    Huli nuchu | Katambli | Karnataka recipes

    Huli nuchu or katambli is a traditional food that is made using broken rice and buttermilk. It is a coolant food for summer from Karnataka.

    Some recipes are  cherished since ages, they have stood the test of time and  are worth mentioning.  May be with time,  life is moving super fast these days, some dishes will be soon forgotten and face a silent death with time. Writing it here, for all the kannadiga fans who love these dishes, Huli nuchu or katambli is one such unique dish, it’s one of the heirloom recipes, passed on through generations.

    It makes a good dish for lunch or breakfast. Huli nuchu is a kannada word, where “huli” means “sour” and ” nuchu ” is the term used for broken rice granules. Thus, the broken rice granules are cooked in sour buttermilk.  With the recipe written down here, I hope many will continue to cook and enjoy this rare dish.

    Broken rice granules are cooked in sour buttermilk with  seasoning and spices, it makes a comfort meal by itself. One can serve it for breakfast or lunch. A simple mango pickle tastes good with it.

    One needs a little prior preparation here. Raw rice needs to be washed and dried on a cloth. It is then coarsely grinded in the mixie. You can make this a day earlier and keep it ready.

    How to make the broken rice:

    It is usually available in the market, but one can make it at home also. Take a cup of rice, wash and soak it for two hours. Later, discard the water put it to dry on a cotton cloth in shade. Once, it is partially dry, grind it coarsely in the mixer.

    Huli Nuchu / Katambli recipe

    Ingredients:

    • 1 cup broken rice
    • 2 cup sour curd
    • 4 cup water
    • 2 tablespoon oil
    • 1/2 teaspoon mustard seeds
    • 1/4 teaspoon asafoetida
    • 1 inch ginger cut into small bits
    • 1 teaspoon cumin
    • 1 teaspoon bengal gram
    • 1 teaspoon urad dal
    • 4 green chilly
    • a few curry leaves
    • coriander finely chopped
    • salt to taste

    Method:

    • Whisk the curds and keep it aside.
    • Heat oil in a thick bottom pan, it is good to use a pressure cooker if you do not have a thick bottom vessel. Add mustard seeds, as it crackles, put bengal gram and urad dal to it. Add asafoetida, after a few seconds, put the green chilly and curry leaves to it. Mix water to the curds. Pour it into seasoning, add salt.
    • As it boils, mix the broken rice granules (akki tari) slowly to it. Keep stirring, lumps may be formed here.  Let cook on a slow heat for some time. Keep stirring in between.
    • Add fresh coriander to it.
    • Add more water, if the consistency is thick.
    • The rice granules should be soft, once it is done, remove and serve. Mango pickle tastes good with it.

    Take a tip:

    • Sour curds is essential.
    • Adjust chilly as per your needs.
    • Ginger may be grated and put in the seasoning.
    • Do not skip adding ginger, it gives a good taste to thhe dish.
    • It needs time to prepare this dish.

    Huli nuchu is one of the heirloom recipes that is prepared by me. Broken rice are simmered in buttermilk with a seasoning for a long time, it makes a tasty meal by itslef. 
    Prep Time 30 minutes
    Cook Time 1 hour
    Total Time 1 hour 30 minutes
    Servings: 6 people

    Ingredients
      

    • 1 cup broken rice, akki tari,
    • 2 cup sour yoghurt
    • 3 cup water
    • 2 tablespoon oil
    • 1/2 teaspoon mustard
    • 1/4 teaspoon asafoetida
    • 1 teaspoon bengal gram
    • 1 teaspoon urad dal
    • 1 inch ginger
    • 4 green chilly
    • a few curry leaves
    • coriander leaves
    • salt to tatse

    Method
     

    1. Whisk the curds, add water to it and keep it aside. 
    2. Heat oil in a thick bottom pan, add mustard seeds, as it crackles, put asafoetida, bengal gram, urad dal, ginger pieces, green chilly and curry leaves. Let cook for a few seconds. Now, add the buttermilk (curds and water mixed) to it. 
    3. Once it boils, slowly add the broken rice to it, keep stirring in between. Add salt and let cook on a slow flame for half an hour. 
    4. Keep stirring in between. Add water if necessary, the consistency should be moderately thick.
    5. Add fresh chopped coriander to it while cooking. It imparts good smell. 

    Notes

    • To make broken rice, wash the raw rice and put it to dry on a cloth. Later, coarsely grind it. 
    • Curds should be sour.
    • Adjust the consistency of water.
    • Grated ginger can be added.

    Strawberry Lassi is a flavoursome, yoghurt based drink. It is refreshing during summer.

    Lassi is an ideal drink for summer.  It is a yoghurt based sweetened drink that is chilled and garnished with nuts. Strawberry Lassi is a flavourful summer drink that one  can easily make at home.

    The temperature is rising each day and thus we need to change our food habits. Fruits and fluids need to be taken in more quantities. Chaas, lassi and lemonades are gulped down easily.

    Here is a collective  post that I had written last year. Summer Delights  has some good recipes in it.

    Punjabi Lassi is one classic drink for summer, posted it earlier. Cucumber Lassi is a spicy variety, do give a try.

    Hubby bought rose lassi the other day. It was good and soon I was tempted to try making strawberry lassi. It was a refreshing drink which all of us enjoyed.

    Strawberry Lassi

    Ingredients:

    • 250 ml thick curd
    • 50 ml milk
    • 4 strawberries ( I used large ones)
    • 3 teaspoon sugar
    • 1 teaspoon almond and cashew crushed
    • a little cardamom powder ( optional)
    • 250 ml cold water

    Method:

    • Wash and cut the strawberries.
    • Add sugar to it. Blend both together.
    • Add curd and whisk it again.
    • Put water and blend once again.
    • Pour in glasses, top with dry fruit powder and serve.

    Take a tip:

    • Use fresh curds.
    • Add sugar as per your taste, this measurement gives a not too sweet lassi which we prefer.

    Servings: 2 glasses
    Course: health drinks, summer drinks
    Cuisine: Indian

    Ingredients
      

    • 250 ml curd
    • 50 ml milk
    • 4 strawberries
    • 3 tsp sugar
    • 250 ml cold water
    • 1 tsp dry fruit powder
    • 1/8 tsp cardamom powder optional

    Method
     

    1. Wash and cut the strawberries, add sugar and blend to a puree.
    2. Put yoghurt and milk to it. Give a whisk. 
    3. Add water to it. Blend again. 
    4. Pour in glasses and top with dry fruit powder and cardamom powder.

    Notes

    • Use fresh curds.
    • Adjust sugar as per your need. This measurement gives a not too sweet taste.

    Low calorie strawberry milkshake/ healthy strawberry milkshake

    Its the season of strawberries, the red luscious fruit is loved by all. Mostly consumed as a fruit, it is also used in desserts, cakes and toppings. It gives a wonderful taste to cold beverages. Strawberry milkshake is a favourite drink to enjoy in this season.

    Here is a healthy twist to the usual milkshake. There is no added sugar and the milk used is low fat. I usually blend my milkshakes with a scoop or two of ice cream but avoided it here. Thus, this low fat milkshake is ideal to be consumed by all weight watchers.

    Strawberry is  nutritional packed, it is rich in anti oxidants and polyphenols. It also has nutrients, vitamins and minerals as manganese, Vitamin C,folate, potassium , dietary fibre and magnesium.

    Benefits of Strawberries

    Strawberries boosts immunity, reduces hyper tension and improves heart function. They boosts brain function and improves eye sight. They help prevent arthritis and gout. It reduces inflammation caused by injuries. It helps in weight loss.

    Ingredients for Low Calorie Strawberry Milkshake

    • 250 ml low fat milk
    • 6 strawberries
    • 1/2 teaspoon natura (sweetener)
    • ice cubes for dressing

    Method to make low calorie strawberry milkshake:

    Wash the strawberry, pat dry and cut into small pieces. Freeze them for some time. Grind all ingredients, pour it in a glass, add ice cube and serve immediately.

    Take a tip:

    • Natura is a sugar free sweetener added to enhance the taste of the beverage. It can be prepared without  it also.
    • It is ideal to freeze strawberry pieces ahead of time.

    Ingredients
      

    • 250 ml low fat milk
    • 6 frozen strawberries
    • 1/2 teaspoon natura
    • ice cubes

    Method
     

    1. Wash the strawberries, pat dry, cut into chunks and  freeze them for sometime.
    2. Blend all ingredients together except ice cubes. 
    3. Serve in glasses, top with ice cubes.

    Notes

    • Natura is a sugar free sweetner that enhances the taste. You may avoid it if you wish.
    • Strawberries can be washed, dried and frozen ahead of time.

    Mocha Coffee Cookies are exquisite and melt in the mouth cookies. Serve it as a snack or with milk in the mornings.  Recently, I was selected for the Belly Nirvana Campaign by Plattershare in association with Place of Origin Indian Tastes Delivered. I received a Leo Breakfast Blend Coffee Powder and Mocha Chocolate drink powder.

    Leo Breakfast Blend Coffee Powder is in  60: 40 ratio, i.e it is 60% coffee powder and 40% chicory. The aroma is exhilarating and the strength of the coffee is strong. It is made with the finest beans of coffee. The chicory unlocks the flavour giving it a rich flavour.  We liked the coffee and I highly recommend it.

    The Mocha chocolate powder can be used for various purposes. It is ideal to use it in milk. I made a milk shake for my hubby and daughter and they did like it.  It was tasty and flavoursome. Mocha Chocolate powder can be used in baking cakes and cookies. The Mocha powder is unique and has freshness in its taste. I shall definitely order the same brand again.

    Mocha flavour blends well with coffee and makes  a good and unique recipe. The coffee and chocolate medley is simply aweome and I am loving it.  I will be making a few more in the next few days.

    I made  coffee cookies using these two products and it was awesome. The cookies were soft and melt in the mouth.

    Mocha Coffee Cookies Recipe

    Ingredients:     (Measurement used: 1 cup =200 grams)

    • 1 cup all purpose flour
    • 1/4 cup almond flour
    • 1/8 teaspoon baking soda
    • 1/4 teaspoon baking powder
    • 2 teaspoon leo breakfast blend coffee powder
    • 2 teaspoon mocha chocolate powder
    • 1/3 cup butter
    • 1/2 cup brown sugar
    • a little ghee for greasing

    Method:

    1. Sieve all purpose flour, almond flour, baking powder and baking soda together .
    2. The butter should be at room temperature. Mix butter and sugar till it is soft.
    3. Mix coffee powder and mocha powder to it.
    4. Now, mix the flour slowly into the mocha coffee mix.
    5. Do not knead it hard.
    6. Keep it aside for ten minutes.
    7. Grease the plate with a little ghee.
    8. Take a small lemon sized ball, flatten it and place it on the tray. Keep them at an inch apart.
    9. Pre- heat the oven at 200 degree celsius.
    10. Bake it for ten minutes at 200 degree celsius.
    11. Let them  cool on rack.
    12. Repeat for the rest of the dough.
    13. Store in an airtight container.

    Cook Time 20 minutes
    Total Time 40 minutes
    Servings: 12 cookies
    Course: Snack
    Cuisine: international

    Ingredients
      

    • 1 cup all purpose flour 1 cup =200 ml used in recipe
    • 1/4 cup almond flour
    • 1/4 teaspoon baking soda
    • 1/8 teaspoon baking powder
    • 1/2 cup brown sugar
    • 1/3 cup butter
    • 2 teaspoon leo coffee powder
    • 2 teaspoon mocha hot chocolate powder

    Method
     

    1. The butter should be at room temperature while using.
    2. Sieve the flour along with baking soda and baking powder.
    3. Mix butter and brown sugar together. Beat it well. Add mocha hot chocolate powder and coffee powder to it. Mix it .
    4. Now, mix the flour into the mocha coffee mixture. Do not knead it hard. Keep it aside for ten minutes.
    5. Pre-heat oven at 200 degree centigrade.
    6. Grease a tray. Take small lemon sized balls, flatten and arrange on the tray at a distance.
    7. Bake for ten to twelve at 200 degree centigrade.
    8. Once it done, let cool on the rack.
    9. Keep it in an airtight container.

    Apple milkshake has been the recent addition to my list. It is one of the tastiest and healthiest drinks that one can slurp in the mornings. I don’t know why I had not tried earlier.

    Apples are available all round the year and one can easily manage with it. It is thick, foamy and filling. Do not peel the skin of apples, just cut it into small pieces and pulse it, it blends well with the pulp and milk.

    Ingredients:

    • 1 apple
    • 2 cups milk
    • 1 teaspoon honey
    • a few ice cubes

    Method:

    Wash and cut the apple into small pieces. Pulse it, add milk and honey to it. Again pulse it for thirty seconds. Pour it in a glass  and serve chilled. Otherwise, add ice cubes to it.

    Take a tip:

    Add sugar if serving for children.

    3. Serve chilled. Alternatively, add ice cubes to it.

    Notes

    Add sugar if you are serving it small children.

    Have you ever tried making mint paratha? If not, do give a try to it. They are aromatic and refreshing. The smell of mint leaves can never be locked, it spills everywhere. No need of any accompaniment, you can serve it with curds and pickle.

    Last year, I was going through Tarla Dalal vegetarian cook book and it was then I found this mint paratha. Since then, I have made it many times.

    Mint paratha, pudina paratha

    Ingredients:

    • 2 cup wheat flour
    • 1 cup mint leaves
    • 1 teaspoon ajwain
    • salt to taste
    • 2 teaspoon chilli powder
    • 1 teaspoon oil
    • water for kneading
    • wheat flour for dusting
    • oil for roasting

    Method:

    1. Separate the leaves, wash and dry them
    2. Chop them finely.
    3. In a wide bowl, mix the ingreients.
    4. Add little water and knead to a soft dough.
    5. Keep it aside for ten minutes.
    6. Take a ball of the dough.
    7. Roll into a circle of 4 inch diameter.
    8. Smear a little oil and dab some flour.
    9. Fold it into pleats, from one end to the other.
    10. Now, enclose it into circular shape.
    11. Dust it with some flour and roll it.
    12. Heat a skillet, put the rolled paratha on it.
    13. After a few seconds, flip it and apply oil
    14. Turn it to the other side and smear oil. It should be well roasted.
    15. Serve with curds or pickle.

    Prep Time 10 minutes
    Cook Time 20 minutes
    Total Time 30 minutes
    Servings: 8 parathas
    Course: Main Course
    Cuisine: Indian

    Ingredients
      

    • 2 cups wheat flour
    • 1 cup mint leaves
    • 1 teaspoon ajwain
    • 2 teaspoon chilly powder
    • salt to taste
    • 1 teaspoon oil
    • wheat flour for dusting
    • oil for roasting
    • water for kneading

    Method

    3. Put the ingredients in a wide bowl and mix well.
    4. Knead it to a soft dough with little water.

    8. Smear some oil and dab a little flour. Fold it like a pleat from one end to the other.
    9. Then, make it into a circular shape.
    10.  Roll into a circle. 
    11. Heat a skillet.
    12. Put the rolled paratha on to the skillet.
    13. Flip it to the other side, smear oil and back again to the original side.
    14. Let cook until brown spots are visible.
    15. Serve hot with pickle or curds.
