    Mint Ginger Cooler Recipe | Summer Treats

    Mint ginger cooler makes a refreshing drink for summer. It is ideal to serve as a welcome drink or a mocktail   to beat the heat.

    Summer is at it’s peak, one needs to keep hydrated by taking lot of fluids. Drinks that you can make easily are watermelon juice, coconut cumber cooler and lemon iced tea . Today, I am sharing a favourite recipe of mine, Mint Ginger Cooler

    What goes in the drink?

    Lemons are rich source of Vitamin C. They help to keep the body hydrated . They also aid in weight loss. They reduce the risk of anaemia, kidney stone, heart disease and cancer.

    Mint: It is a great appetizer and aids in digestion, nausea and headache. It also helps to fight depression.

    Ginger:  It aids in absorption of essential nutrients. It helps to maintain normal blood circulation.

    Sugar : It is one of the essentials in a juice. Otherwise, you need to replace with sweeteners.

    Lemon: It is rich source of Vitamin C, helps to boost energy.

    Water : It is the main ingredient that you need to mix all others into it.

    Mint Ginger Cooler

    Mint Ginger Cooler is a  refreshing drink to serve anytime.

    Ingredients:

    • For the concentrate :
    • sugar 3/4 cup
    • water 3 glasses
    • ginger 1 inch
    • mint leaves 15-20
    • lemon 1 big
    • black salt 1/4 tsp

    Instructions:

    1. Wash the mint leaves and tap dry on a cloth. Wash the ginger and scrub it well. Grind both of them together.
    2. Take a bowl, add water and mix in the sugar. Put the mint ginger paste, black salt and the lime juice and give a stir. Keep it in the refrigerator for atleast two hours. The flavours of mint infuse with time.
    3. Later, strain it using a thin metal sieve or strainer.
    4. Mint ginger cooler is ready to serve.

    Mint Ginger Cooler can also be called as Mint Ginger Lemonade.

    Mint Ginger Cooler

    A refreshing drink anytime
    Prep Time 10 minutes
    Course: appetisers, cool drinks, juices
    Cuisine: Indian

    Ingredients
      

    • 3/4 glass sugar 3/4 cup
    • 3 glass water
    • 1 inch ginger
    • 15-20 leaves mint leaves
    • 1 big lemon
    • 1/4 tsp black salt

    Method

    Khakhra is a crispy savoury snack from Gujarati cuisine. Methi Khakhra is tasty and aromatic.

    I love Gujarati food. The snacks that they make are varied and yummy. Khakhra, fafda, dhokla and kachori are some of their popular ones. Khakhra are made of various kinds. They can be used as a snack or for breakfast.They can be stored for a long time and ideal to carry during travelling.

    The affair with khakhra started long back at home. Children loved these when they were young and I always had a stack of these in my pantry. Methi ,Jeera, Masala, Garlic, so many varieties were available in the bakery.

    As we planned to make Gujarati dishes, I thought of trying my hand at Khakhra.  Yes, they did turn out good and glad that I ventured into this one. Presenting to you all Gujarati’s popular snack Methi Khakhra today.

    Methi Khakhra

    Crispy and spicy, these snacks can be binged anytime.

    Ingredients

    • Wheat flour 1cup
    • gram flour 1tsp
    • kasuri methi 2tsp
    • chilli powder 1/2 tsp
    • amchur powder 1/2 tsp
    • turmeric powder 1/4tsp
    • asafoetida 1/4tsp
    • salt to taste
    • oil 1 tsp +extra
    • water for kneading

    Instructions

    To make the dough:

    • Take a bowl and add the wheat flour.
    • Add all the dry ingredients. Mix well.
    • Put one teaspoon of oil and mix in the flour.
    • Add little water and knead to a firm dough.
    • Keep it aside for ten minutes.

    To make the khakhras:

    • Take a small ball of the dough and roll it into a thin circle.
    • Heat a skillet.
    • Put the rolled disc on the skillet, leave it for a few seconds, until the air pockets are visible, then flip it over.
    • Apply some oil and press it on the edges with a potato masher. let cook on a low flame.
    • Flip over and drizzle some oil. Dark spots should be visible and it should turn out crisp.
    • Remove and keep aside

     

    Notes
    You can do various varieties here. Palak Khakhra, garlic Khakhra, Coriander Khakhra, Jeera Khakhra and Punjabi Khakhra are the popular ones.

    Put the dry ingredients in a bowl and mix them thoroughly. Wheat flour, gram flour, amchur powder, kasuri methi, chilli powder, turmeric powder and asafoetida

    Add a teaspoon of oil and mix it. Put little water and knead to a dough.

    Dough is ready. The dough should be firm. Keep it aside for ten minutes.

    Make small balls of the dough.

    Take a ball and roll it into a thin circle. Khakras should be made as thin as possible.

    Heat a skillet, put it on it, when air pockets are seen, flip it over, and then drizzle some oil and press with a potato masher

    Press the edges and flip it once or twice. They need to be crisp, not soft.

    Instant Raw Mango Pickle is a simple yet tasty accompaniment. With raw mangoes available, I often make it.

    The best thing about summer is the availability of seasonal fruits as mangoes, watermelon and grapes. I love these fruits, especially mango. It’s also the time when I try my new recipes with these. Here is another version of mango pickle. This instant raw mango pickle is popular in South India. It is not only tasty but can be made quickly with a few ingredients. Use it with curds rice for that gratifying sense of satisfaction.

    Among all the pickles, mango pickle is most popular. Instant variety are a hit as they can be prepared easily  and stored in refrigerator for a couple of days.

    Instant raw mango pickle

    Recipe Type: Pickles

    An easy to make pickle served at all functions in South India

    Ingredients

    • 2 Raw mango
    • 1 teaspoon chilly powder
    • 1/4 teaspoon turmeric powder
    • 1 teaspoon pickle mix
    • 1 teaspoon salt  (adjust accordingly)
    • 1 tablespoon oil
    • 1/4 teaspoon mustard seeds
    • 1/4 teaspoon asafoetida

    Instructions

    1. wash and cut the mango into small pieces.
    2. Add salt, turmeric powder, chilli powder and pickle mix.
    3. Make seasoning by heating oil. Add mustard seeds, as it crackles add asafoetida.
    4. Pour it over the pickle and mix.
    5. Instant raw mango pickle is ready to serve.

    Notes

    Adjust salt and chilly powder according to the taste. Consume within two or three days.

    Raw mango, wash and wipe it dry.

    Raw mango is cut into small pieces. It should be firm and sour to make pickles.

    The pickle mix powder can be made and kept in a small air tight bottle. Dry roast two table spoons of mustard seeds and one table spoon of methi seeds seperately. When cool, grind them to a powder and store .

    Pickles add taste and zing to the food that we eat. These are loved and consumed by all. Pickles are usually made during summer and stored in earthen jars to consume for the whole year. Thus, as Wikipedia says, pickling is a process of preserving or expanding the life span of food by either anaerobic fermentation in brine or immersion in vinegar.
