, reduce the amount of jaggery.

    Prep Time 10 minutes
    Cook Time 5 minutes
    Total Time 15 minutes
    Servings: 10 ladoos
    Course: festive treats, healthy snacks, kids favourite, sweets
    Cuisine: karnataka, south india

    Ingredients
      

    • 1 cup peanut
    • 1 cup jaggery grated
    • 1/4 teaspoon cardamom powder

    Method
     

    1. Roast the peanuts on a medium flame. Keep stirring them, it should be well done, they should be crisp in the mouth. 
    2. Let cool.
    3. Peel the skin of the peanut. Put them in a wide plate and rub with the palm. 
    4. Grind the peanuts in the mixer by giving a swirl one or two times only.
    5. Add the jaggery and cardamom powder to it. Again grind it, it should form a mass. 
    6. Remove in a bowl, shape them into ladoos and store them in an airtight container. 

    Notes

    • Use good quality jaggery as you are using it directly without heating.
    • Roast the peanuts properly on a low or medium flame. 
    • One teaspoon of ghee may be added for flavour, I have not added.
    • Removing of skin is optional.

    Til Chikki Recipe / Sesame Chikki Recipe

    Sesame Chikki is a crispy, tasty sweet bites made during Makar Sankranti.

    Makar Sankranti is round the corner. It is one of the important festivals celebrated in our country. It follows the Solar cycle and is dedicated to the Sun God. All edibles related to sesame or til are prominent during this season. Til chikki, til laddoo, til pancakes and sankranti ellu are the major sweets along with pongal prepared in all households.

    It is amazing  how the beliefs told in our shastras are similar to the scientific evidences. Sesame keeps the body warm and also gives energy, thus it is consumed during this festival. This is practised since so many years, isn’t it?

    Makar Sankranti falls on January 14, the festival is celebrated for three days. It is a harvest festival. Colourful rangolis are put in front of the house and ladies give bhogi( a kind of charity) of all new produce as sugarcane and vegetables. Here in South India, they prepare Bajra roti with a wide spread of delicacies along with pongal. The food is simply delicious. On the final day, it is Makar sankranti, Ellu and sweet pongal are the usual preparations.

    What goes into it?

    Sesame seed is the main ingredient here. I have used the white sesame seed. You may add a few nuts if you want.

     Til Chikki Recipe/ Sesame Chikki Recipe

    Ingredients:

    • 3/4 cup sesame (white)
    • 1/2 cup jaggery (grated)
    • 1 1/2 teaspoon ghee
    • a pinch of cardamom (optional)

    Method:

    1. Take a pan and dry roast the sesame on a slow flame for five minutes. It should turn light brown in colour and give a nice aroma. Put it aside.
    2. Grease the back of a plate and keep it aside. You can also do on the platform.
    3. In the same pan, add ghee. When it melts, add jaggery, mix it and keep stirring it on medium heat for three minutes.
    4. Add the roasted sesame to it, mix it well and pour it over the greased plate.
    5. Spread it evenly to 200mm wide.
    6. Cut it into small squares and allow to cool.
    7. Later, remove it and store in a jar.

    Method
     

    1. Dry roast the sesame seeds on a low flame for five minutes. It should be light brown in colour and give a good aroma. Put it to cool.
    2. Grease the back of a plate and keep it ready. 
    3. In the same pan, add ghee. When the ghee melts, add jaggery, mix it and allow it to melt. Keep stirring for three minutes.
    4. Put the roasted sesame seeds to it, mix it well and pour it over the the greased plate. Spread it with the the back of the ladle.
    5. Cut into small squares and allow to cool.
    6. Later, store it in an air tight container.

    Notes

    • Jaggery should be finely chopped.
    • Cardamon powder is optional.

    Mocha Coffee Cookies are exquisite and melt in the mouth cookies. Serve it as a snack or with milk in the mornings.  Recently, I was selected for the Belly Nirvana Campaign by Plattershare in association with Place of Origin Indian Tastes Delivered. I received a Leo Breakfast Blend Coffee Powder and Mocha Chocolate drink powder.

    Leo Breakfast Blend Coffee Powder is in  60: 40 ratio, i.e it is 60% coffee powder and 40% chicory. The aroma is exhilarating and the strength of the coffee is strong. It is made with the finest beans of coffee. The chicory unlocks the flavour giving it a rich flavour.  We liked the coffee and I highly recommend it.

    The Mocha chocolate powder can be used for various purposes. It is ideal to use it in milk. I made a milk shake for my hubby and daughter and they did like it.  It was tasty and flavoursome. Mocha Chocolate powder can be used in baking cakes and cookies. The Mocha powder is unique and has freshness in its taste. I shall definitely order the same brand again.

    Mocha flavour blends well with coffee and makes  a good and unique recipe. The coffee and chocolate medley is simply aweome and I am loving it.  I will be making a few more in the next few days.

    I made  coffee cookies using these two products and it was awesome. The cookies were soft and melt in the mouth.

    Mocha Coffee Cookies Recipe

    Ingredients:     (Measurement used: 1 cup =200 grams)

    • 1 cup all purpose flour
    • 1/4 cup almond flour
    • 1/8 teaspoon baking soda
    • 1/4 teaspoon baking powder
    • 2 teaspoon leo breakfast blend coffee powder
    • 2 teaspoon mocha chocolate powder
    • 1/3 cup butter
    • 1/2 cup brown sugar
    • a little ghee for greasing

    Method:

    1. Sieve all purpose flour, almond flour, baking powder and baking soda together .
    2. The butter should be at room temperature. Mix butter and sugar till it is soft.
    3. Mix coffee powder and mocha powder to it.
    4. Now, mix the flour slowly into the mocha coffee mix.
    5. Do not knead it hard.
    6. Keep it aside for ten minutes.
    7. Grease the plate with a little ghee.
    8. Take a small lemon sized ball, flatten it and place it on the tray. Keep them at an inch apart.
    9. Pre- heat the oven at 200 degree celsius.
    10. Bake it for ten minutes at 200 degree celsius.
    11. Let them  cool on rack.
    12. Repeat for the rest of the dough.
    13. Store in an airtight container.

    Mocha Coffee Cookies

    Mocha Coffee Cookies made with finest ingredients does taste good. It is tasty and melt in the mouth.
    Prep Time 20 minutes
    Cook Time 20 minutes
    Total Time 40 minutes
    Servings: 12 cookies
    Course: Snack
    Cuisine: international

    Ingredients
      

    • 1 cup all purpose flour 1 cup =200 ml used in recipe
    • 1/4 cup almond flour
    • 1/4 teaspoon baking soda
    • 1/8 teaspoon baking powder
    • 1/2 cup brown sugar
    • 1/3 cup butter
    • 2 teaspoon leo coffee powder
    • 2 teaspoon mocha hot chocolate powder

    Method
     

    1. The butter should be at room temperature while using.
    2. Sieve the flour along with baking soda and baking powder.
    3. Mix butter and brown sugar together. Beat it well. Add mocha hot chocolate powder and coffee powder to it. Mix it .
    4. Now, mix the flour into the mocha coffee mixture. Do not knead it hard. Keep it aside for ten minutes.
    5. Pre-heat oven at 200 degree centigrade.
    6. Grease a tray. Take small lemon sized balls, flatten and arrange on the tray at a distance.
    7. Bake for ten to twelve at 200 degree centigrade.
    8. Once it done, let cool on the rack.
    9. Keep it in an airtight container.

    How to make chiwda at home

    Chiwda is one of the snacks stored in the kitchen shelves. It is primarily made during Diwali, when a variety of snacks are prepared. Here is my version of Chiwda recipe. It is a tasty, guilt free snack.

    Plain chiwda is usually made by frying flattened rice or poha. It is then mixed with spices and other condiments. But, here we are lucky enough to get the ready, roasted version of it. Thus, a guilt free snack is ready in no time.

    Update : Plain chiwda is available in all outlets as half kilogram and one kilogram packets.

    Snacks in the jar as avalakki, chiwda and  murmura are always seen in the kitchen shelves. Along with it comes other snacks as chakli, nippattu and kodbole which are loved by all but not made often.

    Chiwda makes a good snack with tea. It is ideal to serve with breakfast as an accompaniment. An easy to make, quick snack is more than welcome here. Check out the recipe.

    Can we store chiwda ?

    Yes, chiwda can be stored for a long time. Keep it in a clean, air-tight container.

    Is it a festive snack ?

    Yes, it is mostly made during Diwali.

    What goes in the chiwda ?

    • Chiwda : It is the star ingredient. You can use the store bought chiwda or fry the rice flakes in oil  and use them. Using the store bought is easier and healthier. Just clean it once and use it.
    • Oil : Use good quality oil.
    • Sesame seed : Use the white sesame seed.
    • Cumin : A dash of cumin elevates the taste.
    • Turmeric powder : A dash of turmeric in the seasoning gives a good colour. It also has anti-bacterial properties.
    • Dry coconut : Cut them into thin and small pieces.
    • Curry leaves : Cooking seems to be incomplete without the humble curry leaves.
    • Red chillies : Throw in one or two in the seasoning.
    • Asafoetida: Sprinkle a little bit of asafoetida for that nice aroma.
    • Dry fruits: Cashew pieces and raisins are usually dded. You may add almond pieces too.
    • Ground nut and dalia: For that crunchy taste in between.
    • Chilli powder : To give a spicy taste to the dish.

    How to make chiwda

    Chiwda is a delectable snack to binge on. It is usually made during festivals as Diwali and Holi. 
    Prep Time 10 minutes
    Cook Time 19 minutes
    Total Time 29 minutes
    Course: Snack
    Cuisine: Indian

    Ingredients
      

    • 1/2 kilogram plain chiwda
    • 1/2 cup ground nuts
    • 1/2 cup split dahlia
    • 8 cashewnuts
    • 15 raisins
    • 1/4 teaspoon mustard seeds
    • 1/2 teaspoon cumin
    • 1 teaspoon sesame
    • 1 teaspoon chilly powder
    • 1/2 teaspoon sugar
    • salt to taste
    • curry leaves
    • oil for frying and roasting

    Method
     

    1. Take oil in a pan. Deep fry the groundnuts. Remove them and keep aside.
    2. Similarly, fry the split dahlia, cashew nuts, raisins and curry leaves seperately.
    3. Take two tablespoon of that oil and make the seasoning. Add mustard seeds, as it splutters, put cumin and sesame. Add asafoetida and turmeric. A few seconds later, add chilly powder, salt and sugar.
    4. Mix well. Put the fried ingredients into it. Add the plain chiwda and mix well.
    5. Heat it for a few minutes. Tasty chiwda is ready to binge.

    Notes

    To make chiwda, take flattened rice (poha or aval) and deep fry in oil. Do not make it brown in colour.

    Ring Murukku snacks in the jar

    Ring murukku is another kind of dry snacks. It is from the state of Andhra Pradesh. They are soft but crispy, different from the usual kodbole that we make.

    Other snack recipes;

    Kodbole Instant Chakli Poha Chiwda

    Ingredients:

    • 1 cup rice flour
    • 1 tablespoon moong dal
    • 1 cup water
    • salt to taste
    • 1 teaspoon chilli powder
    • asafoetida
    • oil for frying

    Method:

    1. Wash and soak moong dal for half an hour.
    2. Heat one cup of water. Drain the soaked dal and put it in water along with salt.
    3. Once the water, put the rice flour, keep stirring continuously.
    4. When the consistency becomes thick, turn off the gas. Let cool.
    5. Add chilli powder and asafoetida to it. Knead it to a dough.
    6. Take a small ball of the dough and roll into the shape of a ring.
    7. Repeat for a few more balls.
    8. Heat oil in a frying pan.
    9. Once it is hot, put a few murukku (six to seven ) in the oil.
    10. Deep fry on medium flame until golden in colour.
    11. Repeat for the rest of the dough.
    12. Ring Murukku are ready to serve.

    Prep Time 10 minutes
    Cook Time 20 minutes
    Total Time 30 minutes
    Servings: 6 people
    Course: festive treats, kids favourite, Snack, snack in the jar
    Cuisine: Andhra pradesh, Indian

    Ingredients
      

    • 1 cup rice flour
    • 1 tablespoon moong dal
    • 1 cup water
    • salt to taste
    • 1 teaspoon chilli powder
    • asafoetida
    • oil for frying

    Method
     

    1. Wash and soak moong dal in water for thirty minutes.
    2. Heat one cup water. Drain the water from the soaked moong. Put it in water along with salt.
    3. Once it boils, add rice flour and stir continuously, it should come to a thick consistency.
    4. Let cool. Add chilli powder and asafoetida to it and knead well.
    5. Take a small ball of the dough and roll into a ring shape. 
    6. Make a few more rings.
    7. Heat oil in a pan.
    8. Once it is hot, put a few rings (about six or seven) and deep fry on medium flame until golden in  colour.
    9. Remove them on an absorbent paper. 
    10. Repeat for the rest of the dough. Ring murukku are ready to serve.

    Notes

    Make them more circular in shape like a small ring. Mine are not exactly like a ring, could not make them again for the photograph.
