    Carrot halwa / Winter delights / Indian dessert

    Carrot halwa is tasty and makes a delectable sweet for any ocassion. It is a winter delight when carrots are available in plenty, time to make this delicacy. It is ideal for any occasion from celebrations to festivities.

    Methods of making Carrot Halwa:

    Carrot halwa is a popular sweet and can be made as per our need. The traditional one is tasty and has  the authentic taste of slow cooked pudding in milk. In the second method, one can substitute milk with condensed milk and the time is considerably rediced. In the third method, khoya is used to give a rich taste to it.

    Here, I am sharing the traditional method of preparing this recipe. I have cooked the carrots in milk in the beginning and I prefer making it this way. But, the grated carrots can be roasted in a little ghee and then cooked in milk. Now, you can choose either way to make it.

    Uses of Carrot Halwa:

    • It is ideal as a sweet dish served along with any meal.
    • It can be served as a dessert.
    • It is ideal to serve with ice cream.
    • It is used in fusion dishes.

    Let’s get to the recipe of Carrot Halwa (traditional method) 

    The ingredients that you need are:

    • 1 kilogram carrot
    • 3/4 litre milk
    • 1/2 kilogram sugar
    • 3 tablespoon ghee
    • 1/2 teaspoon cardamom powder
    • nuts

     

    Method:

    1. Wash the carrots by scrubbing them well. Pat dry. Grate the carrots with a grater or put them in a food processor.
    2. Take a thick bottom pan, add the grated carrot and the milk, keep them to boil on a low flame.
    3. Once the quantity is reduced and it is cooked, add sugar and ghee. The sugar and ghee melts and the consistency is thin. Let cook, keep stirring in between.
    4. It is done, once the quantity is reduced and it is thickened.
    5. Add cardamom powder.
    6. Roast the nuts in a little ghee and put over it.

    Its tasty and irressitible, I tried making it and have been hooked to it.

    The ingredients that you need are:

    three custard apple deseeded

    1/2 litre milk

    3 tsp sugar

    a scoop of vanilla ice cream

    Method:

    Blend all the ingredients together ,add ice cubes and serve in tall frosted glasses.

    Kulfi is a popular frozen dessert from Indian sub-continent. It is loved by kids and adults alike.

    Kulfi is a popular frozen dessert from Indian sub-continent. It was first made in the 16th century and since then it is still the pride of our country.  Initially, it was available only with the street vendors but with time, all major brands are producing kulfi along with other frozen treats. It is the cousin of ice-cream.

    Kulfi is denser than ice-cream. It is not whipped as in an ice-cream. It is referred to as Indian Ice cream by many people.

    Kulfi is made by boiling the milk and sugar, constantly stirring to avoid sticking to the pan. It is made in different flavours. The popular ones pista, kaju kishmish, mango, rose and strawberry.

    Today, I am sharing the traditional kulfi which I keep making often. I like the rich taste that it imparts. The only drawback is the time that it needs. You can set it to boil while cooking or when you are doing other errands in the kitchen. It needs time and attention, we need to be there but can  be equipped in another work too. Secondly, it needs constant stirring.I find it better to put a small plate in it which avoids spilling.

    Kulfi

    Ingredients:

    • 1 litre Whole milk
    • 200 grams of sugar
    • a few strands of saffron
    • cardamom  powder
    • half a bowl of assorted dry fruits

    Method:

    Boil milk  with strands of saffron in it for half an hour. Allow the quantity to reduce by one-fourth at least. Keep stirring in between and scrap the milk residue into it.   Add sugar, broken pieces of dry fruits and cardamom powder and boil for another ten minutes. Allow to cool and then put it in the kulfi moulds and allow to set . Tasty kulfi is ready in a couple of hours.

    To de mould it:

    Pour water over it. You may immerse it in a pan of water. It will easily come out from the mould.

    Take a tip:

    • Dry fruits used are cashew, almond, raisin and pista.
    • You can coarsely powder and put them too.
    • Ideally, the milk should be reduced to half the quantity.

     

    Kulfi

    Ingredients
      

    • 1 litre Whole milk
    • 200 grams of sugar
    • a few strands of saffron
    • cardamom powder
    • half a bowl of assorted dry fruits

    Equipment

    • thick bottom pan, ladle, kulfi moulds,

    Method
     

    1. Boil milk  with strands of saffron in it for half an hour. Allow the quantity to reduce by one-fourth at least. Keep stirring in between and scrap the milk residue into it.   Add sugar, broken pieces of dry fruits and cardamom powder and boil for another ten minutes. Allow to cool and then put it in the kulfi moulds and allow to set . Tasty kulfi is ready in a couple of hours.

    Notes

  • Bread pudding

    I learnt this one from a friend of mine and since then I have made it many times. It is also called as  “double ka meetha” Serve it as a  sweet delicacy or a dessert, only the fine taste matters.

    The ingredients that you need are :

    • 6 slices of bread
    • half litre of milk
    • a bowl of sugar
    • a few strands of saffron
    • ghee for frying
    • dry fruits for garnishing

    Method:

    It involves three steps.  Making of :

    1 Sugar syrup

    2 Milk rabdi

    3 Bread croutons

    1 Sugar syrup

    Take three fourth bowl of sugar and boil in water to make a sugar syrup. Put a few strands of saffron to it and keep aside.

    2 Milk rabdi

    Boil the milk with the remaining sugar and a few strands of saffron for ten minutes.

    3 Bread Croutons

    Fry the bread slices in ghee and keep aside.

    To make the pudding:

    Put the fried bread pieces in sugar syrup for sometime and keep aside.

    Place them in a circular bowl and pour the boiled milk over it.

    Garnish with dry fruits.

    Serve chilled.

    Phirni  is a popular dessert from North India. It is made of milk along with soaked rice which is made into a paste and cooked in it. It is tasty and one of the most loved dessert. It tastes best when served chilled. 

    Today, I am sharing an easy phirni recipe which can be made in ten minutes. Make it ahead and put it in the refrigerator Here, I am using rice flour as the star ingredient instead of soaked rice. Personally, we have liked the easy method of phirni  and been making it quite often. You can make it ahead and put it in the refrigerator to chill.

    Easy Phirni Recipe :

    Ingredients:

    • 1 litre of milk
    • 3 tablespoon  rice flour
    • 4 tablespoon  sugar
    • a few strands of saffron
    • 5 drops vanilla essence
    • cashewnuts and almonds
    • 1 teaspoon  ghee

     

    Method:

    Boil milk with saffron strands. Add sugar. Now, slowly add the rice flour and keep stirring so that no lumps are formed.  Allow to cook for a minute and turn off. Add dry fruits roasted in ghee and vanilla essence to it and mix well. Serve chilled.

    Phirni is a popular dessert from North India. Here is the easy recipe of phirni which can be made in ten minutes.

    Chilling time 2 hours
    Total Time 2 hours 10 minutes
    Course: Dessert
    Cuisine: north indian

    Ingredients
      

    • 1 litre milk
    • 3 tablespoon rice flour
    • 4 tablespoon sugar
    • a few strands of saffron
    • 5 drops vanilla essence
    • cashewnuts and almonds
    • 1 teaspoon ghee

    Equipment

    • 1 pan
    • 1 ladle
    • 2 small bowls

    Method
     

    1. Boil milk with saffron strands. Add sugar. Now, slowly add the rice flour and keep stirring so that no lumps are formed.  Allow to cook for a minute and turn off. Add dry fruits roasted in ghee and vanilla essence to it and mix well. Serve chilled.

    Notes

    Addition of vanilla essence is optional but lends a good taste to it.
    You may add other nuts as raisins and pistachois.
    Phirni tastes good when chilled.
