Veg Jadoh is a delicious rice dish from Meghalaya cuisine. Rice is usually cooked with pork or meat with a few spices, but here is a vegetarian version of the same. I have used potato cubes, it makes a good brunch or a weekend meal.

Veg Jadoh is a flavoursome rice dish, ideal for lazy Sunday meal. Pair it with onion and tomato raita or a simple flavoursome curd to make a good combo.

It’s that time of the month where we bloggers are paired together and cook from a particular state. Shhhhh Secretly Cooking Challenge has now reached Meghalaya and I am paired with Poornima of www.poornimacookbook.com, she had given me rice and ginger as the secret ingredients and I prepared Veg Jadoh. It was tasty and I will be  making it frequently henceforth.

About Meghalaya :

Meghalaya meaning abode of clouds in Sanskrit is a small state in the North-eastern India. It was a part of Assam until 1972. Shillong  is the state capital and English is the official language here.

History says that this one of the captivating regions of the country, nature beckons with beauty. Cheerapunji, that  receives the highest rainfall is a major tourist attraction.

The cuisine of Meghalaya differs from its neighbouring states. Rice is the staple food with spicy meat and fish preparation. They rear goats, pigs, fowl, duck and cow for their meat. Thus, consumption of non-vegetarian food is high.

It was difficult for me to find a vegetarian dish here, after much browsing, I decided to make a vegetarian version of the same.

Veg Jadoh Recipe :

Ingredients

  • 1 cup rice
  • 2 potato
  • 1 onion
  • 1 inch ginger
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon black pepper powder
  • 2 bay leaf
  • 2 tablespoon  oil
  • salt to taste
  • coriander for garnishing

Method:

Wash the rice and keep it aside. Peel and cut the potato into cubes.Heat oil in a pan, add the bay leaf, after a few seconds, put the onion, ginger, turmeric powder and pepper powder. saute for sometime. Put the potatoes into it, let cook for sometime. Now, add the rice to it and saute for sometime. Put water and salt, give a stir. Allow to cook on a low flame. Alternatively, you can close the lid and pressure cook for one whistle.

Ingredients
  

  • 1 cup rice
  • 2 potato
  • 1 onion
  • 1.5 inch ginger grated
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon black pepper powder
  • 2 bay leaf
  • 2 tablespoon oil
  • salt to taste
  • coriander for garnishing

Method
 

  1. Wash the rice and keep it aside.
