    Banana Rasayana | Balehannina Sihkarni | No Cook Recipe | 15 minute recipe

    Banana Rasayana or Balehannina Shikarani is a traditional recipe. It  is a simple yet tasty recipe which can be recreated in ten minutes. It involves no cooking.

    Rasayana can be had as a dessert after meals or one can use it as an accompaniment with chapathi. During our childhood days, I remember banana rasayana was made so regularly. Fasting days and a bowl of rasayana was kept ready to serve. Excess of banana and it was soon made into a shikarni.

    This post is one of the reminiscences of our childhood days.. It was ideal for any day, just cut a few bananas and put them in milk. Growing up in a joint family during my childhood days, cooking was an elaborate affair. If some unexpected guest came home and an extra dish on the platter would be banana rasayana. Too many banana after a festive day and it would turn into a delicious rasayana. I think all of us can relate to such incidents.

    The making of rasayana

    The simplest step is to use those fruits which are a day old. Cut them into small pieces and put it in a bowl of milk. Add sugar, cardamom powder and grated coconut to it. Serve it with chpathi or as a dessert.

    Why should you make this ?

    • It is easy to prepare. Here, no cooking is involved. Just cut a few bananas, mix a few ingredients in milk and voila, it is ready.
    • It is ideal to offer to the Lord on festive days.
    • It is ideal for fasting days. 
    • Rasayana is a good way to finish off the extra banana lying in the kitchen platform.
    • Bananas are  a good source of nutrition, ideal to make it as part of  our diet.
    • It is a quick fix sweet dish anytime.

     

      

     

    Take a tip:

    • Cut the banana into small pieces.
    • Bananas should  not be over ripe.
    • Honey may be added.
    • You may add cashews and raisins.

    Banana Rasayana is a simple, no cook, tasty dish. It is ideal to serve with chapathi or as a dessert.

    Ingredients
      

    • 2 bananas
    • ½ cup milk
    • 2 teaspoon sugar
    • 2 teaspoon fresh grated coconut
    • A pinch of cardamom powder

    Equipment

    • 1 knife
    • 1 wide bowl
    • 2 spoons
    • 1 serving bowl

    Method
     

    1. Cut the banana into pieces. Add milk. Put sugar, grated coconut and cardamom powder. Mix and serve.

    Quinoa Kheer is a tasty, varied kind, naturally healthy kheer. It is a delicious twist to the usual kheer made with rice or vermicelli.The quinoa consumers are steadily increasing in number. It is one of the preferred choice of food for many people.

    Quinoa is versatile to use. Today, I am sharing a kheer recipe with it. It is nutty, tastes good and ideal to prepare for the festive days.

    A simple and easy recipe which you can make for any occasion. With quinoa gaining popularity,  I wanted to give a try to the favourite Indian sweet payasam with quinoa. Wash the quinoa to remove the saponins and soak it in water for two hours. You can use any variety of quinoa.  In the meantime, boil the milk in a thick bottom pan. Put the saffron strands, it gives a good aroma and color to the kheer. Take the soaked quinoa, put half a cup of water and cook in a pressure cooker for one whistle.

    Grind the dry fruits to a powder. Add the cooked quinoa to the milk along with the dry fruit powder. As it thickens, add sugar and cook for two minutes. Remove and keep aside. Garnish with cardamom powder.

    If you want to add dry fruit pieces, boil the milk until it is reduced to half. Then, roast the dry fruit pieces in ghee and put it in the prepared payasam. You can serve it warm or chilled.

    Quinoa Kheer is a delectable sweet dish made with milk and quinoa.
    Course: Dessert, milk based sweets

    Ingredients
      

    • 3/4 litre milk
    • 1/3 cup quinoa
    • 1/2 cup water +extra for soaking
    • 1/2 cup sugar
    • 7 almond
    • 7 cashewnut
    • 2 cardamom
    • a few strands of saffron

    Equipment

    • pan
    • ladle
    • pressure cooker with containers
    • mixer along with small jar

    Method
     

    1. Wash and soak the quinoa for two hours. It should be rinsed well to remove the saponin covering.
    2. Put the milk in a thick bottom pan and boil it for sometime. Put the saffron strands to the milk.
    3. Pressure cook the quinoa with half a cup of water for one whistle.
    4. In the meantime, make a powder of dry fruits along with cardamom.
    5. Once the pressure releases by itself, put the quinoa to the boiled milk and cook it for sometime. Put the dry fruit powder to it.
    6. Once it thickens, add sugar to it and give a stir. Boil for two minutes. Keep it aside. Quinoa kheer is ready to serve.

    Notes

    • You can use any variety of quinoa.
    • It can be served warm or chilled.
    • If you want to add roasted nuts instead of powder, you need to boil the milk until it reduces to half the quantity.

    Stuffed Dates are the new trendy dessert you find at parties or get-together. They are easy to create, look good, healthy to serve  and make a good snack to binge anytime.

    Dates are a good source of nutrition.They are packed with Vitamin A, B1, B2, B3,B5, C, anti-oxidants  and many other nutrients as potassium, calcium, iron, manganese, sodium, zinc. If you are not eating them regularly, make them a part of your diet.

    It helps to fight anemia.. It boosts overall energy of the body. It helps in promoting cardio-vascular health. These are a few benefits of including dates in your diet. 

    Stuffed Dates originated in the Levant region  of Middle East. They are tasty, packed with nutrients, bite sized, can be varied and tasty. They are made in a couple of ways. They are slitted, seed is removed and stuffed with peanut butter, almond butter or cream cheese along with other ingredients.  Here, my version is a little different, it has banana. I have used the ripe banana and desiccated coconut for stuffed dates recipe. The other ingredients are nuts along with cocoa powder which lend a good taste.

    • The fillings can be made in different varieties.
    • It is an healthy snack.

    What kind of dates should I use ? 

    You can use any variety of dates. I have used zahidi dates here.

    Stuffed Dates

    Stuffed Dates are the new, trendy desserts. They are tasty and ideal to serve as a snack.

    Ingredients
      

    • 15 Dates
    • 1 ripe banana
    • 1/4 cup + 2 tablespoon desiccated coconut
    • 4 cashew
    • 10 raisins
    • 1/2 teaspoon cocoa powder

    Method
     

    1. Make an incision and remove the seed from the dates.
    2. In a small bowl, put the banana and mash it with a spoon.
    3. Set aside some desiccated coconut for Add desiccated coconut, cashew pieces, rains and cocoa powder. Mix it well.
    4. Take a small portion of the stuffing and stuff in the dates. Roll it in the grated coconut andd keep it aside.
    5. Repeat the filling and rolling for all the dates.
    6. Freeze them for two hours.
    7. Stuffed Dates is ready to serve.

    Mango Sago Pudding | Tropical dessert

    Mango Sago Pudding is a tasty, delectable sweet.  It is a good tropical dessert.  The beginning of the mango season starts usually with aamras and ends with a dessert as days pass by. 

    If you are looking for a good dessert, I suggest you to try this one. It is an easy to make, tasty sweet dish without any added sugar.

    Ingredients :

    • 1 mango
    • 1/2 litre milk
    • 1/3 cup sago pearls
    • 4 cashews
    • 8 raisins
    • 1/4 teaspoon cardamom powder
    • a pinch of saffron

    Method :

    • Soak the sago pearls for an hour.
    • Wash the mango, cut into cubes and make a puree. 
    • Put the milk in a thick bottom pan. Take a tablespoon of milk and soak saffron.
    • Once the milk boils,  put the sago pearls to it and let it cook for a while. The sago pearls turn translucent on proper cooking. 
    • Add cashew pieces and raisins. Put the soaked saffron to it.
    • Let cook for sometime. Switch off the gas, let it cool.
    • Put the mango puree to it. Mix it, chill and serve.

    Take a tip :  

    • Soaking the sago pearls facilitates proper and quick cooking. 
    • You may add a few pieces of mango as topping.
    • Serve chilled.

    Mango Sago Pudding is a delectable sweet treat made with mango and sago pearls. A simple yet satisfying dessert to make during summer.
    Prep Time 10 minutes
    Cook Time 10 minutes
    Soaking time 1 hour
    Servings: 4 small servings
    Course: Dessert
    Cuisine: Indian

    Ingredients
      

    • 1 mango
    • 1/2 litre milk
    • 1/3 cup sago pearls
    • 4 cashews
    • 8 raisins
    • 1/4 teaspoon cardamom powder
    • a pinch of saffron

    Method

    Well, that’s a kind of feeling I have when the mango season starts. What else can I make with mangoes? 

    For the past two years, mangoes are not much. A few years back, I remember we had a good number of fruits.
    I have shared many mango recipes earlier. They are Mango kesariamba bhat,  Desserts with a international touch are  mango pannacotta, chocolate streaked mango ice cream 
    The ambua, mumbazha pulissery are some of the regional dishes you can prepare.

    • eggless mango mousse for those who prefer it
    • can be made ahead and kept in the refrigerator. 

       

       

      Mango Mousse Recipe 

    Ingredients:

    • 2 cups mango puree
    • 1 cup cream 
    • 2 tablespoon honey

      Method:

    • Take the puree and blend it.
    • Add honey to it.
    • Fold the cream into the mango puree.
    • Put it into glass bowls and allow it to set in the refrigerator.
    • Mango mousse is ready to serve.

      Take a tip:
    • Choose good quality mangoes. 
    • Castor sugar may be used instead of honey.
    • Use any whipping cream

    No Bake Strawberry Cheese Cake is an easy to make dessert with fresh strawberries. It is a no bake recipe and can be made ahead and kept. It is tasty and ideal for a weekend dinner. 

    February is the month of love and joy. With Valentine’s Day round the corner, which dessert are you making? May this season bring joy and happiness to all. Cook a good meal at home for the two of you and enjoy the day.  

    I love strawberries and make the best use when they are available. The No bake strawberry cheese cake is a delight to serve. Make it for the V-Day or any time when you wish.  Check out the other strawberry recipes shared earlier.  Strawberry Mojito, Strawberry Chia SouffleStrawberry Ice Cream are ideal for celebrations. Strawberry Jam tastes good with bread or chapathi. Strawberry Lassi and Strawberry Yoghurt are good to have during summer. 

    The making of strawberry cheese cake is easy but requires a little planning. Make sure you have read the recipe rightly instead of messing with the ingredients. Moreover, a lot of time is spent in the process. Cream cheese is easily available in big cities but people in small town do not have access to many things. Secondly, Agar agar needs to be cooked on a slow flame for a few minutes. It will not dissolve by itself. Thirdly, It is best to use fresh strawberries but you can use frozen ones too.

    No Bake Strawberry Cheese Cake 

    Ingredients:

    • 15 digestive biscuits (I used marie biscuits)
    • 3 tbsp butter
    • 12 strawberries
    • 3 tablespoon sugar
    • 1 teaspoon cornstarch
    • 1teaspoon lemon juice
    • 1 cup hung curd (1 cup= 240 ml)
    • 1 cup cottage cheese
    • 1 tablespoon agar agar
    • 1/4 cup water

    Method: 



    1. Grind the biscuits. Melt the butter and mix it in it. Take a glass bowl and line it evenly with the biscuit mixture. Put it in the freezer to set.
    2. Wash and make a puree of the strawberries. Boil it i with sugar, cornstarch and lemon juice and make a lump free mixture. The cottage cheese should be soft. Put it in warm water and keep it aside for sometime.
    3. Cut the  agar agar into small pieces. Put it in water and heat it on a low flame, keep stirring. The strands melt and form a homogenous mixture.  Keep it aside.
    4.  Now, blend the sugar, hung curd, cottage cheese along with the strawberry mixture and agar agar. 
    5. Take the lined bowl out  from the freezer and spread  this mixture over it.
    6. Allow it to set for two hours in the refrigerator.
    7. Decorate with a few strawberries, cut and serve the delicious No Bake Strawberry Cheese Cake.

     

    Take a tip:

    • Frozen strawberries may be used.
    • You can use mango and apple also instead of strawberries.
    • You may use ready cream cheese. 
    • Adjust sugar accordingly, it depends on the sweetness of the fruit.
    • Any digestive biscuits can be used for the base.

    Ingredients
      

    • 15 digestive biscuits used marie biscuits

    • 12 strawberries
    • 3 tablespoon sugar
    • 1 teaspoon cornstarch
    • 1 teaspoon lemon juice

    • 3 strawberries for garnishing

    Method

    Bread Gulab Jamun Recipe | Dry Jamun Recipe

    Bread Gulab Jamun is a delicious, easy to make sweet recipe. Here white bread slices  are used to make these jamuns.



    What is Gulab Jamun?


    Gulab Jamun is a traditional mix of solid-based sweets from the Indian sub-continent. It is popular in many countries of Asia. Jamun is actually the name of a fruit. These deep fried balls are similar to black plum, hence the name. They are dunked in a rose water scented sugar syrup.



    Why should you give a try to this recipe:

    • It is easy to prepare.
    • The ingredients are easily available at home.
    • It makes a quick dessert for the sweet tooth.
    • Good way to make use of the leftover bread.
    • It is a good left over make over recipe you can share with other friends. 



    Can it be served as the regular gulab jamun with syrup?

    Yes, you can serve it the regular way. In that case, increase the quantity of syrup you are making. The quantity given here will be a little less to serve with syrup.

    Is it a substitute for the original recipe? 

    No, it is not a substitute. It is pseudo recipe which you can easily recreate and enjoy. Moreover, variety of food gives a good taste to life , isn’t it?

    Can it be served for parties? 

    Yes, you can make it ahead and serve. If you are hosting an International party, do check the article on how to host a good dinner.

    Recipe of Bread Gulab Jamun

    Ingredients:

    For the balls:

    • 3 cup bread crumbs
    • 1 tablespoon milk powder
    • 1/2 cup milk

    For the  sugar syrup:

    • 1/3 cup sugar
    • 1/3 cup water
    • a few strands of saffron
    • 1/4 teaspoon cardamom powder

    For frying:

    • ghee

    For decorating :

    • 1/3 cup desiccated coconut
    • a few cashew pieces

    Method:

    1. To make bread crumbs, take a few slices of bread and grind them in the mixer. I have used five slices of bread.
    2. Put the bread crumbs in a bowl.
    3. Add milk powder to it. Mix them slowly to a dough using milk.
    4. Keep it covered for ten minutes.
    5. In the meantime, make the sugar syrup. Take sugar and water in a pan. Boil it for two minutes with a few saffron strands. Put cardamom powder, set it aside.
    6. To make the jamuns, make small balls of the dough.
    7. Heat ghee in a pan, slowly, put a few balls and deep fry. Once they are golden in colour, put them aside,  Later, put them in the sugar syrup.
    8. Fry the remaining balls and soak them in the syrup.
    9. Soak for four to five hours.
    10. Mix desiccated coconut and cashew pieces in palate. Roll the soaked jamuns in the mixture and serve. 
    11. Bread Gulab Jamun is ready to serve. 

    Take a tip:

    • Use white bread to make these gulab jamun. Wheat or multi grain bread will not give a good texture.

    Bread Gulab Jamun

    Bread Gulab Jamun is a tasty, easy to make dessert for sudden sweet cravings.

    Ingredients
      

    For the balls:
    • 3 cup bread crumbs
    • 1 tablespoon milk powder
    • 1/2 cup milk
    For the  sugar syrup:
    • 1/3 cup sugar
    • 1/3 cup water
    • a few strands of saffron
    • 1/4 teaspoon cardamom powder
    For frying:
    • ghee
    For decorating :
    • 1/3 cup desiccated coconut
    • a few cashew pieces

    Method
     

    1. To make bread crumbs, take a few slices of bread and grind them in the mixer. I have used five slices of bread.
    2. Put the bread crumbs in a bowl.
    3. Add milk powder to it. Mix them slowly to a dough using milk.
    4. Keep it covered for ten minutes.
    5. In the meantime, make the sugar syrup. Take sugar and water in a pan. Boil it for two minutes with a few saffron strands. Put cardamom powder, set it aside.
    6. To make the jamuns, make small balls of the dough.
    7. Heat ghee in a pan, slowly, put a few balls and deep fry. Once they are golden in colour, put them aside,  Later, put them in the sugar syrup.
    8. Fry the remaining balls and soak them in the syrup.
    9. Soak for four to five hours.
    10. Mix desiccated coconut and cashew pieces in palate. Roll the soaked jamuns in the mixture and serve.
    11. Bread Gulab Jamun is ready to serve.

    Notes

    • Use white bread to make these gulab jamun. Wheat or multi grain bread will not give a good texture.

    Custard Pudding is a layered, easy to make dessert. It is a good treat during hot summer months. One can customise to their preference by adding different kind of fruits and nuts in it. 

    Custard pudding is one of the desserts I often make.  This dessert  is easy to prepare and  tailor-made to one’s taste and needs. Since it is the season of mangoes, I have used mango pieces today. One can add pomegranate arils and banana pieces too. Adding of chocolate ganache gives a good and rich taste to it.

    A few pointers to make custard : 

    1. Use good quality  custard powder. I prefer using Brown and Polson.
    2. Make sure no lumps are formed. 
    3. Custard can be made either of thin or thick consistency. Here, we need one of moderately thick consistency.
    4. Do not use hot custard in layering.

    Ingredients for Custard Pudding: 

          For the first layer: 

    • 15 digestive biscuits
    • 2 tablespoon cocoa powder
    • 2 teaspoon ghee

      For the second Layer: 

    • 1/2 litre milk
    • 1/4 cup sugar
    • 1 tablespoon custard powder
    • a little water or milk for mixing

    For the third layer: 

    • mango pieces
    • nuts
    • berries

    Method : 

    1. At first, let us prepare the custard. Take milk in a thick bottom pan. Take custard powder in a small bowl and mix it with a small quantity of  water or milk. Keep it aside. Once it boils, add sugar and give a stir. Now, add the slurry to it. Keep stirring as you add it. As it boils, it thickens. Put it aside to cool.
    2. Chop the mango and dry fruits.
    3. Take the digestive biscuits and powder it. I have used Marie biscuit, find it ideal for many desserts. You can either put the biscuits in a zip-lock bag and press it with a rolling pin. One can also pulse them in the jar.
    4. Mix the crushed powder with ghee and cocoa powder. 

    To Assemble:

    1. Take small glasses or a small jar. Put the biscuit crumble below and press it with the back of a spoon. 
    2. Put three tablespoon of the cooled custard to it.  Set it for sometime in the freezer. 
    3. Top it with mango pieces, dry fruits and berries.
    4. Chill and serve. 

    Take a tip: 

    1. Different kind of fruits can be added.
    2. A spoon of soaked chia seed tastes good to it.
    3. You may top it with cornflakes.
    4. Instead of fruits, you can top it with chocolate ganache.

    Mango Panna Cotta | Italian dessert

    Mango Panna Cotta is a quick Italian dessert, ideal to serve anytime. This is a vegetarian version as agar agar  (or agar) is used here.

    Panna Cotta is a classic Italian dessert  that is made by cooking heavy cream. Addition of mango makes a subtle change to the taste and hence the name as Mango Panna Cotta. This is a vegetarian version of the dessert.

    I wanted to make this panna cotta since a long time but somehow it was delayed. Now, I have made it with mangoes as it is the season of king of fruits. Looking at the internet, I figured there were many ways to make this classic dessert. Soon, I decided that it would be vegetarian with the easy way that I could make. The final outcome was good but I think I could add some more mango pulp as the colour is cream. But, on other thoughts, had I added it, I would need more of agar agar to set it properly. Anyway, here is the recipe of my mango panna cotta.

    A few other mango recipes, as breakfast  you might like to try mango kesari, or amba bhat for lunch along with chapati and sabzi. If you like to explore other cuisines then do check this mumbazha pulissery, a dish from the state of kerala or the ambua from Himachal Pradesh.

    About Agar Agar

    Agar Agar or Agar  is a vegetarian substitute that is used instead of gelatine in making desserts. It is a jelly-like substance obtained from red algae. It is a mixture of two substances namely: agarose and agaropectin. It is mainly used in desserts and in soups as a thickening agent. As it is a rich source of dietary fibre, it can also be used as a laxative.

    It is available as white translucent strands. I read that the powder form is also available but I have not found it yet. It needs to be cooked in a little water until the strands dissolve.

    Mango Panna Cotta

    Ingredients:

    • 1 cup milk  (1 cup = 240 ml)
    • 1 tin fresh cream ( I used Amul’s cream)
    • 1/2 cup sugar
    • 1 tablespoon agar agar
    • a little water
    • 1 cup mango puree

    Method:

    1. Cut the agar agar strands into small pieces and soak them in a little water. After sometime, boil it for on a low flame, the granules need to break and mix easily.
    2. In a pan, add milk, cream and sugar. Heat it gently on a low flame. Once the sugar melts and it is warm, put it aside.
    3. Meanwhile, extract the mango pulp and whisk it to a puree.
    4. Now, add the dissolved  agar agar to the milk and cream mixture and give a stir.
    5. After sometime, put the mango pulp to it and mix it well.
    6. Pour it into moulds, ramekins or glass bowls and allow it to set for at least 4 hours.
    7. Serve chilled.

    Pomegranate pudding is a good dessert to serve for children. Children will be happy and now you are a super mom who knows how to keep all things good. Pomegranate jelly is healthier as the fruit juice is used here.

    This is a vegan and gluten free dessert.

    Kids are fussy eaters and this jelly like dessert is ideal to serve them. Love the dark colour of it, it looks amazingly good. You can add a few arils while setting it, I have not put it.

    Pomegranate Pudding Recipe

    Ingredients:
    Measurement : 1 cup =250 ml
    • 2 cups pomegranate juice
    • 3 tbsp sugar
    • 3 tbsp corn flour
    • 1 tablespoon butter

    Method:

    1. Remove the skin and separate the arils.
    2. Put them in the juicer and extract the juice, do not add water to it. I required four pomegranates to get the required quantity of extract.
    3. Mix cornflour and sugar to it. Stir it well so that no lumps remain.
    4. Put it in a pan and set it to boil on a low flame. Keep stirring in between. Now, add the butter to it and let it continue to cook. It needs some time but once it thickens put it in a mould.
    5. Chill it for three hours and serve.
    Take a tip:
    1. Do not add water while grinding. If necessary, add only half a glass of water.
    2. It can be poured in small moulds and set aside.
